Sergei’s Raw Food Cucumber Salad Recipe 🥒

- When I was a teenager, I used to prepare and sell this cucumber Thai salad to the local food coop. Not only is this recipe delicious and nutritious, it also tastes better after a day or two of rest. This means if you make enough salad, it can feed you for numerous meals. Give it a try if you wish.

🥒 Sergei’s Cucumber Thai Salad Recipe:
4 small cucumbers, sliced
½ lemon, juiced
¼ bunch of cilantro, diced
½ onion, diced
1 teaspoon hot curry powder
1 teaspoon turmeric powder
½ teaspoon salt
1-2 teaspoons honey
¼ cup cashews, crushed
2-4 tablespoons olive oil
🥄 Mix all ingredients in a bowl thoroughly. For best results, make sure honey is mixed evenly. Garnish with cilantro and serve.
Serves 2-3

OMG THIS IS SOOOOO GOOD! Harvested cucs & red scallions this morning just to make this salad! I used pistachio & added yellow sweet pepper. Its chilling and developing flavor next to my teriyaki chicken. Thanks for the recipe last batch my family fought over who got the last spoonful. LOL😅

This salad is something out of this world!
I was planning to make it for a week and I thought I had all ingredients. At 10:45 pm, when vegetables and cashew nuts were comfortably sitting in the bowl, waiting for the dressing, I realized that what I thought was curry was, in fact, cumin. Luckily our Wegmans is open until 12am. Well, I mixed the salad ingredients with the dressing and could not believe the sensation. It was the most delicious salad I've ever tried (except, probably, Houston's but they closed)! I ate and ate and ate! I live alone but made double amount of salad since Sergei pitched it as a salad that becomes better and better every day. I had to stop myself from eating the whole salad because I wanted to check if it was really better every day as Sergei promised. That's why, tomorrow I will eat the remaining salad - a whole cup of it that I was able to withdraw from.

What brands of hot curry and turmeric powders do you use? Please. There are so many and it can make such a difference!
Awesome recipe thank you. Could I use flat leaf parsley instead of coriander ? Coriander has a very soapy taste to me. I'm one of those people that can't handle it 🤣. Be blessed and stay safe 🙏
My husband hates soapy cilantro as well. He LOVES this and went out and bought more cucumbers as soon as we finished it so we could make more.
