It sounds to me like you would prefer the tomatoes that are starting to color a bit in the middle, that's when they start to taste sour. The completely green ones won't taste sour. It's funny, I prefer the completely green ones, I don't like the sour taste of the ones starting to color. I prefer when they taste more like fried zucchini. To each their own I guess.

My dad was passing away and he told us he didn’t want his last meal before death to be Ensure. 😀. And yes….. he asked for fried green tomatoes to be his last meal. He only took one bite but was happy. He died that night. Love love this memory. ❤️

I don’t care for fried green tomatoes by themselves, but put them on a burger with pimento cheese, bacon, and dill pickles, and I will eat them! So good!
My grandmother made fried green tomatoes and she would salt and pepper them before she breaded them and she would use a little bacon grease with the regular oil and then as soon as she pulled them out of the grease she would lightly salt them. But I also grew up in the south.
Yes, fried green tomatoes are very tangy, you need the comfort of cornmeal in the mix or some good (not sweet) cornbread, and some kind of pork flavor - pork fat in your greens, smoked shoulder, or pork chops. It's about balancing the bite of the green tomato with what else is on the plate. (I would say BBQ, but that's become nothing but sauce to most people.)
My grandmother (in Tennessee) also did this with the bacon grease and she cut them very thinly. I like them enough to eat them once a year around the first frost.
I would suggest as well, as long as you have a good sense of smell, smell your out of date foods to be sure they are ok. Smell everything! I also always taste milk, cream, and half and half before adding these liquid to a sauce!
I have a problem with irrigation when chopping onions and hot peppers. I use a COVID mask! It makes all the difference for me. And I also wear surgical gloves when cutting peppers.
For hurricane Irma, we lost power for seven days. And we live in the city and had absolutely no help from FEMA or any one anywhere. For this last hurricane, we lost power for 2 1/2 days. But this time we had a generator. And I had myself stocked up with food that could last on the shelf canned. As well as being able to plug my generator into my freezer and refrigerator. And it gave us one light in the house. It was a lifesaver. Since that first hurricane, I learned how to can food, how to dehydrate food, how to make bread from my own sourdough Starter . Basically I changed my whole lifestyle. Even though I live in a condo I spent a lot of time learning how to cook with fire and how to smoke food. I also have propane if needed. There is no substitute for preparation. I pray for all those people who were caught in this horrible storm right here in town who lost their homes in 4 1/2 feet of water. And for the people that I know in North Carolina and in that whole Area. People drowning, people suffering, it’s horrible and I hope it’s over soon for the survivors, and they are able to get back on their feet and get back to their lives. But one of the reasons I love watching your channel is because you are so self-sufficient it just makes me happy.

Hi Chelsea, I was born in Kentucky but raised in Texas, I am 57 and have been raised on fried green tomatoes. My mama taught me when I was really young to “season” my tomatoes well, as well as my cornmeal/flour mixture! We like a little kick to ours so I use some Tony Chacheres creole seasoning on my tomatoes and in my cornmeal/flour mixture and then we dip them in ranch dressing for eating! So,so good 😊
Fellow onion sensitive here - recently I took a cooking class & that room full of onions being diced simultaneously was my worst nightmare. I was trying my hardest to pay attention (and keep my fingers out of the way) with tears streaming down my face, while the other students were just chopping away, utterly unaffected. Those of you who are like that - you don’t know how good you have it!
I am also sensitive to onions, especially when slicing/chopping them. My biggest sensitivities, however are related to jalapeño and other warm/hot peppers. I have resorted to wearing a mask and goggles with dish towels sealing up the edges of the goggles AND two pairs of gloves!!!! I still have a reaction, so maybe no more jalapeños for me!

