Lentil Barley Soup in the Instant Pot

As part of Veganuary I'll be doing some weekly cooking demos. In this video I demonstrate a quick and easy veggie, lentil and barley soup! Recipe is below
Cooking soup in the instant pot recipe below!
Sauté
1/2 cup chopped onion
1/2 cup chopped leeks
2 cloves garlic minced
1 cup chopped carrots
1 1/2 tsp Viva Pizzaria spice beast blend
Or 1/4tsp Basil, oregano, thyme, parsley
1/4 tsp salt
Add to the pot
1 16oz can diced tomatoes
1/2 cup barley
1/2 cup lentils (I used black lentils)
3 cups chopped spinach
6 cups vegetable broth
Set the instant pot for 20min pressure cook. When complete, use the quick release method and then taste the soup. If the barley needs more time simply close the pot and reset pressure timer for 5 more min.
Stovetop: bring to a boil and the. Simmer with lid on for 30-40 min or until barley is cooked through.
