How to make Chicken and Mushroom Rice and Grilled Cod with Foil

  • In the spirit of autumn, here is a simple recipe for a dish that uses a lot of mushrooms, Chicken with Mushroom Rice and Grilled Cod with Foil.
    < Chicken and Mushroom Rice >
    ■Ingredients
    2 cups sticky rice
    1/2 chicken breast
    3 dried shiitake mushrooms
    200ml of the rehydrated soup stock of dried shiitake mushrooms
    1/2 pack shimeji mushrooms
    1/2 pack maitake mushrooms
    1/4 carrot
    1 tablespoon soy sauce
    1 tablespoon mirin (sweet sake)
    A little water to taste
    ■Directions
    1. Soak dried shiitake mushrooms in water (leave for a day or heat in microwave for about 3 minutes).
    2. Wash sticky rice and put it in a rice cooker.
    3. Cut chicken into small pieces, carrots and dried shiitake mushrooms into small pieces.
    4. Add all the ingredients to the rice cooker, cook rice, and steam for about 10 minutes.

    ■Ingredients (for 2 persons)
    2 slices of cod
    1/2 pack shimeji mushrooms
    1/2 pack maitake mushrooms
    20g butter
    Salt and pepper
    Lemon juice, ponzu (Japanese citrus juice), soy sauce, etc. to taste
    ■Directions
    1. Place cod on aluminum foil and sprinkle with salt.
    2. Place shimeji mushrooms, maitake mushrooms and butter on top of the cod and sprinkle with pepper.
    3. Bake in the oven at 230℃ for 15 minutes.
