It’s been seven years since my Papa passed and I was able to make his vegetable beef soup for the first time last weekend without bursting into tears. Every time I make it I get choked up. My greatest fear in life is that this is it and I won’t get to see him again in the after.
Mexican here. I absolutely loved how he tried the first taste of the soup with a fried pepper just like the Mex grandmas in Mex do, not sure what the Italian name for that pepper is but in Mex the name is chile de arbol which literally translates to tree pepper and yes they’re really hot but incredibly tasty. Grandpa is my go to when I’m craving simple Italian recipes which we all know the best Italian recipes are known for their great flavor with only a very few ingredients
Love this! Watching you roll the tiny meatballs brought me back 50 years, standing next to my grandpa, helping him roll the little meatballs and plopping them into the soup❤️ I will definitely be making this. My grandfather was a shoe maker from Italy, but wow! Could he cook delicious soup!
Just made this for dinner and it was so delicious! I added spring onions to the meatballs instead and mixed half minced pork and minced beef for the meatballs. It turned out so good! 🤤 Thank you so much for the recipe!
I was wondering why I felt compelled to buy this beautiful ground pork today. Made this during the pandemic, same guy same recipe. Making it again tonight! Warms the heart and soul. 🙏❤️
Even if you use the small round pasta traditionally found in wedding soup, cook it separately. It's easy to overcook and will turn to mush. Oh, and don't use 2 cups of it, that's way too much. Coming from a guy who did both last night. Meatballs were on point. I had to double the broth because of the pasta, then I overcooked it. I also added a few tablespoons of chicken base. It tasted great, I just screwed it up. I'll do it again, and cook the pasta separately.
This makes me miss my Nana so much!!! The cadence of your voice... the accent... the excitement. Miss you Nana!!! I still make this, every Thanksgiving and Christmas... and yes in between... but it reminds me of my childhood having it on the holidays.

There is very little that is elegant, just use the finest ingredients available, cook as little as possible, and never try to be extravagant or impress the neighbors. Pizza: thin bread dough, boiled down tomatoes with a few herbs and spices, a little fresh cheese, and a major dollop of olive oil. Basta. And then there is California pizza with pineapple and other ghastly additions. More is NOT better

My dad did not use pasta, but fried up plain French toast with egg and cream, then,cubed it up, then we poured the soup over it, in our bowls.. it also had pieces of the chicken (from making the broth). As well as the teeny meatballs! ....I add grated Parmesan cheese to my “French toast (in the egg mixture) this soup is nice and rich and very filling. ...We had this every year, while growing up,on the very special night,that the aunts and uncles came over to watch all the kids (and help) decorate our Christmas tree!... .... He died at 92 a few years back l, I miss him, and carry on the tradition, (even if it is only me at home!)
