Turn tinned meat into something heart warming and delicious!

- This rich and meaty corned beef hash soup is filling enough for dinner. A recipe handed down from my parents and is still a family favourite. It's ready in 30 mins too!

Ingredients:
1 tbsp sunflower oil
1 medium onion peeled and diced
340 g (12 oz) tin of corned beef roughly chopped
1 1/3 litres (5 ½ cups) beef stock (Hot water plus 3 stock cubes. Use gluten free cubes if required.)
4 medium carrots peeled and chopped into bite-size chunks
2 medium potatoes peeled and chopped into bite-size chunks
1 small head cauliflower chopped into small florets
1 tsp cider vinegar or use the vinegar from a jar of beetroot or pickled cabbage as I often do
¼ tsp salt
¼ tsp black pepper
1 tbsp cornflour (cornstarch)
3 tbsp cold water
Freshly chopped parsley - to serve
Instructions:
1. Heat the oil in a large saucepan. Add the onion and cook on a medium heat for 3-4 minutes, stirring occasionally until the onions softens.
2. Add the chopped corned beef and stir into the onions (no need to cook it through).
Pour in the beef stock, stir and bring to the boil.
3. Add in the carrots and potatoes and simmer for 10 minutes. Stir a few times to break up the corned beef.
4. Stir in the cauliflower, cider vinegar, salt and pepper, then simmer for a further 10 minutes, stirring a couple of times during cooking.
5. Mix the cornflour with the cold water in a small bowl to make a slurry. Stir a little of the slurry at a time into the soup, until the soup thickens to your liking.
6. Taste the soup and season further if required, then divide between four bowls. Top with parsley before serving for a dash of colour.

I live in Manchester and many years ago my great aunt would make huge pots of corned beef hash which she would distribute to the entire family in various containers, including old ice cream tubs! I remember eating it with buttered bread for dunking many evenings after school.
My Dad's originally from Manchester. His relatives are still there. (We're in Australia) I'm going to have to find out why we never had this! Love all the very English things we grew up with thanks to Dad. Well except for cod liver oil. I could've lived without that!

@d0rk Dad loves it. He used to eat it by the spoonful like it was Nutella or something. I had to have a teaspoon a day (because I was really sick for most of my childhood) he'd have a big spoon of it in solidarity lol it really was terrible stuff but it helped.
Growing up in the 80's, oh I am so old as I ate corned beef in the 60's and 70's. This Recipe is almost the same as my mothers!

My grandma cooked this when i was little, apparently it was a popular dish during the war when they had limited funds. I’m from Malta by the way, great recipe, some great memories.
Growing up in the ‘60s, my mother made something similar except she threw in diced parsnip instead of cauliflower. But the rest of the recipe was the same. Really good too.

The best thing is fry onion, corned beef, tin of beans, Worcester sauce, s&p . Put in cass dish with mash on top. Then grated strong cheddar. Oven for 15/20 mins. Wow, wonderful!!!!!😋😋

Always had corned beef stew growing up. But my mother didn't add cauliflower and beef stock. I still make now and again. Lovely with a load of white buttered bread.

My mother used to make a similar stew,only the corned beef went in 5 mins before serving so it stayed in chunks.
I made this today and it turned out alright, I guess 🙃 Some of my kids liked it, some not that much . Next time I will add some baked beans,like someone in the comments suggested. On the easy scale is definitely a 10, I think my 8 years old could cook it by herself 😊.

Americans are most familiar with the corned beef hash that is already chopped up and with small bits of potato already in the can. But we do also have tinned corned beef in the same tapered can with the key used to open it. Thanks for the recipe! Love me some picked beets!

I know she said that she was using British canned corn beef and not the American kind. However, I'm an American and that looks exactly like the canned corn beef that I grew up on... It even came in the very same type of can, with the key. And, yes, it can still be bought here. I would love to know if there is truly a difference between the two kinds of canned corn beef or if, perhaps, she is unaware that we really do have the same kind of canned corn beef here in the States?

Just because its got a key doesn't mean you have to use it, use your tin opener sideways instead. Its a lot safer.

In Manchester this dish was called Mouse something to do with the old nursey rhyme about three blind mice and possibly to get one over on the Scousers' who had a very similar named dish

I’m pretty sure you could but the veg might end up softer unless you add it later on. I’d guess at about 4hrs 👍

Sometimes the block of meat is so tight in the tin, it won't easily release and slide out. As a little tip, punch a hole in the top (narrower end) of the tin before opening with the 'key'. That breaks the vacuum and makes it far easier to remove the block of corned beef. As an aside can anyone tell me whether there is a good reason why that method of opening the tin is still used? The metal strip that winds around the key and the edges of the tin can give the most horrible cuts, unless great care is taken. In these risk-averse times, I'm surprised a better method isn't used. lol i remember having tinned corned beef, tinned potatoes and tinned carrots when we went on holiday. I guess you could substitute the corned beef for tinned ham?
Not tried it with spam, the corned beef breaks up which works well in the soup where as I'm not sure spam would break down???
I'd struggle to name the foods I really don't like on one hand but 2 of them are beetroot and corned beef. I just can't stand them but having said that I reckon I'd be pleasantly surprised by this recipe as it does sound good.

One of my favourite meals. If you ever visit Australia you can get real corned beef. I don't know why we don't have in in England.
May I ask what the difference is between British corned beef and American corned beef? Looks good but living in Canada it would be nice to use an equivalent. They look the same and comes in the same type of tin

We have corn beef in a can here in the US. It's in the dog food aisle. Just kidding about that, it's in the infamous canned meet aisle with all the other abominations that are meat in a can. The stuff is gross.
