    One can of chickpeas will change the way you think about Chipotle... Really. Chipotle Sofrita is Chipotles answer to plant based protein and really I think it can be a lot better. There are a load of different ways they could have went about this but instead they chose to make a watery, kinda bland tofu... salsa? Thats the best way I could describe it really so I amped it up using chickpeas, made it thicker, denser, more flavor and just all in all better, in my opinion!

    I get what you were going for. I use deep fried tofu when I make Sofritas and pull it apart by hand before I cook it up in a pan.

    omg I LOVED THIS!!!! I normally like all your videos even though I'm not the biggest fan of like "faux meat" or "imitation meat dishes" but if I just think about the elements I can usually get into it without adding the unnecessary (for me) advertising of it being meat like or meat replacement. But I loved this extra hard because you made something original that wasn't trying to live up to meat or anything it's it's own thing! (So are all your other dishes but this one more so) XD Please make more content like this!!!!!!

    Hey saucestache, I was having a tempoyak dish the other day (made from fermented durian) and I just realized that tempoyak, at least a concentrated one added with coconut milk and some other ingredients like I just had, is very cheesey, even though the dish is not trying to replicate cheese at all.
    A well fermented tempoyak without any added ingredients is already tangy, umami, thick, funky, fatty and has a bit of fruity, floral notes to it (and no it doesn't have the smell of durian), and it resembles cheese sauce already. So I'm thinking that if you can get a hold of tempoyak or even durian and make homemade tempoyak out of it, it could make a great base for vegan cheese

    I have 3 different Chipotle restaurants in my area. Each one of their sofrita mixes taste different. I go to the one that tastes the best and it's pretty good.

      I totally believe this... their constancy from shop to shop is wildly different. I havnt ran across a good one in the orlando area though. Even the spot I got this bowl from I just felt so bad for the employees as they just looked miserable and were barely paying attention to my order. I had to ask twice for each ingredient... then he sealed the lid and after I said lettuce twice and he didnt put it on... its wild how bad its gotten at a lot of them here

      I was about to comment the same. The Sofritas at the Bay Area Chipotles that I’ve had is spicy and only vaguely resembles what you showed. And it’s pretty good. I’d rather try this method though, for cost savings.

    Oh,the Chipotle you were talking about is a restaurant franchise in the US? Having never been to the US, I only know of chipotle as the chili pepper and wonder why would a can of chickpeas change that 😂?

    01:28 Chickpea flour (cooked in the oven) makes a great FAINÁ (look it up for proportions to mix flour and water). Delicious!.

    I've been hoping you'd do something like a burmese tofu. I recently found out about it and I've been wanting to make one with a blend of blackbeans and lentils or something to make a TVP with.
    Hope you do more with it.

    Great recipe to make picadillo. Just add a few cubed potatoes, sliced stuff olives and if you want to kick it up a notch cubed ripe plantain. 🤤

    I've been watching you since the beginning of my vegan journey back at the start of Corona in 2020 and I lost about 60lbs in a year and Gained it all back due to pregnancy and now im almost back down where I want to be just 30lbs to go!     I totally want to try this! I was just going to try this making replicating their sofritos with TVP, seitan etc, but this garbanzo bean technique looks very interesting. I guess that could be used as ground meat substitute in other recipes too or would it not hold up to stewing in a chili or something like that?

      Ahh so I was originally thinking about doing TVP, but then I just decided to roll with the chickpeas!!! Soooo I do think it wouldn't hold up in a chili... it might soak up too much and break down. BUT its kinda about balance... with this I ended up adding 1/4 cup more water than I thought I was going to in the end because the liquid kept getting soaked up

    I have never tried Chipotle as it is not a thing where I live....and now I could make some at home! :D
    Also, what a great take on Burmese tofu - I am sure this must be so much better than the basic, chickpea-only version!

    0:44 aw thanks for getting away from msg finally! MSG makes me so ill. Another thing that makes stuff taste really meaty is mushroom powder. I usually do lion's mane, but I believe there's more meaty ones - like chaga. I feel that you should try adding mushroom powder to 'meats' - because that's how I make the 'meats' taste meatier by a lot! I think also some people might be sensitive to yeast - due to 'yeast infections' - so maybe this could keep those who can have mushrooms but not yeast an option. There's also beet powder, and dandelion root powder - which also are nice. Beet powder doesn't work as well as dandelion root powder in terms of making foods hearty and workable. Dandelion root powder is like an msg substitute for me - and when mixed with mushroom powder - it really works. I also do nutritional yeast on top of my fake meats too.

      scratch that - add bbq spice to these or just paprika and some herbs like cilantro and coriander. I actually would even add protein powder on top too.

      Yeah im still waiting for that meati collab with them. It was odd they invested but then did nothing else. These fast food places take forever to release anything new!! And stur is pretty great right??

    How does that yeast extract compare to nutritional yeast? I've used the disodium inosinate + guanylate from that company before and it's good stuff!

      So they are different. Yeast extract is a savory taste, more concentrated and you can use less.. where Nutritional yeast is more a cheese like taste, still savory but would need almost triple the amount to get the same level of savoriness

    These corporate vegan options are not there for vegans. It's to add an option so the resturant can be chosen by a group that has a vegan in it to eat at.