Ok from the south here. Fried green tomatoes are excellent cooked right. You need to slice them thinner and salt them and sweat them. Pat them dry and salt and pepper them and batter with dry corn meal and fry them on medium until a fork sticks through them and they are soft. Also, you probably need a little more oil in your pan. LOVE me some fried green tomatoes 😊

There are different ways to cook them, cornmeal, or batter, or flour etc. So that could affect how you feel about them. You could also slice the tomatoes a little thinner for a different proportion of tomato to batter. I’m no southerner so don’t claim any real knowledge, just speaking from my experience. I think it’s like everything else, we all like different things, don’t we? I had never heard of a fried green tomato until the beloved movie, but I’m now a fan of both 😉
Those tomatoes definitely look too thick. The best ones I've eaten (from a little mom & pop place) are maybe half that thick. I suspect the tomatoes are salted & allowed to drain a bit before the batter. Possibly other seasoning but not much. The lower frying temp looks right. I didn't grow up them. Maybe early 20s?
Regarding Green Tomatoes: I look so forward to the first green tomatoes to have fried green tomatoes kicking off the spring garden season. So, add salt and pepper and any herbs or cayenne before dipping them and frying them. Then we top with goat cheese and a basalmic reduction. So yummy!

I like fried green tomatoes when they they have a good blush on them. The green ones are to sour. The other have more ones have more of a tomato flavor. I bread them in equal amounts of corn meal and flour, butter milk, S&p, garlic powder. Mix dry ingred. together. Dip tomatoes in dry mixture,then in milk, then in dry mixture again. Then fry. Try blowing a table fan in your direction when you’re peeling onions . I’ve heard it works well, I’m very sensitive to all smells but I remember the fan trick after I’m done peeling onions.
I’ve made fried green tomatoes in a non-traditional way - just flour, egg, breadcrumbs like eggplant parm, pan fried in oil. They were fine but not my thing. I did not grow up eating fried green tomatoes though. I DID, however, grow up eating fried RED tomatoes. My family makes red tomatoes coated in salted flour pan fried in Crisco and they get a caramelized sweetness to them that’s delicious. As my mom told me, the secret is not to be impatient. You have to let them get their golden brown crust on the first side before flipping them. ☺️

Grew up eating fried green tomatoes… we cook them a bit differently in our family though. We slice the green tomatoes, salt and pepper them and then dredge them through a flour, salt, pepper and garlic powder mix, then fry them up in oil… I like to use coconut oil for frying. Then add a little salt on them afterwards. It’s a lot like fried chicken, every family does theirs differently ☺️ Hope you get better even sooner!

