- We challenged three of our esteemed chefs - Carla Lalli Music, Chris Morocco and Sohla El-Waylly -- to each make different versions of the same dish: pasta carbonara. While each variant has to be similar in some ways (porky, cheesy, salty, etc.), each chef was assigned a different interpretation to cook up: traditional, modern and experimental. Which one would you want to try? FYI you're allowed to say all three.

We took a deep dive into traditional carbonara, tracing it back to its roots as a peasant dish made with pantry ingredients, and re-considered every factor. The result? Less pasta, more crispy-chewy strips of guanciale, and more silky creamy egg to hold it all together.

Genius
I have had ice cream flavored with pork bones and cured pork meat. No chunks just infused in hot cream and strained out. That might have been a way to go in order to not have to make the caramel flavor in there.
actually the traditional version is the most difficult one out of the three... it's like a French omlette - easy to make but very difficult to master
She deserves a show. She’s knowledgeable and experienced and fun.
And seeing her go through Claire level emotional rollercoasters makes me think she needs her own show to explore what she can do. I know the deconstructed dishes are kind of out of trend, I could see her doing that with ease.

@@jmanly707it's come out over the recent days that POC aren't getting paid being "background talent"... Even though we've seen Sohla been utilised as help during recipes before (aka the episode of April Fools Gourmet Makes, where she tempered the chocolate for Chris and Brad).
She only gets a base rate of $50k, even though she brings so much to the table.
Rapo has resigned now, admitting that there is issues with race and employment at BA. And this all needs to be dealt with.

John Smith if u lived in like Kansas or Nebraska 50k would totally be a livable salary. But Bon Appetit was located in the World Trade Center, in downtown manhattan. Living expenses are ridiculous in NYC, in any neighborhood, and the fact that Sohla has 15 years of professional experience and has worked for numerous accredited restaurants means that a salary of 50k is almost laughable. 50k couldn’t cover rent for a studio in Manhattan with other expenses, would make buying lunch or coffee in the overpriced shops nearby hard. It’s might be acceptable for a entry level position in another city, but Manhattan? A professional and inventive chef with 15 years experience? It’s disgusting.

They get a job. 1) people don’t need to be grateful to their sexist racist bosses for deigning you pay them less than they’re worth. 2) not working while you’re looking for a new position doesnt strip you of anything, least of all your autonomy at a new job. 3) Sohla had and audience and was employed before taking this, at Serious Eats, where she also shot cooking videos.

I have to say whoever hires staff at BA really knows what they’re doing. Everyone has such a distinct personality, there’s something for everyone to enjoy and a chef for everyone to relate to/love. I started watching this channel for Brad, who I still love and would literally watch him do anything but stayed because each of these chefs now have a piece of my heart.

I've struggled for the past 10 minutes to put into words how intelligent, inventive, innovative, and inspiring Sohla is. She knows her stuff and she has an infectious personality to top it all off. She's going to be so successful in her future.
She has a really assured technical knowledge of how the actual 'materials' of food behave.

I feel like this is the best episode of anything Bon Appetit has done in a long time. Sohla’s utter brilliance coming up with something so unique and interesting, Carla’s tremendous refinement of a traditional classic, Chris’ fantastic pallet bringing carbonara into the present day, the humour, the breakdown of each component to deeply understand the dish, all of it, just a treat to watch.
I had the same feeling. Just wow... the entire time.

Sohla realy knows what she's doing, and she's very good at articulating why she's doing something in the moment, say adding the baking soda to the caramel.
This made me love Sohla. I've always liked her, but this was like seeing her in her element, and it was so much fun to watch. Give her a series where she does experimental versions of a ton of dishes and she would be the next Claire.
Phil Vaive I think if BA would give Sohla a little bit more spotlight, she would gather million of views alone. She has personality, skills, knowledge and character. On top of that she is pretty and her hair are to die for.

Sohla’s adventurous and experimental because her basic kitchen skills are exceptional. You can tell she’s a well trained chef.

I mean, she worked for Serious Eats before coming here, they don't mess around.
She strikes me as having more theoretical knowledge than just about anyone else in the kitchen, she just doesn't have the experience or confidence, so she can't just do things with a swing like almost everyone else can.
In the past we reserved the word genius for people like Einstein, now everything is genius.
