I made these last night for my daughter’s birthday party earlier today!!! Hands down the softest red velvet cupcakes with an authentic flavour. I followed the recipe to the letter T even filled the cases to the same level and each and everyone baked perfectly to the top without flowing over the edge and I always have issues with getting an even rise. I messed up, filled cups 2/3 and they overflowed. Not the end of the world but tops were stuck to tin, most of them have broken tops; but still taste delicious and the crumb is soft, light, and tender. Delicious little messed up clouds that I’m going to freeze for my tea or coffee. Will try again, this time will follow every step exactly how this wonderful baker/UA-camr instructs. P. S. My messed up tops may be deformed and won’t be frosted, but their making contact with the tin made them crispy and extra-delicious, so still a win. ❤😂😊

Can you refrigerate the cupcake for a day, if so would it dry out? Since I want to make the cake and frosting the day beforehand but I want the frosting to stay firm but don’t want the cake to become dry in the fridge.
I thought the frosting was too sweet but then when I refrigerated it overnight and whipped it again. It taste less sweet and you can taste the cream cheese more. I recommend letting the frosting rest overnight.

Lovely must try inshallah. If you're not an expert like MK at pouring batter, an icecream scoop is great for filling batter into the paper cups.

Take tops off , frost then crumble crispy tops over the frosting..I've done that in the past
