Alright, this is usually made for Chuseok, a Korean Thanksgiving. But for me, it was a weeknight and something I was craving. So you don't have to wait for a special occasion to eat this traditional dish. Plus, making it in the Instant Pot was so much easier and faster!
I've swapped out a few ingredient to make this Gluten free and Diabetic Friendly and it's still absolutely amazing. I've been given the thumbs up of approval by all family members, including my in-laws.

THANK YOU THANK YOU for reducing the natural sugars in this recipe. This is my ultimate favorite Korean dish, it’s very delicious. Btw would you use Asian pear for a natural flavor? Are mushrooms or jujubes a must?

Hi! For me, the asian pears spike my numbers, so I would not use them. If you'd like to use it, I would blend down half a pear. Mushrooms and jujubes are not necessary but you can use them if you'd like. Just add it towards the end when cooking the carrots and radish. 😊

One more question.. can I sub Japanese Rice vinegar for the soju? I found Korean rice syrup in my pantry. Will that spike up my sugar numbers?

@watchmicook: This is the first recipe I found that didn't have the korean pear in it. I don't have any so I was happy to see that. I also am subsituting some potato since I dont have radish!

Tried it for 40 mins. WAY too long.it was mushy af... I still like to have a bite to it. Try 26-27 mins
