Hi Colleen, we live in Texas and people do different things with their fajitas. We like the onions, peppers, chicken or sliced beef for our Fajitas, then top with sour cream, guacamole, salsa, and grated cheese. We also like fajitas chicken on top of a salad. They are very tasty. Thank you for sharing. Yes, we have been praying for all who were affected with hurricane Helene and hurricane Milton. Very bad storms which took many lives and did so much damage. ❤️✝️🙏🇺🇸

I've done that myself, forgetting to add eggs to dessert, but realized it before it was cooked. I'm glad it was delicious. I love purchasing discounted produce from discounted cart in produce section that is still good to eat. I then wash and cut up this discounted produce such as peppers or onions. Once cut up I then do a hot then cold prep with vegetables from boil for a few minutes and back in an ice water bath. I then lay the vegetables out on a clean baking sheet to dry well. I then portion the vegetables into portions I would use in dishes and place these portions into freezer bags or freezer containers for later use in dishes. I like how you used the same bag the raw chicken was in as a glove when handling raw chicken. I use tongs when working with raw chicken or meat when moving or cutting or prepping to freeze. I have a red handle pair I know is for raw poultry or meats I use. And another color for cooked poultry and meats when cooking. Thank you so much for another wonderful cooking video. I grew up with my Mom using an electric frying pan! So I had a large electric fry pan when raising our family, now it’s the two of us and I have a much smaller one! It’s good to see someone using it! As none of our children use one either. Keep on cooking for us Colleen, we are watching!

My humble suggestion would be to heat the tortillas on a griddle or other flat pan just slightly until they start getting looking like freckles, that enhances the flavor of the tortilla better than in the microwave. What a fun dinner! Years ago I was baking my favorite rice dish that usually takes 45 mins. An hour went by then two hours and it was still soupy. It took me that long to realize I'd forgotten to add the rice to my rice dish! At least you figured out your missing ingredient faster than I did. 😅Thanks so much for sharing.

I had minor damage but my neighbors 4 houses down and on were hit by storm surge... we've never had any problems with flooding until Helene and Milton. Love fajitas. At a Tex-Mex restaurant they often bring out the vegetables separate from the chicken or beef and bring the ingredients out on a sizzling small cast iron pan. The tortillas are served wrapped in foil to take out one at a time and fill as you see fit. Salsa, sour cream, lime wedges and guacamole are usually served on the side. It was this dish that made me love Tex-Mex food, and I even served it on Christmas eve for the family one year. Everyone loved it. Growing up in the Midwest, the only Mexican food we ever tasted besides chili concarne was canned tamales, and I never wanted to eat that again.
You make me smile, Colleen! Once, trying to impress my boyfriend, I made a pecan pie. While it was baking, I saw the dish with the eggs I had forgotten……. Must have been ok because we were married 55 years!

I make these all the time before I even seen this video except sometimes I put taco mix in it and then I put lettuce, taco sauce, cheese, and of course sour cream topped with cilantro and roll it up in the wrap and they are really good. sometimes I use those soft taco cups. We did not get hit bad at all in Tampa where I am. We were not in the evacuation zone. They assign you a letter when you live here my letter is D. We had a tree that came down across the street that blocked the road but nothing really bad for me. Out at the beach of course they get hit all the time…. Cheers! ..Brian
Hi, I'm from Chihuahua Mexico and I like your recipes, In Mexico a great majority would probably use jalapeno peppers but then it can be too spicy hot . I like your version very much. We don't have as many products like the envelope with seasonings, so that's great you have those nice cooking helpers. My only humble suggestion, instead of heating the tortillas in the microwave oven, may you find it helpful would be to slightly heat the tortillas on a griddle, skillet or flat pan, until the tortilla starts to show like freckles, the flavor is very good and less raw. But it is a matter of taste. I used to live in Toronto and Brampton Ontario some years ago and never saw that brand of tortillas, you most likely have more brands available these days. Colleen, I have used cooked chicken that was leftovers for making fajitas, adding it to the pan at the end of the cooking time with the seasoning mix. I like to have grated cheese, salsa and avocado for topping. I make my own seasoning mix since I follow a low sodium diet. My family are on both coasts - 5 at Tampa and the other 5 in Titusville. Both in the eye. So far they are doing well. I also have one family member in the Orlando area. Prayers are certainly appreciated. My daughter says there have been many tornadoes already and more are expected.
We’ve had 2 hurricanes in 2 weeks. In icoastal Georgia 5 days without powers but praise the lord storm surge wasn’t out]r issue. Thank you for your kind wishes and prayers 🙏🏻

Colleen, This a bit off the topic for this video… but… I have pressure canned pork and it comes out tough and dry. I raw pack without adding liquid. When it’s done , there is a lot of liquid in the jar I’m assuming if it’s from the pork that answers why it’s dry and tough. I’ve been researching this and surprisingly still don’t find an answer. I’m hoping you have some experience with this. Thanks Rick
That is surprising, Rick. Any meat I have canned is fall apart tender. What cut have you been using? I always follow the recipes in the USDA canning book or the Bernardin/Ball books.
@@kellygarnet6329 I’m surprised too. My grandmother always canned pork and it was fall-apart-delicious. I’ve been using pork tenderloin so there isn’t much fat on it. Maybe that’s the problem? I use an electric canner, do pints, and follow the instructions.

It is just a precaution. All commercially grown chicken is vaccinated for salmonella anyway these days.
