    You cut out the best bit from the original upload!! When Bridget licks her fingers and the plate and says "I'll have what I'm having!!" that was when I KNEW I had to try this recipe.

    I just made this today and they were amazing! My husband said they were one of the best desserts he has ever had. Their description was spot on: the rolls are so soft and sweet but not too sweet. We couldn’t stop eating them! The techniques were also very helpful. Pinching the dough so it wouldn’t unravel and and the floss trick was great.

    The roux or tangzhong, it involves cooking a portion of the flour and liquid in the recipe into a thick slurry prior to adding the remaining ingredients, resulting in soft, fluffy bread.

    I made these with only light corn syrup and managed to forget the bit of water for the caramel sauce, but they came out great anyway. The tangzhong really is the secret, I wish they would have named the technique in this video.

    OMG! I made these and they were amazingly soft, fluffy and yummy! This was the best recipe and it beat out the sticky buns at the bakery that I used to go to (but now will only make these). Out of the 12 buns, I only have couple left because the grandkids ate 2 each, daughter ate ½, husband ate 1 ½, and I had one, son ate one. I will have to make double recipe next time if we want extra for breakfast the next day! I am so happy to have discovered you on You Tube!

    Followed the recipe exactly, and they looked beautiful after the second proof. Funny the mentioned doughy centers because I couldn't get these baked in the middle even after cranking the temp up to 400 and adding 11 minutes to the bake time. I have never had an issue with my oven past but that doesn't mean there isn't one now, plus I used a glass bake pan which if you believe people who know about such things say you should lower the recommended temperature 25 degrees because glass transfers more heat than metal. I will say the buns I tasted which baked next to the glass and were mostly baked were absolutely awesome. I am buying an oven thermometer tomorrow. Personally I think covering the buns the last 15 minutes is a mistake because I think it leads to a steaming in the pan itself.

    I made these and the goopy stuff on top of the buns turned out to be at the crack candy stage, I re-read the recipe and did exactly what the recipe said to do, then I re-watched the video, and when they got to the part of making the topping Bridgette said to the COOL melted butter add the sugars etc, and the COOL melted butter was left off. The rolls were still good, and I'm going to make them again, but next time I'll cool my butter.

    This was a really good foundation recipe, I will definitely make it again, but with a few changes. I will increase the 'goo' by 50% and I will also triple the cinnamon. I will also add a bit of vanilla next time. The goo also needs a bit more salt. Many of us use a kitchen scale - could you PLEASE give us the measurements in grams? If you have to say 15 1/8 ounce.. you really need to just give it to us in grams. Thanks for the recipe!

    I tried it, but I think my dough turned out to wet and sticky. Continued anyway. They seemed to come out okay and tasted great (the most important part) but I think they were not as fluffy and were more chewy then those on the show. It is the first time I have ever really tried anything like this, even my first time with a mixer. So overall I am happy.

    I just tried this. It tastes good, but the "goo" baked onto my 9x13 pan so rock-hard that I have to buy a new one. Meanwhile the dough was almost too soft to roll (the rollup was loose & messy). I followed all steps exactly including bread flour measured by weight, oven temp measured by thermometer, etc. I'm glad if others had more success - but "foolproof", this recipe ain't.

    Turns out, the pecans aren't so optional. Since I didn't have any on hand I made this without them. The pecans hold the rolls up out of the sauce so that when you're finished the sauce is on top. Without the pecans your rolls end up swimming in a mess.

    I've seen weight estimates for bread flour from 120 grams per cup up to 138 grams per cup. 15 1/8 oz is the same as 428.8 grams. If 2 3/4 cups of flour weigh 428.8 grams then 1 cup of flour would weigh 156 grams. Does your flour really weigh 156 grams per cup? Did you start with 15 1/8 oz of flour or did you start with 2 3/4 cups of flour?

    • @benthead
      @benthead Рік тому

      Using the other cup measurements if you do not have a scale, I found that using 2 and 3/4 cups of flour was not enough flour. I had to increase the flour by 2/3 cup, otherwise i the dough is too moisture laden to work with. Three and one third (3 and 1/3 ) cup of flour will work with their measurements

    Anyone know if the second rise can be done in the fridge overnight?

    • @bixxkailey4351
      @bixxkailey4351 2 роки тому +3

      When I’m making hot cinnamon rolls for after breakfast I start with the first rise. I knock the dough down and covered in plastic,than refrigerate the dough, and the pan with the nuts and Carmel. Once the dough is cool (1 to 2 hours) I remove it and the pan from the fridge. Using a roller I get it to the proper size 18”x15” than add the brown sugar and cinnamon, and roll them up. Cut and put the rolls in your pan and put it back in the refrigerator until Morning. After Breakfast I pull the rolls out of the fridge and bake them off. I find that the secound rise in the fridge allows the rolls to rise to perfection. Because these roll are cold it takes longer to bake them. Checking the temp is very important. I’ve always felt that theseshould be eaten in the morning. I use to get up at 4am to make these,now I do the work at night.

    Question regarding toasting nuts in baked goods. I understand that toasted nuts have way more and better flavour than their raw counterpart, but if the nuts will be baked ANYWAY, why toast them ahead of time? What's the "science" there?

    • @drinidalipaj7462
