If you are reading this at night, you should get some sleep, and don't stress about everything going on in the world, or what you are going through. Don't dwell on things from the past, don't stress on your future. Just live your life, because you only get one. Do whatever makes you happy, not what other people want from you. For me, I'm gonna wake up tomorrow morning, get hit the gym, and cherish life for the amazing blessing that it is. I hope you do the same and have an amazing day as well!

So I made this together with my mom, ours didn't came out as thick but I highly recommend adding a little more flour because when I mixed the eggs with the milk and flour, it was not as thick as in the video so just go by your feeling and add some more later on if you are not 100% sure
    Edit after all the comments:
Some eggs have like a different size so ofcourse things can always differ but for the ones not knowing much about cooking, Flour makes it thicker :D

    Personal notes:
    1. It's okay to add some flour if the final mix looks too watery...that way it can have some shape and not just goo everywhere
    2. When adding sugar to the egg whites...be slightly less generous especially if you're using brown sugar which doesn't dissolve as easily...(it also burns in the pan of you're not using low heat
    3. Use one more egg if your eggs are smaller or even medium

    {Fluffy Souffle Pancake Recipe}
2 eggs (separate egg yolks from whites)
4 tsp milk (mix with egg yolks)
3.3 tbsp flour (mix with milk and yolks)
1/4 tsp vanilla extract (mix with milk, yolk, flour batter)
2 egg whites (whisk until slight bubbles form)
2 tbsp sugar (gradually add to egg whites and keep whisking until fluffy)
Add a scoop of the fluffy egg whites to the yolk, flour, milk batter and mix
Then pour the rest into the fluffy egg whites into the batter
    Keep folding
Put the batter into a piping bag
    Put oil on the pan
Squeeze the batter in swirls to create circles
Place 1-2 tsp of water onto the same pan and keep it very low heat
Once cooked for around 5-6 mins, flip
Once done cooking, plate and add any toppings
Tips: for fluffier pancakes, add 1 to 2 tsp of baking powder. If batter is too runny, beat egg whites more. For stiffer peaks, add a bit of tartar to it.
    Enjoy! 🥞

    - add a little extra flour (as the comment near the top says)
    - make sure that the bowl and whisks your using are clean and dry
    - if your eggwhite & sugar mixture doesn't fluff up enough, you can save the Ingredients by compressing the pancake a little around the edges (you will need to wait for it to cook a little first)
    - if you want to make more than 3, make it in one big batch
    - do not whisk the mixture AT ALL after you have mixed the egg white & sugar with the egg yolk and everything else

Ive been cooking for years but this has to be one of the hardest things ive made 😂 here are a couple of tips if you’re making this for the first time:
    1. If you are whisking the egg whites by hand, MAKE SURE your bowl and whisk is deviod of grease. Clean it really well, even the slightest amount of grease can make it difficult to whisk. Also add lemon juice to the egg white before whisking, it helps A LOT. It takes a long time to form stiff peaks so be patient!
    2. OIL YOUR PAN. Make sure your pan is thoroughly greased. And you know its ready to flip when the sides no longer seem wet since the steam has cooked it.

Austria has a pretty similar recipe, called Kaiserschmarrn... read up on it, instead of forming pancackes you basically dump the fluffy dow into the pan and once it is firm enough you cut in the pan into small pieces and fry it until it is crispy on the outside, best served with apple sauce!