    Not a good idea to put hot things directly in the fridge. It creates a lot of moisture and spoils the other items that are already in there.

    Thanks for this! I often wonder what happened with Chipotle investing millions into the Meati company? Why didn't they ever implement meati products into the Chipotle menu? Chipotle has generally been a disappointment for vegetarian options....but I cook much better vegetarian at home so I'm really not that concerned.

    1:38 Okay, so say you’re on a *VERY* limited fixed income (like I am unfortunately), could you substitute regular all purpose flour for the chickpea flour? I was just looking it up & that stuff is WAY out of my price range. Would I just need to add it little by little until I get the right consistency?
    (Btw, when I say limited fixed income, I mean like I get about $50-$60 a month for food and that’s it)

      You can buy a bag of dried chickpeas for like three dollars and it will cover this meal and maybe two more. You can just wash them and blend them, but you need to check for pebbles. Id say combine the weight of the dried and canned recipes and use less than that in dried.

      Ya for sure. You can look up recipes. Plus if you want to make falafel it’s better with dried than fresh. You can look up J Kenji Lopez Alts recipe.

      Also, if you have a local Indian grocery near you, look there. Look for Besan flour. It should be quite cheap in store.

      @@AnotherUTubeAccount unfortunately, I live in the middle of nowhere Wisconsin & there’s not very many places like that that aren’t at least an hour’s drive away (one way) and I can barely afford to go to my local Walmart which is 30 minutes away (one way). Plus I have some pretty bad social anxiety so I almost always shop at places that have an online shopping thing so I know what’s there & where to find everything so I don’t have to spend too much time shopping around other people (or I just do online pickup)
      But I’ll at least give it a look, couldn’t hurt to try at least

    Hey there 👋 please forgive my ignorance in asking this question, but what is the purpose of your channel? I love to cook! The only reason I spend time online is to find new recipes to learn, which is why your channel crossed my feed and I subscribed a couple of weeks ago. I have been on a binge spree since, viewing many of your videos to learn. It appears that your main purpose is to recreate meat based recipes by using plant based ingredients. Is this your main purpose? I love your videos! Just curious about your intentions because your style of plant based cooking is completely different from my style of cooking. I do eat meat btw. I also eat plant based foods. Never tried to replicate meat with plant based ingredients which is why I find your channel interesting.

      @@SauceStache cool! Same with me. I cook because I just love to cook. We were poor growing up so most of our meals were veggies that we grew. Meats were a treat at times. Never really tried to replicate meats. Intentionally anyway. My aim has always been to cook something my wife and kids would enjoy. I guess my mindset has always been that if I wanted a meat cheeseburger from McDonald's then I'm gonna get it from McDonald's instead of trying to mimic it from plant based products. This is exactly why I love your approach and style with cooking. Thank you sir for giving me another dimension in life 🙏

    Watching you use a metal utensil on your always pan made my soul hurt. Other than that i love all your experiments, they make me hungry but they also inspire me a lot! They remind me of the old times when i became vegan. I feel like it’s become so easy now that I don’t do these crazy experiments anymore.

    apparently theres a common myth about male and female bell peppers. the 'male' peppers have three bumps on the bottom, meanwhile the 'female' ones have four, and are more sweet and are filled with seeds. i believed this at first, but i learned that it was not true.

    I'm not sure what the benefit of adding chickpeas to chickpea flour is if you are going to blitz it that fine. Or indeed taking the chickpea water out and adding fresh water. Wouldn't it make more sense just adding more flour to fresh water? Or leaving the aquafaba in? I'm not being critical I'm genuinely probing for truth as tinned chickpeas are much more expensive than chickpea flour and flour doesn't need a food processor.

      Regarding the chickpea pancake stuck to the bottom of the pan. What I do is I add just under 2 cups of water to the pan and let it soak for a bit. Then I add a cup of cleaned rice, a few peas and a little black salt and the chickpea turns into egg rice. A little bit of sesame oil and bingo. 👍👍

    A few years ago I was ordering my burrito bowl at chipotle and I ask for Sofrito’s, and they gave behind the counter in a very disgusted tone, you know there’s soy, right. Clearly a believer in the myths about soy and men’s bodies. Lol

      @@SauceStache I think it has to do with the tofu manufacturer they used. I don't recall their name now but they have expensive tofu products and whatever they're charging Chipotle can't be a deal so they are forced to stretch things out, so to speak. And they funny thing is, I think the firm tofu sold at Trader Joe's is much better than anything that tofu company sells.

    Distilled water is the way to go - the minerals in water are pieces of rocks. Distilled water reverses the damage caused by years of drinking rocks.

      Mmm I’m pretty sure you need minerals in your diet. Plus they aren’t like rocks that can tear up your digestive system. They are dissolved in the water and so only one molecule large without the concept of sharpness.

If yes, then I'd recommend some research.... Yes to minerals from food 🥝🥑🥝 fruits and veggies have bio-availabile minerals. Water has bits of rock. 🪨

    Love the recipe. Hate the background music. I have misophonia and the music make it unwatchable. It is distracting and annoying.