I am super sensitive onion. I read about wetting a paper towel and setting it next to where you are chopping your onions. I was a bit skeptical, but it works! I set out right on it near my chopping board. If I am doing a lot of onions, l will soak it again in more water. Or, just start with a new, wet paper towel. Even my kids couldn't believe how well this worked! I was always having to stop in between chopping, walk out of the room, etc. Also, yeah to Whistle Stop!! We used to sell their entire line at our market. They are so good!! Thank you for your amazing videos!
Chelsea - I like to start my projects like this with a spoonful of broth on the bottom of my jars. I feel like it helps with the debubbling process and I find I don’t typically have to go back and add more at the end. I do it for most things I don’t dry pack. Hope you try it and see if it helps you 😊
I salt and pepper the green tomatoes first and then I don't cut them super thick, so they can cook a little quicker. You can add a little dollop of pepper jelly to a slice when ready to eat. ALSO... if you add a slice of fried green tomato to a pimento cheese sandwich it is divine! :) I am a Southerner born and raised, so I may be biased. Good for you for trying it and for being honest!
Either homemade or store bought Italian dressing. I marinate them for about 30 minutes then bread them in cornmeal/flour with salt, pepper, touch of red pepper flakes. Fry in bacon grease.
I bought onion goggles years ago, totally love them. Try burning a candle while you chop the onions. I usually once I start I put them in cold water right away, that does help keep the fumes down some too.
I love your channel. I find it interesting and informative. When cooking fried green tomatoes, you need to season with salt & pepper prior to using the three dredge method. 1) Flour 2) egg 3) SEASONED (cayenne & paprika) bread crumbs in this case half bread crumbs half corn meal. Try this method, you may like it better. Keep the videos coming.
Try making them with a dry cornmeal breading. Soak in egg / buttermilk wash season tomatoes with salt and pepper tossed buttermilk wash then dredged in the cornmeal mixture
I get so bored and cabin feverish during the winter I freeze my extra tomatoes 🍅 and can them when it’s cold outside! It reminds me spring and summer and gardening will return!
I’m retired completely (I retired started babysitting my grandchildren full time and working part time now fully retired!) I do raised gardening and love it. Chelsea I’m also Canadian a sixth generation Canadian and I’ve never tried a fried green tomato before either and I’ve never tried grits either although I’ve often heard it compared to porridge or cream of wheat which I have had but definitely not something that I look forward to having I think it may be a childhood thing as well??? Also white sausage gravy that they eat for breakfast in the south, not something we have we always enjoy good brown gravy. I think it’s a difference between the North and the south?? If you e had polenta, you have basically had grits. They are a little coarser and made from white corn. I do salt, pepper, and butter in mine. The family like cheddar too
I grew up on the farm, I'm 68 now and we always made fried green tomatoes at the end of the season. Just dip in flour seasoned with salt, pepper and whatever seasoning you like. Fry till golden brown.
On the Fried Green Tomato topic… I did NOT grow up with them. But, I made them early in my gardening years and liked them immediately. I was told by several people before i ever made them that if they seemed too bland, dip them cocktail sauce. So, that’s what I do…. and, really love that combination.😋👍
I like the fried green tomatoes breaded as opposed to battered. Serve with sour cream. They taste like deep fried zucchini. Cover with flour, then egg wash and panko breading and deep fry. Yum yum
I just processed a bunch of onions this last week! Sweet onions and red onions. About half of each chopped and half sliced, and put into freezer bags in the freezer. Not nearly as much as you are processing, but I can’t do the epic preservation days like you do. So I just do a series of smaller batches. Sometimes that means I have to throw whole tomatoes (or other things) into the freezer to wait for a later date.
Season the green tomatoes before battering (pat them with a paper towel if they are too wet from salt before battering) - I have found this makes a difference
in South Africa we make green beans with potato not to much and chopped up onions all cooked together. then mashed when cooked with black pepper and salt. it is so good

Gotta season the green tomatoes...salt pepper onion powder and garlic...then batter...serve with ranch dressing on the side. and/or shake dry ranch powder when done. add some spicy seasoning to the tomatoes for an extra kick
I did not grow up with them because my mom was originally from Indiana, but I absolutely love them, but when I make mine, I season my tomatoes with whatever your favorite like all-around season mix is and then I like mine with a little bit of hot sauce

Your caramelized onions are inspiring me to can some too! I live in SW Idaho and we are a big onion growing area. The trucks go around a corner and some spill out, you can drive along the roads and pick them up for free. You can also find them for sale very inexpensively, so I think this is a great recipe for me to can. I’ll add it to my list! I have never tasted fried green tomatoes myself. I did grow up in Texas, but my mom was from Indiana, so we didn’t tend to eat southern food much. I’ve actually never seen the movie either, I’ll have to look it up. You can use food products PAST the expiration date. It’s actually a “freshest by” date.
I find flour-type products taste stale after the best-before date, but I totally agree with everything else.

I have a very gnarly scar on my finger for this exact reason! Was in a school class and couldnt see at all and… well… it wasnt pretty lol

Fried green tomato BLTs with a remoulade sauce are the bomb! The sauce is good on crab cakes, too.

I was canning my spaghetti sauce and this video popped up. It was like having a friend over. I even cried along while cutting my onions. It was nice listening to someone with similar likes, that also lives in BC. I even lived in Lumby at one time.

I like fried green tomatoes when they they have a good blush on them. The green ones are to sour. The other have more ones have more of a tomato flavor. I bread them in equal amounts of corn meal and flour, butter milk, S&p, garlic powder. Mix dry ingred. together. Dip tomatoes in dry mixture,then in milk, then in dry mixture again. Then fry. We Grew Tons Of Green Tomatoes To Sale At The Green Shed!!! I Love Fried Green Tomatoes, Fried Summer Squash, And Fried Zucchini As Well As Fried Onions, Green Beans And Fried Jalapeno Peppers!!! Fried green tomatoes were my forever 29 daughters absolute favorite side dish. Actually she loved any and all vegetables and fruits but she could not wait for the first fried green tomatoes every year
Love fried “pink” tomatoes - just getting a nice blush. Yes they can get a little mushy, but so much sweeter. Think they have more flavor!

