As mentioned in the video, before you add in the veggies - poke the beef and see if the chopstick will go through without much resistance. (It's hard to give an exact timing because everyones cut of beef will be different size.) If the meat still has alot of resistance... add in some more water to the broth and let it boil away for another 15-20 minutes. Then proceed to add-in the veggies and continue as show in the video. (Note: If the sauce reduces too quickly... lower the heat and simply add in a few more swigs of water... trust me, the taste will still be amazing!!)

Just wanted to mention that if you look at 4:33-4:45, there is a hole in the foil. Acidic items eat through foil. You can see that there is some foil on the tip of the bone that was sticking up and touching the foil. You need to make sure that nothing touches the foil or put a piece of parchment paper over the acidic food first, before covering with foil. Hope that helps someone! :)
I tried this recipe and I can guarantee it's amazing! It is already sweet enough without the honey, so give it a try! Cooking it nice and slow allows all the flavor to marinate nicely! Softer than soft!
Tired to make this by subtituing mirin with rice vinegar + sugar and unknowingly using Chinese soy sauce.. tasted totally different! Tried to make again using the right ingredients, tasted amazing! I ended up using slow cooker for one night because the beef was still so tough. The beef kinda lost its shape a bit but totally tasted amazing!! Thanks for sharing ❤️

Love having the inner pot stainless so I can use my immersion blender right in it without worrying about scratching. It makes potatoes great and fast! @@kirabrown2237 yes, you can add some. Make sure to blanch the meat, marinade it but don't cook it. Just add all in the pot with the marinade. There will be more liquid in the pot than you might think, from the reduced meat and cooked veggies.
Thank you for your reply. But that's exactly what I mean ... liquid will release from the meat and the veggies in the pressure cooker but it won't cook out or evaporate the way it would on the stove, thickening the liquid into a nice sauce. I just don't want to end up with a soup ...

Pro-tip: Add your mushrooms in earlier, the proteins they're made of denature differently, so you literally cannot overcook them in a braise.
