I spent the past 2 years in Israel, so I was thinking of shawarma flavors instead of falafel flavors. Use more chickpeas to make hummus, and then the aquafaba to make toom

It won't have all the protein, but if you don't have gluten flour, 1/2 whole wheat flour & 1/2 rolled oats works fine to hold the patties together.

Actually, you can emulsify the aquafaba and the garlic without oil, you'll need a thicker aquafaba (you can cook it to reduce the liquid) and more garlic, it will yield an oil free vegan toum, worth the hassle if you're watching your weight or your arteries...

Loads of good stuff here, all definitely worth trying - BTW a suggestion to you for a dish from my father's home country of Mauritius, which is our version of falafel, called "gateaux piments" (chilli cakes). Instead of using chickpeas, you use yellow split peas, and, instead of using cumin, you use fresh chillis and fresh mint for flavour. These taste incredible when made fresh.

will look it up--not a fan of mint so much but coriander or parsley could work and no reason not to add cumin and chilies. Indeed, anything without chilies is inedible.

You can buy it in powder form like you would any flour (usually labeled "Vital wheat gluten"), or you can knead a ball of dough and wash away the starch afterward (Sauce Stache has done this in a few of his videos)

You can already make vegan pierogi 🥟 by using only flour and water for your dough, while filling with things like sauerkraut and potato without meat and cheese (or fruit like strawberries and blueberries) and boiling in water. Then you can pan fry with plant "butter" to crisp up and deepen the flavor.

Hi Mark, i'd like to tell you about wheat albumin, a wheat protein that is not gluten, that is water soluble, and that becomes an egg white like solid when cooked. it's quite a bit of work, but you can isolate it from wheat flour by the gluten washing process, except you don't throw away the starch water, you decant it to separate the starch from the albumin that stays dissolved in the water. Then you laddle the clear albumin water out without disturbing the starch at the bottom. As is, it's quite diluted, if you boil it, you'll just have a few grams of solids appear. You can also dehydrate the water to isolate the albumin

@@justcarineinparis i have done some testing, and with how sensitive to temperature it is it's not practical to concentrate without cooking the albumin if you don't have industrial equipment. I tried to dehydrate in an oven on as low a temp as possible, and after many hours the water level had barely moved but the protein had cooked making little protein floaties that had fallen out of solution. With proper equipment such as a reverse osmosis system, the protein could be filtered instead of dehydrated

My friend that is flatbread or laffa bread. Pita bread is rolled into a ball with an inside pocket. When cooked it puffs in the center kinda like a tortilla and then you open it and stuff it with all the good stuff. Good recipe it just makes me cringe to see people call that a pita, maybe make a video to debunk that lol I shared this cus I thought you would appreciate it. Cheers!😊

    • @SauceStache
      @SauceStache  Рік тому +2

How do you roll it into a ball with an inside pocket.
I’ve never seen a recipe even authentic pita recipes that call for that method.
The inside pocket is actually created when the dough hits the pan.
It seals the outside layer and when you flip you have another sealed outside layer creating a soft inside pocket.
Not all pita puffs, but even this “flat bread” would open up to have a pocket.
Haha cheers but this is pita ;)

Also, I'm on a bit of a mission to collect little bits and bobs from numerous recipe videos, and, in the middle of all this lovely stuff, the thing that intrigued me the most was the sauce - I'm still learning my way around vegan cooking (am not there yet, but am trying to move gradually towards it), because I want to be able to make food for my vegan friends, and I still hadn't yet found a homemade alternative to yoghurt or mayonnaise (I know there's stuff in the shops, but it all seems a little too processed for my liking).
So: thanks for showing me another use for aquafaba! I'd only used it to make pancakes thus far.

Why when you make seitan you steam it first and then fry but in this receipe you only fry your meat? Is steaming seitan necessary?
