Magical STAY-MOIST Vanilla Cupcakes

- Using the batter from my much loved Vanilla Cake, these are the Vanilla Cupcakes you make when you want professional bakery-style cupcakes that stay perfectly moist for 4 whole days which is unheard of for cupcakes!
No secret ingredients. Just a secret Japanese baking technique applied to classic butter cupcakes ingredients. It's like…. magic! ✨

The recipe is anyone is looking for it in cups. 1 cup plain / all purpose flour (cake flour OK too, Note 1)
▢1 1/4 tsp baking powder (NOT baking soda, Note 2)
▢1/8 tsp salt
▢2 large eggs (50 - 55g / 2 oz each), at room temp (Note 3)
▢3/4 cup caster / superfine sugar (granulated/regular ok too, Note 4)
▢60g / 1/4 cup unsalted butter , cut into 1.5cm / 1/2” cubes
▢1/2 cup milk , full fat (Note 5)
▢2 tsp vanilla extract , the best you can afford (Note 6)
▢1 1/2 tsp vegetable or canola oil

The recipe in metrics

@@sarasdungeon9274 the recipe says 12 cupcakes ( I believe u can get a lil more maybe like 3 more) 180c for 20mins. I would def watch the full video 1st then measure everything then make.

I would say this is one of the consistent and nice vanilla cupcakes I baked after trying other recipes. Worth the extra steps on making these cupcakes. Sturdy yet moist.
Okay, I wasn't planning on leaving a review but for this recipe--I just had to! Out of the numerous 'Vanilla Cupcake' recipes I've tried in the past, THIS one is THE only recipe I'll be using. I followed precisely how the instructions asked me to, and I was honestly doubtful at first because there was no way this cupcake would stay soft and moist DAYS after. But oh my god--was I wrong. I made these last week, on August 8, and I am writing this on August 15 to tell you that these cupcakes are STILL soft and fluffy. I know it's not good to keep cupcakes for that long in the fridge, but I had to test it out. So I kept one left to try today and it's obviously not as light and moist as the very first day, but it's not rock-hard and dense like all of the other homemade cupcakes I've tried in the past! Nagi wasn't lying when this recipe said these cupcakes will stay moist after a few days lol. Thank you for sharing this recipe with us, you are a godsend

Honestly the bestttt cake recipe!!!!! Easy instructions and simple to cake but the taste is sooo good!
I just tried this and when they say follow every direction, do so. This is a fantastic recipe and will keep it in my core recipes. I actually failed the first time but did it again. If making multiple batches, considering covering the uncooked batter with cling wrap for air not to escape while waiting for its turn. Awesome recipe!
Thanks! I've finally found the vanilla cupcake recipe I've been looking for. I had extra batter left over (my cupcake holders were small), which I added freeze-dried fruit to and baked in a loaf pan. That also turned out great.

Do we have to put the muffin tray inside the oven while it is preheating?
@@alishalone8407 I didn't put mine. It's easier to pour the batter in the paper cups when the tray is not hot. All the best!

@@Gsgsz if you mean under yes its normal if you dont like it put a pinch of raw rice so it absorbs it not in the liner under it

I don’t usually leave comments but I just baked two batches of these cupcakes and this is genuinely my new favourite vanilla cupcake recipe
Sometimes when recipes say that they’re moist, the cake comes out dense.. or moist but in an undesirable way. But the cakes from this recipe were moist, fluffy, airy, and every other good thing. And! They’re not too sweet
Have justt baked them (and ate a couple) so have yet to test how they taste after a few days. But if they’re as true as the comments about the texture, then I have complete trust that they’ll turn out well then too

I made these last weekend to try and again yesterday for a function. They are so good, I will be making this my go to recipe forever! Be warned though, the method generates a ton of washing up. I suggest roping in a kitchen hand with the promise of a reward once the cupcakes are baked!
I made this but replaced the milk with a mixture of raspberries and lemon juice (added a bit more oil becouse there was none from the milk) and it turned out great!

Yes hot milk, but could you give me please a temperature that need to be milk and butter while adding in cupcake batter. The boiling point of milk is around 203 Fahrenheit, but we do not need boiling the milk. Could be that we just need simmering the milk around 189 Fahrenheit to190 Fahrenheit? I will be grateful for your help in this question. And thank you for your amazing cupcake recipe!!

This is by far one of the best cupcakes recipe I have tried and it does as it says it says moist for a good amount of time however I do think smt a bit off with the measurements I got from the comments I had to add another half a cup of flour but the rest is correct, definitely should give it a try

I tried this recipe and followed the steps. The only difference is I used stand mixer but scraped the sides. I probably undefiled the cupcake liners, but they didn't turn out golden because when I inserted toothpick, they came out cooked. Also, I noticed that there's little pointed dome in the middle. I wonder what went wrong.

Tried these. They tasted great. Only thing is that mine had those holes in the center.I am tempted to knock pan on counter before baking next tìme.
There could be a few reasons for that.
1) make sure you're placing them in the middle of the oven
2) the temperature of your oven was too hot or too cool. Most ovens bake too hot so instead of baking at 180°C try 165° - 170°
3) make sure the milk mixture is cool. If it's too hot, it could start cooking the eggs before you put them in the oven.
4) don't over fill or under fill the cupcake pans. USUALLY it's around 2/3 - 3/4 full.
Try that. It MAY hell stop the cakes from sinking or doming.
Oh, and don't over mix the batter at the end. Mix until all the flour is combined on a medium speed (that's what I usually do) and then fold the mixture by hand to make sure it's all combined.
