Hey BA, it’s me again. This video has 1.4 million views. All the comments are overwhelmingly positive about Sohla. We love her. WHY DONT YOU PAY HER?? WHO ELSE ARE YOU NOT PAYING TO BE IN VIDEOS?
A bunch of drama surfaced because Rapoport posted a picture where he was doing black face (like a Puerto Rican). Not only that, but apparently Sohla is being paid 50k (seems like a lot but this is New York we're talking about, it is not very much for 15 years of experience either). Apparently this is the usual way management at Bon Appetit (and higher up at Conde Nast) treats their people of color and basically anyone who's not white. They're paid the bare minimum, and they're not paid for video appearances like their white counterparts. If you want you can look it up, it's dark stuff. There's videos on the topic that deal with theory like systemic racism and tokenization. About the latter, that means Sohla is being kept around to look pretty, to look like they're inclusive (which they're not, apparently). So not paying her for every video she's in like her peers were... The other personalities at Bon Appetit spoke out about it too, giving Sohla support. It's the reason there's no new videos, the other cooks refuse to appear on video in this channel as a form of protest. Rapoport resigned as well, as Sohla requested. He made a post about it on Instagram I think. With so many people involved speaking out, it's pretty much confirmed. The drama around Carla and Delaney is a bit more delicate, but Carla apologized explaining the email (spoiler: it was not racist, it was a slip of the tongue that made it appear like she was targeting a specific person), and Delaney made that cake back when he was 17, so not really good examples of racism at Bon Appetit like what's happening behind the scenes... You be the judge though.
I thought she didn't get compensated for her appearances in other shows (like Gourmet Makes). I think she got compensated (though probably not much) for videos where she is scripted to appear.

I write this comment in hopes the people at BA or Sohla sees this: Sohla is an absolute delight and I love watching her getting some on screen time. I'm happy she fit in so well with the BA team. She has this simplicity about her technique and style, but you can tell beneath lies a vast amount of knowledge, all of this is enveloped by a very down to earth, and humble personality, a person which anyone would love to have as a friend. Keep it up Sohla, we are all behind you and support you all the way !

Sohla is a realist. Yes these buns are good, but they are not the best buns that will ever be made. Or maybe she is a slow burn enjoyer. She IS not like "OMG THIS IS SO GOOD WTH" but "I really want a cinnamon date sticky bun right now. I misse it".
She also stated that she wanted these to be a baklava cinamon roll but she always has to real her recipes back to make them simple. So it's no surprise that she isn't overwhelmed with this end result. That's not to mention this is still a basic recipe there really isn't anything amazing about it, it's just a good recipe for beginners...

Wow. “Perfect” cinnamon roll recipes are a dime a dozen and often don’t pan out as advertised. I was floored however by this recipe. It is indeed the perfect cinnamon roll. I used full fat buttermilk sold as “Bulgarian Style” buttermilk at my QFC grocery store in Portland Oregon. I used cooled clarified and browned butter instead of oil, and added the browned and cooled milk solids into the dough as well. I added vanilla to the dough. I used a KitchenAid mixer to mix and kneed the dough and simply chilled over night in the covered KitchenAid bowl. The dough is very difficult to roll out but chilling the dough covered in the fridge relaxes the gluten when rolling becomes difficult. I have made two batches of these rolls and both times received the ultimate praise of “these are better than Cinnabon.” For reals! Thanks for the superb recipe.

Wow. “Perfect” cinnamon roll recipes are a dime a dozen and often don’t pan out as advertised. I was floored however by this recipe. It is indeed the perfect cinnamon roll.
I used full fat buttermilk sold as “Bulgarian Style” buttermilk at my QFC grocery store in Portland Oregon.
I used cooled clarified and browned butter instead of oil, and added the browned and cooled milk solids into the dough as well.
I added vanilla to the dough.
I used a KitchenAid mixer to mix and kneed the dough and simply chilled over night in the covered KitchenAid bowl.
The dough is very difficult to roll out but chilling the dough covered in the fridge relaxes the gluten when rolling becomes difficult.
I have made two batches of these rolls and both times received the ultimate praise of “these are better than Cinnabon.”
