    Where I worked they had a cafeteria that once a month offered Italian Wedding Soup at lunch time. The Italian lady who made it absolutely knew how to make this soup the right way. It was irresistible! We all knew when 'Italian Wedding Soup Day' came around and there was a line-up in the hall outside the cafeteria eagerly waiting for it. Though extra was made, it sold out in about 15 minutes. What DELICIOUS soup. My absolute favourite.

    Very nice indeed!! There's probably a million different ways it can be made, and they're all very good. My grandmother did it this way. The size meatballs you had, she'd cut that in quarters, they were the size of large marbles, they'd fry up fast, her veggies, she'd dice them up a little smaller (I noticed the size of your carrots, here's were diced smaller) and the 10 cups of chicken broth....half of that would be bone marrow beef broth, half and half. Her soup was a little darker I suppose because of that beef broth. And she used escarole. I do remember one time she said not all like the stems, so cut the stems off, and I'd laugh when she'd say "DON'T GO CRAZY WITH THE GREENS" They wilt down, but you don't want it to be greens soup she'd say. She'd tell me about how the Dittalini, or the O'rzo would soak up all the goodness of the soup so be careful, put it on the side if you need more, better to have to add more, than take it out. She'd always end up saying; It's a perfect marriage of a bunch of lovely ingredients, you strike a balance, like a good marriage, you don't overpower with any one thing. Every Thanksgiving/Christmas/Easter......Italian wedding soup was on the stove. How I miss seeing her with that long apron.....

    Bake your meatballs on a foil lined cookie sheet...it's so much easier and no extra oil needed, just spray with pam.
    They brown evenly and don't fall apart. I agree homemade meatballs are the way to go if you got the time. Thanks for sharing 👍

      I used to bake em. Especially those big meatballs for spaghetti and meatballs. It’s a great process.

    I have recently made your Italian Wedding Soup, and it came out fantastic! My family loved it so much! We love a brothy soup. Now living in northern Minnesota, coming from living in Louisiana before, these soups are very much appreciated. Yummers, and thank you for your fantastic recipes!

    Well I have to say , that soup looks like a nutritional powerhouse. Lots of greens 🥬, orange and yellow veggies along with real beef and extra virgin olive oil. I’d imagine the addition of beef ,eggs and cheese makes it much more satisfying and satiating.
    I think this would be great for the winter months coming.
    Delicious and nutritious !
    By the way , that presentation of the final soup bowl looked incredible.
    Definitely have to give this a try !

    Made your soup!! It’s basically the same recipe as my mom and it turned out great!!! Thank you so much!!! Only difference my mom makes soft sponges to put inside like croutons!!! The soup was amazing!!! Thanks for the recipe I will use every time now!!!

      The large green pot is made by Le Creuset. It’s a 15 quart Dutch oven. You can order spatulas on Amazon. We were given a set by our family. All the others were from a kitchen supply or Amazon. Italian Wedding soup is definitely my favorite. Thank you for your support.

    First I’ve seen your channel, so glad I found it! I have so many ?s...how big is that soup pot, and where can we find the wooden spatulas? I’ve had this soup before and it also had bits of shredded chicken, and it was delicious. Can’t wait to try this! Looking forward to the other two soups...God bless!

      Hi Denise,
      We have several different size Dutch ovens. They are porcelain coated cast iron pots. You can find some brands at Walmart and Sams Club. However I would recommend you view America’s Test Kitchen channel regarding Dutch ovens. We bought a LeCreuset set about 25 years ago. They are in my opinion of the best. But they are the most expensive. Our largest pot is a #34. 13 quarts. We bought it too 25 years ago. But we do have quite a cookware collection. Thank you for your support. God Bless

    Love this recipe so much! It is delicious! Do you have any suggestions on how to not get the noodles to absorb all the broth over night?

      Good question. We had that same problem so we don’t use as much acini di Pepe. The only other thing you can do is to serve the soup over the prepared macaroni as needed. 😊

      If you cook the pasta separately and add it as needed, make sure to make extra broth/stock from the original recipe. Cook it in the broth , in this way it will acquire the flavors of the original soup. You can even cook the pasta (very small pastas) in chicken stock separately and then Ladd it. It’s what I do.

    My grandmother always put some cream in her meat mixture to make the meatballs. I'm wondering how much of a difference it makes.

      I always use cream in my meatball recipe for meatballs and gravy. This was a more burger type flavor. I’d say try it. It wouldn’t hurt to try it.

      We did buy some spatulas from Sams Club but I try to buy good stuff that lasts.
      I started a tool list on my last few videos.

      Absolutely. Even just toss frozen meatballs in there. It’s all good. But it does change the flavor.

    I'm going to make this, but I'm gonna cheat and use frozen meatballs ..... might use the Turkey meatballs ..... this is one of my fav soups, but I've never made it myself .....

    Came out okay…. I ended up having to add salt and hot sauce to my bowl to give it more flavor. Maybe my taste buds are build different. I will make this again but will add some more seasoning

    Garlic should go in just as the rest soften, otherwise it gets bitter! Also, true Italian Wedding Soup uses escarole, not spinach!

    Sorry but the garlic only needs to sauté for 2 maybe 3 minutes so it should never go in with all the other aromatic veggies
