Homemade English Muffins

- English Muffins
1 ¼ cups warm water
1TBSP sugar
1 tsp yeast
Mix these ingredients together, cover the bowl with a towel and allow to proof for 10 minutes before adding the rest of the ingredients.
Add:
1 tsp salt
2 TBSPS oil
2 ¾ cups of all-purpose flour
Add the flour into the mixture one cup at a time mixing well between each addition. Once you have incorporated all of the flour and there are no more dry flour bits turn the dough out onto a well-floured surface and knead for 5 minutes. Put the dough ball into a well oiled bowl and cover with a towel. Allow to rise one hour. Once the dough has doubled in size cut the dough into 10 pieces, roll each piece into a ball and then flatten on a piece of parchment paper or a surface covered with corn meal. Cover with a towel and allow to rise another 30 minutes.
To cook, heat a greased frying pan over medium heat until warm and then turn the heat down to low. Place the dough rounds into the pan, cover with a lid and set a timer for 8 minutes. Keep an eye on them. Eight minutes on low works great on my stove but may not be great for yours. After 8 minutes remove the lid, turn the muffins and cook a further 8 minutes. Remove and cool. You are ready to enjoy.

I have made these many times before. Same recipe except a bit of sugar. My girls loved them when they were for supper, cut in half, pizza sauce spread on them, then mozzerela cheese and pepperoni. A few minutes in the the oven and tah-dah! Mini pizzas. So good!

I quit buying bread nearly three years ago, well, with the exception of English Muffins and tortillas. I’ve discovered the nutritional benefits of milling my own flour and love baking bread, but have had a mental block about English Muffins. I’m ready to give it a whirl now. Thanks bunches!

@@pheobs I mill all our flour, too. It’s a real game changer, both in taste and health. I have a NutriMill classic, which is an impact mill and a NutriMill Harvest, which is a Stonemill. love them both. I never buy flower anymore.

After finding this video last night I was so excited to try this recipe this morning. I used the KitchenAid mixer to knead on low for 4 minutes adding an additional tbsp of flour. I have achy wrists today so was pleased when the dough worked great, rising was perfect. I am making these this morning - just shaped the muffins and am waiting on the final rise before going into the pan! Homemade ingredients versus the store bought - oh my goodness. Thank you for showing how easy making these are and so much better without all the artificial ingredients and who knows what else is in the store bought. Looking forward to having sausage egg and cheese on one of these when ready!

Good afternoon Colleen. I just made your English muffin recipe. I have arthritis in my hands so it’s hard for me to knead dough. After looking at another recipe that was made in the bread machine i decided to try your recipe and use the dough cycle. I doubled the recipe and they turned out delish!! I’ve heard and seen people write about how easy these are to make but I’ve never given it a go. Now I’ve actually seen how you have made these I realise how easy they actually are. It’s strange how I don’t listen when someone says it’s easy but when I see it being done I can then go ahead and make them. I’ll be making these on a regular basis I think cos I love these. I love having one at lunch time sometimes with egg and bacon. They are great for that and I love them with Nutella on and I love them with Vegemite on them. I just love them in general. I’m sure home made ones are going to be so much nicer than bought ones. Can’t wait to give them a go. Thank you Colleen.

I really enjoy English muffins, but I’ve never made them for myself. Some reason I got the idea they were really difficult to do. That you just showed me right now that that’s not the truth. And fresh bread of any kind homemade is always better than anything else. I actually threw away about a half a package of English muffins because I didn’t like them and I was surprised. So I’m going to try it again and one of the things I’m not gonna use is the cornmeal. So I hope mine turn out like yours. Thank you so much. Linda from Kansas, USA.

The freezer is my friend. Keeps me from eating a whole pan of brownies, loaf of bread… You get the idea. I put single or double servings in sandwich bags then place those into a gallon freezer bag. I’ve been really enjoying more variety and don’t make myself sick.

Today, was my first time trying to make English Muffins. 8 minutes was too long on my stove, set at "2". I burned the first pan worth. I did the next pan worth for only 5 minutes and that was perfect. Every stove and pan are different. I will be wiser next time. Thanks for your video.

I used to make English muffins years ago using my electric griddle, so they weren’t covered. I don’t know if I still have the recipe and I don’t remember what made the holes. I think it may have had a bit of baking soda in it to create those lovely holes for collecting the butter. Yours are lovely.

We used to make these when we lived in the Philippines and couldn't buy them in the stores. They were so easy. I do think it would have been easier for you if you had the cornmeal because you probably wouldn't have had to use the extra flour. I think I'll try these again soon.

Thank you Bonnie! I don't use sour dough. I like things that are simple and easy and I tried sour dough once. Maybe it is a matter of patience. I will be making pizza soon though.
