  • This video is a ribs cook competition to see which method works best. Should ribs be wrapped or should ribs be unwrapped?
    These smoked baby back ribs will be in competition with each other in this experiment to see which slab of ribs wins. This video is being done on my Pellet Smoker / Grill but you can use many different grills for this cook. I also remade this video in a newer version here: • RIB WRAP TEST! Ribs Co...

    Recipe information:
    Ingredients:
    Ribs (OF COURSE LOL) Make sure you buy your favorite cut from a place you know them to be good quality. For this test I purchased the ribs from a store that I normally do NOT purchase ribs from and they didn't turn out as tender as they normally do when I get them from my normal place.
    Your favorite Rub Rub. I used Famous Daves in this cook.
    Garlic Salt (to taste)
    Black Pepper (to taste)
    I also used Legend Brand Chipotle Powder here but that is optional
    Clean Water for spritz bottle
    Apple Juice for spritz bottle and a small amount in the foil wrapped ribs
    Brown sugar (to taste) for the foil wrapped ribs
    Honey (to taste) for the foil wrapped ribs
    Aluminum Foil to wrap ribs during cook
    Paper towel for pealing membrane (or any other method you use)
    Spritz bottle

    Directions:
    ALWAYS WASH YOUR HANDS WHEN PREPARING RAW MEAT!!! I washed my hands SEVERAL times during the making of this video.
    I rinsed, patted dry, trimmed, seasoned and pealed the underside membrane off both racks. Smoke the ribs at 225 degrees Fahrenheit for 6 hours, sauce glaze the last hour. I pulled one rack after 4 hours and wrapped it in foil with apple juice, brown sugar and honey for one hour before unwrapping and glazing for the final hour. This was the big difference in the test.
    I used Lumberjack MHC Blend for this cook.
    Let me know what you think. My ribs didn't turn out as tender as normal but they tasted fantastic!

    Nice job man. Here is a tip I found for cutting ribs on camera. Turn them over so you can see the bones. Have a good weekend brother.

      Mid-South Flavor we kind of like them in between. As far as tenderness, these were not what they should have been. I actually made the mistake of buying these somewhere other than where I normally do. Usually if I do this method, they’re almost hard to handle tender. Thanks for watching!     I've watched Malcolm videos as well. He's very good to watch . He cooks his ribs meat side down when he wraps them. I tried it his way meat side down and they turned out great. I think it allows the meat to cook in the honey and brown sugar and parka butter and absorb more of the flavor. Great video.

    Great job. I'm old school I use charcoal and add wood chunks. My favorite is Old No 7 whiskey barrel wood chips. Also try adding smoked paprika or if you like spicy maybe a little crushed red pepper the same pepper you put on pasta. It is a game changer and totally awsome flavor. Not a lot just a little. I make em like that and if I don't have one while I'm cutting, I don't get any them babies are gone.

    I think if you have the extra time, just cookin the ribs longer to 205 temp will make them tender.
    The big pits around here (CT.)
    don't wrap nutin!

      I agree with no wrap.
      Before i had smokers, i rigged a rotisserie on my Weber gas grill.
      After 4-5 hrs, the babybacks i did were perfect. Just sauced them the last hr.

    Nicely done sir. I will suggest that rather than using a set time to cook the ribs, let the ribs tell you when they're ready. The unwrapped ribs didn't have the meat pulling away from the bones yet. I believe they were tasty but with a little longer cook time they would've been awesome.     I have a strange family. Some like them falling off the bone some like them with a little tug. So I cook them both ways and every body gets what they want. But you can bet if they start running out everybody becomes less particular.

    Chicago will always be a baby back town and a rib tip town, I miss the aquarium smokers....so rustic but very yummy. My favorite are spare ribs (especially St Louis cut) but the baby back I enjoy just little tougher not to dry out. Nice video

    Those ribs look amazing. I am not a big fan of the 321 methond either. I usually do a 311 cook. When I wrap the ribs I put the honey and brown sugar on the foil and place the ribs meat side down. THANKS FOR SHARING. BBQ ON

    It’s so enjoyable to watch this video on smoking the ribs both ways. I don’t have outdoor cooking device and have been cooking my ribs in the oven. Can your smoker hold 3 slabs of ribs?

    Keep it simple! What I’ve seen is so complicated.
    My version is:
    Dry rub. Let set over night. Grill and slow and low in oven all day. Add BBQ sauce one hour before serving.

    Love your method Mike! Very similar to they way I have done them for the past 20 years. Apple juice in the spray bottle included. You know what your doing alright! I am like you in that I vacillate back & forth between wrapped and unwrapped. It is very challenging these days to BBQ really tender & juicy baby backs. I more often wrap for that hour these days than not in pursuit of that end. But the problem is in the way pork is produced these days. It is bred too lean and whatever they are adding to their feed has totally ruined the texture of the meat! So I don't know if we will ever be able to smoke & BBQ these ribs up as amazing as we once could unless we raise our own hogs. I have been told to buy Heritage Pork if I can find it. But watching your method just blessed my heart because I can tell you are the real deal when it comes to fixin' up those ribs! I learned about you from watching Tango Joe's Breakfast Sandwich video. Great job my friend!

    Some ribs you buy come with a tenderizing solution which will affect the outcome. Some ribs don't have this. You have to be aware of what you are getting to judge the outcome.

