- If you've ever wondered how to filet a whole salmon, this is the video for you! This whole fish came straight to my door about 2 days after it was wild caught IN ALASKA on the copper river and it was very very special to work with. Copper River Seafoods (www.copperriversalmon.org ) let me play around with a coho salmon and it was probably one of the freshest pieces of seafood I've worked with other than being able catch it myself. Practicing a smaller, but similarly shaped fish is a huge recommendation too. Much easier to source and handle in most home kitchens and will help with your confidence on the big day of filleting your first salmon 👹
Absolutely! Branzino would be a great starter fish for most folks.

Great video! Was wondering if any aspects of the fish is sashimi grade, other than the taretare. Also how can you tell sashimi grade to cooking grade?
