Growing up my nonna (my mom’s mom) lived with us and would make this for us all the time. My dad loved it so much that she would serve it to him in a salad bowl instead of a soup bowl because he would inevitably ask for seconds and thirds! 😊 Such sweet memories.

We always had this soup on holidays from my mother, and we looked forward to eating this soup and loved every holiday.
That's what we called it "Holiday Soup" as we did the same. My relatives still talk about how good my mom's was. I've been making it now, and it's getting there....so delicious.

We call this wedding soup. It is wonderful. We have always browned the meatballs first in extra virgin olive oil just till they get a little brown. Set aside and drain. I enjoyed your recipe. Great soup and comforting.

I gotta make this! Sitting here eating a pint of Mediterranean mint gelato! And yes it’s freezing and snowing outside here in Colorado! Ever since you showed me the soggy bread I’ve been making it that Way too. But I do it a little bit different, first of all I never have real milk in the house so I always use almond, but sometimes I use almond flour as well and I will soak the almond flour in the almond milk, to keep it Paleo, other days I will use a rosemary sourdough, along with almond milk. It makes the most tender meatballs! Love u laura!

Made it ! You’re right, the cheese rind literally transforms the broth !
I started with a little Pancetta for fat and put in 2 dried tomatoes along with the rind but everything else the same.
Escarole is not always easy to find but the Frisée one ( markets call Endive ) could be used as well as any of the Chicory ones like Radicchio

Mom made it with shredded chicken and pastine as well as meatballs
We call it andijvie in the Netherlands and it usually goes into mashed potatoes.

I can never find Escarole, even in Los Angeles, and so I’m forced to replace it with Kale. But I always have my eye out for it! I’ve been meaning to pop into a little Italian market/deli for a while, just to see if they carry it.
Is kale just as good?
@@br33anoia4321 I don’t know if it’s just as good because I’ve never tried escarole, but when I made Italian wedding soup with Kale, it was very tasty. I just can’t say it’s the same flavor or texture.
Black pepper from Costco is the best...it comes from south india which produces the finest black pepper in the world. Laura next time take a huge container from Costco..ur mom will be delighted. At the beginning of the story i thought ur mom wanted u to bring parmigiana from the US...now that i would have been surprised.

I love to make escarole, sausage and bean soup, but have a difficulty time finding escarole in Yuma, Arizona.
Endive or Kale are good substitutes.

What's the difference between this and Italian Wedding Soup? I am from the West Coast so not a huge italian population out here and I have only ever heard (and actually ate yesterday) it called Italian Wedding Soup, not Escarole and Meatball Soup. Is there a difference?

I was with you on this recipe until you used bouillon. That is not a healthy item to use. I use chicken bone broth or chicken stock. Otherwise, it is a simple wonderfully satisfying soup.