Try blowing a table fan in your direction when you’re peeling onions . I’ve heard it works well, I’m very sensitive to all smells but I remember the fan trick after I’m done peeling onions.

I’ve made fried green tomatoes in a non-traditional way - just flour, egg, breadcrumbs like eggplant parm, pan fried in oil. They were fine but not my thing. I did not grow up eating fried green tomatoes though. I DID, however, grow up eating fried RED tomatoes. My family makes red tomatoes coated in salted flour pan fried in Crisco and they get a caramelized sweetness to them that’s delicious. As my mom told me, the secret is not to be impatient. You have to let them get their golden brown crust on the first side before flipping them. ☺️

Grew up eating fried green tomatoes… we cook them a bit differently in our family though. We slice the green tomatoes, salt and pepper them and then dredge them through a flour, salt, pepper and garlic powder mix, then fry them up in oil… I like to use coconut oil for frying. Then add a little salt on them afterwards. It’s a lot like fried chicken, every family does theirs differently ☺️ Hope you get better even sooner!
I’m from Kentucky and fried green tomatoes are a favorite food every year. I’m fifty one years old and I was raised on them since I was little, it’s a staple food in the South, I know that, lol, they’re delicious!
I'm from Australia- didn't taste a fried green tomato till I was in my late 20's and was growing my own food. I have looked forward to eating them every year since. A seasonal treat!
I am super sensitive onion. I read about wetting a paper towel and setting it next to where you are chopping your onions. I was a bit skeptical, but it works! I set out right on it near my chopping board. If I am doing a lot of onions, l will soak it again in more water. Or, just start with a new, wet paper towel. Even my kids couldn't believe how well this worked! I was always having to stop in between chopping, walk out of the room, etc.
Also, yeah to Whistle Stop!! We used to sell their entire line at our market. They are so good!!

I totally agree with you on that. I love canned green beans but I have never had a fried green tomato but my husband loves them.
You might try salting the sliced green tomatoes and letting them sit to add flavor and remove moisture before coating and cooking.
Chelsea - I like to start my projects like this with a spoonful of broth on the bottom of my jars. I feel like it helps with the debubbling process and I find I don’t typically have to go back and add more at the end. I do it for most things I don’t dry pack. Hope you try it and see if it helps you 😊
I do it too, but to keep the jar from cracking if I am adding something that isn’t hot.
I salt and pepper the green tomatoes first and then I don't cut them super thick, so they can cook a little quicker. You can add a little dollop of pepper jelly to a slice when ready to eat. ALSO... if you add a slice of fried green tomato to a pimento cheese sandwich it is divine! :) I am a Southerner born and raised, so I may be biased. Good for you for trying it and for being honest!

What do you marinate them in?
Either homemade or store bought Italian dressing. I marinate them for about 30 minutes then bread them in cornmeal/flour with salt, pepper, touch of red pepper flakes. Fry in bacon grease.
I did not grow up with them. But I love them, some people like them with ranch dressing on
I bought onion goggles years ago, totally love them. Try burning a candle while you chop the onions. I usually once I start I put them in cold water right away, that does help keep the fumes down some too.
I love your channel. I find it interesting and informative. When cooking fried green tomatoes, you need to season with salt & pepper prior to using the three dredge method. 1) Flour 2) egg 3) SEASONED (cayenne & paprika) bread crumbs in this case half bread crumbs half corn meal. Try this method, you may like it better. Keep the videos coming.
Try making them with a dry cornmeal breading. Soak in egg / buttermilk wash season tomatoes with salt and pepper tossed buttermilk wash then dredged in the cornmeal mixture
Its also great to can sliced green tomatoes for the winter so that you can have fried green tomatoes during the winter months.
Green tomatoes also make a great bread and butter pickle.