    Never got a call in a competition with unwrapped ribs, many calls if I wrapped. No two racks of ribs are the same, you cannot follow a recipe 100%. 3-2-1 is an average. One rack might cook 2-2-1, another might work out at 3.5 -1- 30 min. During the wrap, you need to check them around the 45 minute mark and look for the pull back on the bone, then guesstimate the time left. It takes experience. The 3-2-1 can buy you time also. If you are behind, leave them wrapped longer. If they get done too quick, unwrap and just keep glazing every 20 - 30 minutes until turn in time.

    Awesome video! Literally, just bought a pellet smoker and wanted to see if wrapping vs unwrapping would work better. I have traditionaly done the 3-2-1 method with awesome results but you have changed my mind. Thanks for the awesome video! BTW, love famouse Dave's rib rub also!

    Very good video. When I first learned the 3-2-1 method, I used it a bunch of times. And, while the meat was delicious, they were way too tender. While my family and friends in the backyard were raving about how good they were, I knew they weren't right. So, I fiddled around with the formula. I tried three-one-two, three-one and a half, one and a half, etc. I eventually settled on 4-1-1 and the ribs are great! So, yes I still wrap. But never more than an hour.

    Just found your channel. Great vid! Thank you for taking time to film it for us! Another Malcolm fan here, he is great! If I remember right, he runs his smoker at 235. His rubs, The BBQ Rub and Hot BBQ Rub, are really good on pork and poultry. Hot is better in my opinion. One thing I've learned over the years is that I can't go by a set of rules. One rack takes 30 min in foil, another takes an hour. I learned to go by feel...and sometimes do that wrong. lol They looked great to me. Send leftovers my way. :) Thanks again! God Bless

    Something you may want to try. Flip the ribs over and cut from the back. No more hassling with cutting into the bone. Great job they looked yummy.

    Good job. Great video. Those look great, especially the wrapped ones.
    Personally, I do the 3-2-1 method.
    3 hrs heavy smoke with a ton of rub finished off with white sugar (trust me)
    2 hrs wrapped tight. I use about 6oz of beer in the wrap.
    1.5 hrs unwrapped with brown sugar and BBQ sauce.
    I found that 1.5 hrs takes them to just between competition style and fall off the bone style.
    225 degrees is perfect!
    I don't spritz at all.
    I have a masterbuilt electric smoker, love it.

    Very good Mike. A bit longer than usual, but I am all for that. You take things calmly - and explain how and why well. I like the mix of video and stills (including the humor hehe). The ribs looked really good too :) i usually wrap about an hour too.
    Its really hard getting hold of short ribs here. They are normally full ribs. And almost no meat on the long boneend. So hard to fit the for grilling.
    They started selling ribtips here though this summer - and i have made them a few times :). Thanks for sharing!

    Great looking ribs! I found your channel through ballistic bbq. I always wrap my ribs. I smoke them with beechwood (I like a really mild smoke flavor) for about 3 hours and then wrap them for 2 hours. I usually wrap them with beer but sometimes I use 1:1 apple cider vinegar and water. Then half an hour unwrapped with sauce. All at around 280-290 degrees. I used to wrap them longer but I´m like you. I don´t like them literally falling off the bone. Can´t even brush sauce onto them without them falling apart. Keep up the great videos!

    Oil, any oil is not a good choice for a binder as oils prevent seasonings and smoke from penetrating the meat. Personally I NEVER use anything for a binder as I've never found a need to use one. My homemade rubs have never had any problems sticking to any meats I smoke.

    Very nice. The only issue I had was that the wrapped ribs had honey and brown sugar added, an unnecessary flavor boost that hurts a true side-by-side comparison.

      I wanted to duplicate the cooking process is that we have here in my house. When I wrap those are the ingredients I wrap with, when I do not wrap obviously I cannot use those ingredients. Overall I would say that the experiment was a success but yes there are some changes I can make and I will be doing so in an upcoming redo of this video over the next month or two I hope you will subscribe and stay tuned for that.

    Interesting way to cook ribs. I do it much simpler, boil the ribs 10 to 15 minutes. Outrage meat in The Philippines is very tough. The boiling helps cut down on the cooking fuel which is very expensive. Anyway, I really enjoyed your ideas. God bless you and God bless America.

      @@EverydayBBQ i used your spritz for the 1st two applications. i just added two oz. of apple cider vinegar(saw it in another cabinet. lol.) have you used apple cider vinegar before?

      Yes, it works well. Vinegar flavors pair well with pork. The best spritz to me is 1/3 pomegranate, 1/3 cranberry and 1/3 water. Best for bark.

      @@EverydayBBQ dammit! i thought pomegranate would be too sweet. it was the first thing i saw in county market this morning while i perused for apple juice. ironically, i shopped for ribs today and grabbed the famous dave rub. when i got home the wife handed me a famous dave's rub that i had already purchased(lol). i sat down to watch this video, and there you are you using famous dave's. i guess great minds think alike. i'm wondering what your go to sauce is as you referenced that you weren't using it. my nephew bought me some scheel's sauce for Christmas that i'll be using. very thick and tangy. i have a spicy one that i haven't tried yet. go cubs!

    Amen, brother, I never wrap. I don't know where people get the idea that good barbecue is supposed to, "fall off the bone", may as well boil your meat if you're going to steam it to mush in foil.

    I don't wrap as I like crust on my ribs. The textural difference adds to mouth feel much like a flakey pie crust and soft fruit core.

    I had a rack of baby back ribs in the fridge to cook and came across your video. I got interested when you mentioned using Famous Dave’s rib rub as I have a bottle of it on hand. The combo of that, the black pepper, garlic salt and chipotle powder is a winner! I find the Famous Dave’s by itself is really salty. Similar experience? Thanks for the video.

      It's all personal preference really... I tend to like salty rubs but some folks don't.
