      I need to try Yorkshire tea. As an American I’m through and through a coffee addict but I watch so many videos of Brits enjoying tea and I would love to try it. It’s such a genuine and pure British tradition; I need to give some good strong tea a chance.

    On our surf trips when I was a young fella, we subsisted on a diet of corned beef and baked beans. We didn’t have a portable stove, and it was usually raining, so we would just eat straight out of the can. No washing up either! Just wipe your spoon on your mate’s sleeping bag. The inside of the kombi van was not a pleasant place to be at times!🤣👍

    Islanders from the Pacific introduced me to a dish which is simply a good amount of fried onions, then stir in and cook an adequate amount of tinned corned beef making sure to get a bit of browning on it. Then add an appropriate amount of cooked rice as the carbohydrate instead of the potatoes used in hash and stir it through. It’s so simple and delicious plus all of the ingredients store incredibly well without refrigeration so no wonder it’s popular in these remote places. I love to cook it when I’m camping and your dish shows me some ways I could pimp it up with some other long life ingredients. It won’t win any Michelin stars particularly for presentation but a tasty, satisfying hot meal like this is just the ticket after a long day in the great outdoors. 😋😋👍👍

    It is important for me to note that many Americans have not evolved as the Brits have finding a work around word for Worcestershire. We all just stumble over it like fools. It is used in nearly every household.

    • @BackyardChef
      @BackyardChef  2 місяці тому +1

      Yes many stumble trying to say it. Most of the UK just shorten it to Worcester sauce. Best, Rik

    • @SamThredder
      @SamThredder Місяць тому +2

      Its not even a work around, or a contraction, Worcester is a city in Worcestershire where Lea & Perrins is based. Worcester in Massachusetts is also pronounced exactly as we pronounce it. Wusta. Add a sheer or a shuh sound at the end, never 'shyer'. 3 syllables in all. WU-STA-SHUH

    I'm steadily working my way through your vids Rik!
    This is one of my favourite dishes of all time. Love tinned corned beef and hash with a couple of eggs on it is luxury. Corned beef is a cupboard stand by to look forward to, not settle for. Takes spice so well. Like you trying not to eat it out of the tin is the problem, I compromise - I take a half inch slice off the top and bottom that has the extra fat and settle for that.
    Lived and worked in the american south and a mexican friend used to make me my favourite food - Tomales - for me most weeks
    When we were set to come back to the uk she took me on one side and showed me how to fake an authentic filling for them with tinned corned beef! It's not a patch on her real ones but man are they a tasty centre for my "Cheating Englishman's Green Chillie Tomales!"
    Now my question, over there I also discovered the Reuben sandwich, Corned beef, plain brined sauerkraut and "russian dressing" on thick dark rye bread
    I'm wondering if in your long and varied career if you've ever corned your own beef?
    If you have then that would be my personal suggestion for a vid - unless you've made tomales!! 😆
    Thick sliced corned beef, is so good, and a totally different animal to tinned, that's like pork and spam heh

      I've had a go at that home made corned beef thing mate. I'm about 6 miles from the centre of Manchester, and there's a couple of restaurants that make corned beef hash (Topped with crispy streaky bacon and a poached egg), and much to my shame, I've never got round to trying it. However, I did get hold of their recipe for corned beef (Or corned dog as it is often called in these parts). This is the one I have made a couple of times, and, for me at least, is amazing. I wouldn't say it's any better than the tinned stuff (I love that), but it certainly isn't worse either. Just a little different. Thanks for the reminder, I need to get some nice brisket and do it again. The corned beef element is the long bit of the recipe for the hash. Well worth the time and effort, and not difficult at all.

    I use leftover baked (jacket-roasted) potato (couple of extras cooked for last night's dinner), roughly chopped instead of boiling them.
    I get sliced corned beef from the supermarket deli case, and chop it roughly to about 1/2 inch chunks the thickness of the slices.
    I saute the diced onions in some butter, then toss the cubed potators in and cook them til the potatoes begin to crisp and brown, and then add the corned beef and toss and cook the mix (a little thyme goes very nicely to my taste) until it's browned pretty much through.

Then dad would dollop HP sauce in his sandwich (or almost everything edible!!). Nan would have a fit if she saw how much a corned beef is now, it's over $8 a tin for her old original "Hamper" brand !!

    @BackyardChef I have been eaten canned Corned Beef out of the can ever since I was kid away back from the (1970s) & even to this day of the (2020s Twenty-Twenties) & even later on into the (2030s Twenty-Thirties) and beyond is that I would still be eating Corned Beef out of the can of course.
    Away back ever since from the (1970S) & onwards that my mother used make Corned Beef Hash but with Chopped Onion and a bit of water & served it with either Pasta Noodles &/or Boiled Rice, Mashed Potato.
    But when I left home I make &/or cook my very own Corned Beef Hash with a Couple of Cans of Corned Beef into a Pan &/or Saucepan & then add Chopped Onion & then add Water & if the texture is too watery for my Corned Beef Hash THEN I do mix both Corn Flour & a bit of Water in a Cup & then add it to my Corned Beef Hash and then stir it until it thickens & if you want Curried Corned Beef Hash then add Curry Powder with both of the Corn Flour & Water &/or just simply add the Curry Powder itself straight into the Corned Beef Hash & stir it while cooking of course.
    I also do make my very own Corned Beef Sandwiches just simply by using the canned Corned Beef & then add the Corned Beef from the Can on my Slices of Bread as Sandwiches of course.