I’m retired completely (I retired started babysitting my grandchildren full time and working part time now fully retired!) I do raised gardening and love it. I can’t bend over well,but the garden keeps me busy and active. I purchased an electric presto pressure canner what a game changer! I recently canned French onion soup it is delicious! Chelsea I’m also Canadian a sixth generation Canadian and I’ve never tried a fried green tomato before either and I’ve never tried grits either although I’ve often heard it compared to porridge or cream of wheat which I have had but definitely not something that I look forward to having I think it may be a childhood thing as well??? Also white sausage gravy that they eat for breakfast in the south, not something we have we always enjoy good brown gravy. I think it’s a difference between the North and the south?? Plain grits are bland. But add a little butter and pepper, yum. Or add onion powder, garlic powder, pepper, and cheese! Even better!
If you e had polenta, you have basically had grits. They are a little coarser and made from white corn. I do salt, pepper, and butter in mine. The family like cheddar too
I grew up on the farm, I'm 68 now and we always made fried green tomatoes at the end of the season. Just dip in flour seasoned with salt, pepper and whatever seasoning you like. Fry till golden brown.

On the Fried Green Tomato topic… I did NOT grow up with them. But, I made them early in my gardening years and liked them immediately. I was told by several people before i ever made them that if they seemed too bland, dip them cocktail sauce. So, that’s what I do…. and, really love that combination.😋👍

I like the fried green tomatoes breaded as opposed to battered. Serve with sour cream. They taste like deep fried zucchini. Cover with flour, then egg wash and panko breading and deep fry. Yum yum
I make a sauce for my fried green tomatoes. Mayo, ketchup, garlic powder and lemon juice. I love them with the sauce.
I just processed a bunch of onions this last week! Sweet onions and red onions. About half of each chopped and half sliced, and put into freezer bags in the freezer. Not nearly as much as you are processing, but I can’t do the epic preservation days like you do. So I just do a series of smaller batches. Sometimes that means I have to throw whole tomatoes (or other things) into the freezer to wait for a later date.
Season the green tomatoes before battering (pat them with a paper towel if they are too wet from salt before battering) - I have found this makes a difference
in South Africa we make green beans with potato not to much and chopped up onions all cooked together. then mashed when cooked with black pepper and salt. it is so good

I do my Froed Green tomatoes, flour,egg wash then crumb coating . Those look good. We serve with sour cream/ranch dressing mixture.

We make the fried green tomatoes. Salt/ pepper then bread them in Whistle Stop too. We also make our own chipotle mayo to dip them in.

Gotta season the green tomatoes...salt pepper onion powder and garlic...then batter...serve with ranch dressing on the side. and/or shake dry ranch powder when done. add some spicy seasoning to the tomatoes for an extra kick
I did not grow up with them because my mom was originally from Indiana, but I absolutely love them, but when I make mine, I season my tomatoes with whatever your favorite like all-around season mix is and then I like mine with a little bit of hot sauce

Your caramelized onions are inspiring me to can some too! I live in SW Idaho and we are a big onion growing area. The trucks go around a corner and some spill out, you can drive along the roads and pick them up for free. You can also find them for sale very inexpensively, so I think this is a great recipe for me to can. I’ll add it to my list!
I have never tasted fried green tomatoes myself. I did grow up in Texas, but my mom was from Indiana, so we didn’t tend to eat southern food much. I’ve actually never seen the movie either, I’ll have to look it up. It might be rated R, which would be a problem. It sounds fun, though!
Yay!! You have the whistle stop cafe mix!!! That original cafe is from very close to where I live about 50 miles away! It’s delicious mix and makes wonderful fried green tomatoes! And yes, it’s a southern thing and I’ve grown up eating them but I use my own recipe for cooking them and I make a sauce that goes great with them call remoulade sauce.

We love fried green tomatoes and did not grow up with them. We always serve them with a dipping sauce. Our preferred sauce is remoulade, but ranch and honey mustard work as well…..❤
