I would like to share my favorite Korean recipes with you.
I've been running Korean cooking class and food tour company in Seoul, Korea for the last 10 years.
I wanted to share my secret recipes which are both easy to make and delicious.

Galbi jjim / Braised Beef Short Ribs
Ingredients
Beef short ribs(cut in 2.5cm X 2.5cm sizes) 1.2 kilogram(about 3 pounds)
White radish (daikon) 200g
Onion(large) 1
Carrot (large) 1
Shiitake mushroom 3
Green onion 3 stalks
Asian pear 1/2
Braising sauce
Dark soy sauce 1/2 C
Brown sugar 1 tblsp
Rice wine 2 tblsp
Water 1 C
Garlic(minced) 1 tblsp
Ginger(minced) 1/4 tblsp
Asian pear(peeled, grated) 1/2
Black ground pepper (ground) 1 tsp
Instructions
1. Prepare beef short ribs. Soak them in cold water for 1 hour. Drain water.
2. Bring water to a boil and blanch soaked and then drained short ribs for 5 minutes
3. Cut the vegetables. Large dice the carrot, onion and white radish
4. Slice shiitake mushrooms in 1 inch thick size and chop garlic and ginger. Peel and grate Asian pear. Cut green onion in length wide and cut them in a big bite sizes(1inch)
5. Combine all ingredients to make braising sauce
6. Pour the sauce over short beef ribs and bring to a boil. Skim off when boiling
7. Add 1 cup of water to the beef short rib pot and put the lid on. Cook in a medium heat for 50~1 hour until beef short ribs is tender
8. Add white radish, carrot, onion and shiitake mushroom and cook them in a low heat for about 15 minute until they’re fully cooked
- If it needs more liquid add 1 more cup of water to the pot. It shouldn’t look too dry
9. Check the vegetables and the meat and make sure they’re fully cooked. Add green onion to the pot and cook for another 5 minutes
10. Turn off the heat. Plate Galbi jjim in a big bowl
11. Serve

I haven't tried the recipe yet. But I totally like how the vegetables look so brilliant at the end. Also I noticed the sugar and garlic added to this recipe is much less than other recipes. Ginger is also something new in this recipe.
Try adding a cinnamon stick and a few cloves. You will be surprised.

koreans do not put cinnamon stick and cloves in galbijjim. She knows what she's doing
Very nice recipe! I was just wondering if the asian pear actually does something in this recipe. I understand that you add it to the sauce for tenderizing the beef, however that's usually done beforehand. Here you bring the sauce along with the beef to a boil. So I would expect that the high temperature actually destroys the enzymes and hence their activity. Or am I completely mistaken?
Thank you for the comment. Good point! Pears are known to be rich in proteolytic enzymes and have an excellent lipolytic effect. It is best to add pear in a marinade and sit the ribs overnight before cooking. To reduce the cooking time, I blanched the ribs for 5 minutes and then added pear to it. It still helps a little in tenderizing the meat and also gives them a subtle sweetness that is different from raw sugar.
Can i use button mushroom?
I've never tried with button mushrooms but I think it would taste good if you add them almost at the end of cooking this dish : )
I really wanna make this dish but use pork ribs is the cleaning and cooking process the same?
Yes, the process is pretty much the same, but you don't have to use pear in this dish. I have made spicy Korean pork galbijjim. You may check how pork ribs are cleaned. Gook Luck!
Won’t marinate the sauce and beef for a few hours or overnight would taste even better? Sorry not questioning your professionalism just curious.
Fusia Pink Hi Fusia. Definitely yes:) But even if you don't have enough time, it should be okay. Just check the taste before you finish cooking and if it needs more sodium, add more soy sauce to your taste. Good luck😊
How about sesame oil?
I didn't add to it because it's not a must ingredient. You may add it if you like : )
May I know can I use pork rib instead of beef
Of course you can. You don't need to add pear juice in case of using pear ribs! : )

Won't adding more water dilute the flavor? How much salt/soy sauce/rice wine should we add to compensate for the dilution?
Good question! Adding more water to galbijjim prevents it from drying out. It doesn't change the taste because it's going to evaporate. Before serving, you can add more soysauce or salt to your taste :) 👍
