Coho Salmon, Roasted Garlic & Basil Mash, Cherry Tomato Salad

- It's always a joy to work with incredible seafood and this salmon from www.copperriversalmon.org is as fresh as it gets from ocean to table. When I prepared this recipe the salmon has been caught 2 days earlier in the Copper River Alaska and shipped to my home in Tennessee overnight! I am not sponsored by them and just wanted to share with you guys a great avenue to access fresh salmon that is top tier quality. Ingredients:
Fresh Salmon Filets

5-6 medium Yukon gold potatoes
1 cup milk
1 cup cream
5-6 oz butter
1/4 cup roasted garlic
3-4 tbsp chopped basil
salt to taste
1 cup quartered cherry tomatoes
1/4 cup diced red onion
2-3 tbsp chopped herbs (fennel tops, parsley, or basil work great)
4 tbsp olive oil
2 tbsp balsamic vinegar
salt to taste

I like the idea of basting the flesh side to provide a better chance of no sticking happening on flipping the fillet

@ByronTalbott I made it last night and we loved the basil mash, I added some chopped up slightly cooked (to soften) red peppers to the garnish too and it was great

This looks achievable to make and the combo a party in your mouth with all this flavor. Thanks for sharing it also could be make with steak 🥩 some of my guest prefer steak and some prefer salmon 🍣

Looks great Chef. I was curious though that you started your potatoes in boiling water. I was always taught that you start potatoes in cold water. Curious why you did it that way?

I've always taken the skin OFF of my salmon (just personal preference). Would this be good with the skin off?! Also, I'd LOVE to see more South Louisiana seafood featured on your channel. *{MAKE 100% CERTAIN that the seafood IS 100% South Louisiana certified}!!!*. And, I'd love to see your take on it!
if I were to add some sun dried cherry tomato to the salad, would it ruin the freshness? just thinking if adding a bit of sweetness and dense tomato flavour might be nice.

Steelhead trout is really good. I personally like it better than salmon although it looks pretty much the same.

Is there a risk of the salmon stinking up the house when cooked like this? Im intimidated from cooking fish because of a bad experience in the past cooking on a stovetop
This is such a hard question to answer given each individual’s sensitivities, but with that said the salmon in the video was extraordinarily fresh. That is the ultimate factor when trying not to stink up the house, but some folks are very sensitive to even the freshest of seafood… all depends

The taste of Salmon is ruined with the skin. The skin is better tanned into wallets! I was born in theTerritory of Alaska 70 years ago. Salmon has ruled my life. I live in Cordova...the great Copper River. So there. Shit can that skin crap! That ain't the way to eàt Salmon!
PS: the rest of the menu is killer!
I could not disagree more, BUT I massively appreciate the compliment coming from your perspective. The salmon skin has a such a complex fatty flavor to it and is very reminiscent of crispy chicken skin...and I love me some good fried chicken skins. There is another side to me that really adores simple buttery campfire salmon with no skin...butter and lemon... salt and pepper. simple as it gets. Let the salmon shine. I totally get where you're coming from, but I have really enjoyed skin-on presentations for quite sometime now...as long as its executed properly.
