Test oil level when the oil is cool, get your oil to temp, **TURN OFF HEAT SOURCE**, carefully lower bird into the oil, turn heat source back on. This will help prevent a fire even if you spill or bubble over when adding the bird. Keep an extinguisher or fire blanket close at hand regardless. We fly people for burns resulting from turkey fires almost every year.
Yeah I don't know why you'd actively keep the heat going if you see something is about to overflow. If I fear something I am making is about to spill over I immediately shut off the heat. I'd rather have cold uncooked food than a burned kitchen.
@LycanFerret you wouldn't even undercook it, the temp won't drop much in that short time, and you'll be cooking to a temperature, so it'll come out just the same as if you left the heat on. May take a couple minutes more, but not much.
I have never in my life fried a naked chicken. No seasoning, no mustard, nothing. That is almost as wild as frying indoors. Or Bourbon in your browning glaze. Kendall moves to Australia and good sense goes out the window. I love it

If you're going to stuff butter under the skin of your turkey (or chicken), the point of doing that is so that the butter melts and soaks into the meat so that it stays juicy and tender and doesn't dry out. If you then put your bird upside-down to roast it, with the butter on the now lower side, don't be surprised when all that butter leaks out onto the roasting tray.
In Sweden we do many similar sauses like that with Fish Rom. But we usually use yoghurt or sour cream to make them, they are delicious! Going to try this sause you made some time!

Same as any diplomatic dinner in real life, just more extreme, I guess. But the Enterprise crew is probably also particularly well-informed about Klingon preferences, thanks to Worf (obviously) and Riker (who served briefly on a Klingon vessel). And even more so as time went on after this scene, what with Picard's political role with the Klingons.
I'd have loved to see the caviar switched with tobiko and mixed into the browning sauce. Tobiko is flying fish roe, having a smaller size with a more mild taste and greater rigidity. Essentially, it'd be like having thousands of tiny crispy bubbles on the skin.
Fun Fact: Gagh actually tasts better to humans than it does Klingons, but they eat it because they love the feeling of something living dying inside them.
Spoilers for the Babish version of this dish, but Momfuku Noodle Bar actually does serve a fried chicken dinner with caviar. In the episode of Worth It where they tried this meal, they smeared the caviar on the fried chicken and seemed to really love it. I wonder if Babish or Kendal had ever heard of that, living in NYC themselves. Best of luck on your future adventures Kendal!

I maintain, to this day, that unfertilized, salted fish eggs is _absolutely_ the kind of food a Klingon would love and that Kurn would have been gobbling the caviar down!
I always figured he would've liked it _if_ he'd tried it on its own, instead of treating it like a sauce. I mean, nobody told him it's best on its own. But sometimes, if your first impression is bad you have a hard time going back to something.

Trick I heard about deep frying a bird. You put the bird in the cold oil so you know exactly how much oil to use and don't have have overflows. And turn off the open flame when submerging the turkey. Then once everything settles turn the flame back on😊

Growing up in 70's UK, we had a lot of public safety films on TV. A very regular theme was chip-pan/kitchen oil fires. Watching you lower that chicken into that oil brought me out in a cold, cold sweat. (Alton Brown just redid his Turkey Frying videos - you should invest in a turkey derrick & save the heart palpitations of your audience).
"Anything is better than Gagh." As someone who tried the Gagh recipe from the official Star Trek cookbook, I can vouch for that statement. The sauce was excellent, but the way the meat was prepared made for a texture issue... Also...how DARE! That casual mention of Kendal leaving. You could at LEAST do something awesome for her! Pizza and ice cream DO work together the same way spaghetti and ice cream work together: The GERMAN way ! ^^ As in: you use ice cream to create something that LOOKS like pizza: A thin bed of vanilla ice cream("dough"), strawberry syrup("tomato" sauce) + grated white chocolate("cheese") on top, then fruit as "topping" You do Spaghetti Ice the same way: put vanilla ice cream in a "potato ricer" to turn it into something that looks like long pasta, then top it with strawberry syrup and grated white chocolate.
