  • If you've ever wondered how to filet a whole salmon, this is the video for you! This whole fish came straight to my door about 2 days after it was wild caught IN ALASKA on the copper river and it was very very special to work with. Copper River Seafoods (www.copperriversalmon.org ) let me play around with a coho salmon and it was probably one of the freshest pieces of seafood I've worked with other than being able catch it myself.     Practicing a smaller, but similarly shaped fish is a huge recommendation too. Much easier to source and handle in most home kitchens and will help with your confidence on the big day of filleting your first salmon 👹

      Absolutely! Branzino would be a great starter fish for most folks.

    Descale in a bin bag to catch all (if you can, they really do fly everywhere) the scales

    Great video! Was wondering if any aspects of the fish is sashimi grade, other than the taretare. Also how can you tell sashimi grade to cooking grade?

    U said on a bias I'll take it. Cuz everyone is different even after teaching a person they make their own routine. Which was y my boss let my clerks learn from me and from sumone else. Both ways wk.
