Every time I watch a US vid on ribs I go green with envy. You wouldn’t believe what we have to try and work with in the UK. You can see as many bones outside as inside on our ribs. Butchers haven’t realised you can charge twice the price for ribs as the belly removed from them. Hopefully one day it will change so we too can eat like you guys

Glad you getting out of hibernation during this time... Always love your rib video's. I have went so far as ordering me a couple of ice picks to start using to check my meat. I was becoming a temp watcher instead of enjoying the cook. Great video.

Great vid T-Roy!! I tried this a couple weeks ago, definitely agree with you. Unwrapped has more smoke flavor and wrapped were more tender. Bark was about the same, but I liked the added sweetness of the wrapped with brown sugar, butter, and honey! Cheers brother...stay safe

The exact video I needed T-Roy to remind me to cook by the feel. I know this, but last weekend I cooked 2 racks of ribs from the same package but with 2 different rubs. I did brown sugar butter and honey wrap with one and wrapped with just spritz in the other. The one with all the competition wrappings wasn't done/tender enough. The rack w/ a more texas rub was perfect. If I had been testing each for tenderness I would have had 2 great racks.

i agree with your thoughts on the 3 2 1 method T-roy, mine always turn out over cooked. They're good but I prefer a little bite to my ribs.

Good video! Depending on the size of the meat I’m averaging 3 hours on direct smoke then wrap. Butter and brown sugar, coke/Pepsi, apple juice. They all work. Then I do 2 and a half hours in foil. Take them out and let them sit 5 to ten minutes. Sauce them (if I’m saucing). Then back in the smoker or oven for 20 minutes to cook the slime off stiffen the bark back up. I have never overcooked by leaving them in foil that long. Nothing but beautiful fall off the bone ribs.

Cheers T-Roy. You have a great channel. I have a question about using marinades and brines. I like doing ribs in a apple cider brine for up to 24 hrs and use hickory or pecan wood to cook. Do you use brines or marinades on any meat or no?

What got me going is that you used Bug Juice (Worcestershire Sauce) I love that stuff, I even put it on a baked tater.. Can't try for a while, I'm making Lasagna tomorrow..I'm gonna get me some of that rub, been using Cowboy Ken Rollins rub recipe..

Troy have you noticed a difference with the 3/16" cooking chamber in the LSG vs the Wichita's 1/4" as far as heat retention?

T-Roy those bad boys look charred on the outside and kinda black? Did the pit temp get away from you? Is that normal for LSG cooking? Please advise.
I got some of his seasons I really like them... His caliente barbecue sauce is good too
You might want to try some DiamondKingSmoker Wild Cherry, Plum or Peach smoking wood. Better wood, better flavor, and better smoke. T-Roy... I usually cut my ribs in half before smoking / cooking. Do you have an opinion to share on this?
Great looking ribs. One way to cook/compare that I haven't seen anyone do is with water in the bottom of the cooker. I'd like to see how much different it is when done that way. Longer to heat up the cooker? Less wood to maintain the temp? Taste of the cook compared to no water in the bottom?

Thanks much!!! Yes, usually the fake butter has more flavor oddly enough? Go figure!!!
You're the only other one ive seen baste the ribs with the juice thats in the foil! Soo much flavor there. I baste with juice right out of the foil or ill drain it into a fat separator, separate the fat and add a little more rub and reduce it a little on the stove and then coat the ribs with that.
You need to see which cooks better ribs the offset or the pit barrel
They look soooo good mate! I am yet to do pork ribs done loads of brisket, pork butts, lamb shoulder & short ribs. Some day I'll get around to it.

What's up G!!! Always enjoy hearing from ya brother. I used to know the answer to your question about which Primer to use for high heat, but it's been so long since I've messed with paint and stuff, that I just don't remember. I'd suggest calling an auto paint shop and asking them or perhaps a clerk at your local Autozone type store? You can also ask the folks at Yoder what they recommend or post the question on the Yoder Forum. I'd definitely recommend the YS640. They are well made from what I've seen and heard. I like hot sauce as binder, not sure I've ever seen you use that. Although you put out so much great content who knows, I might have missed or forgot
