  • Join Sohla El-Waylly in the Bon Appétit Test Kitchen as she makes red lentil zucchini. These crispy, crackly zucchini fritters take inspiration from the traditional Bengali onion snacks piyaju. Soaked and blended red lentils make up the batter, which is spiked with turmeric and chili powder.

I understand your cause, but think that she signed a contract over certain duration. It's a business and she is just another player at one end of the bargain. Look, I made my PhD studies with a grant of less than 30K per annum. In the Bay Area, which is similarly overpriced. Do you think that a scholar job in the lab is much easier than the chef's in the test kitchen?

I'm fairly certain NYC restaurants of a certain size are technically supposed to compost by law. But the test kitchen would be in a different category, so I don't think there's any composting legislation that would apply to them. Regardless, it's awesome that they finally started.
