  • I made beef tongue stew based on Chef Kasahara's beef stew recipe. Please try it for Christmas dinner☆!
    ■Ingredients (3-4 servings)
    300-400 g beef tongue or beef
    1 onion
    1/2 carrot
    1/4 broccoli
    5 mushrooms
    10g butter
    Salt and pepper
    200ml red wine
    100ml water
    1/2 teaspoon chicken broth
    A.
    1 can demi-glace sauce
    1.5 tablespoons ketchup
    2 tablespoons mirin (sweet sake)
    1 tablespoon soy sauce
    1 bay leaf
    ■Directions
    1. Boil broccoli in salted water or microwave, cut onion, carrot and mushrooms.
    2. Heat oil in a pan and fry meat.
    3. Add butter, onion, carrot and mushrooms, season with salt and saute until softened.
    4. Add red wine and let it simmer for about 5 minutes to remove the alcohol.
    5. Add water, chicken stock and A, and simmer over low heat for 30 minutes.
    6. Season with salt and pepper to taste and serve with broccoli.
