Ezogelin Soup - A mildly Spiced, Hearty, Mint-flavored Lentil Soup

  • Story of this traditional Turkish soup goes back to early 1900's. In the region of Gaziantep, a beautiful lady, Zöhre, later nicknamed as ‘Ezo’, (meaning attractive or beautiful), ended up marrying a man chosen for her by her elders. After a couple of happy years, her husband mistreated her so badly that she was eventually granted a divorce, something quite unusual at that time.
    After 6 years of solitude she had again no choice but to marry her cousin who later moved to todays Syria which was part of the Ottoman Empire before the First World War.
    Before her 2nd marriage could take place and in order to win the favor of her mother in law, Ezo was asked to prove her worth in the kitchen by creating a dish and she created a spiced lentil soup using the simple ingredients she had at hand - it is this soup she made that we now know as ‘Ezogelin’, or ‘Beautiful Bride's soup".
    Like many stories, this one also doesn’t end well for Zöhre (Ezo). Soon after the marriage, the Ottoman Empire collapsed and Turkey was founded. The borders between Syria and Turkey were established. Ezo now living in a foreign land, with no money and without any hope to see her hometown again, spent her years in an utter misery. It is said that because of her deep longing for her hometown, Ezo died of tuberculosis in 1956 and has since become a Turkish legend, depicted in popular films and lamented in folksongs.
    Her name lives on in this popular soup now, which is now traditionally fed to brides to sustain them for the uncertain future that lies ahead.
    Her name was Zöhre, they call her Ezogelin, the beautiful bride. If you ever taste this soup, may you remember her...

    Ingredients:
    • Red lentils, 1 cup (200 g)
    • Rice, 1/4 cup (30 g)
    • Bulgur, 1/4 cup (45 g)
    • 1 onion
    • 2 cloves of garlic
    • 1 tbsp chili paste
    • 1 tbsp tomato paste
    • 1 cup beef stock
    • 2 tbsp butter
    • 1 tbsp olive / vegetable oil
    • 2 tsp dried mint
    • 1 tsp black pepper
    • 1 tsp chili flakes
    • 1 tsp cumin
    • ½ lemon
    • Salt to taste

    Thank you for telling the origin of the name for this soup, I heard it so often and wondered why it was called so. Poor Zehra, she didn’t have a happy life. She’ll be remembered by her contribution to the Turkish culinary world.🌻🍜🙏🏼

    I'm happily watching along and then you made me laugh ... "Don't make a mess like this" , lol, it is almost a given that I would need a mop afterwards!! Obviously I liked that you provided alternatives for Vegans. I read the description before watching so that I knew what you were showing, so I knew that I could handle beef stock 😁 My mind was already 4 minutes ahead of you as I had already decided on vegetable stock 😉 Personally, I think that I might have gone for a larger sized bowl at the end!! Or at the very least a second helping 😋

    For anyone following along that's not just chili flakes that's Pul Biber. Also known as Aleppo Pepper flakes. Not as hot as chili and has a nice smokiness. Difficult to find but worth it.
    Also, the chili paste, is red pepper paste. Biber Salcasi. gotta refrigerate it after you open it because it will catch mold (i don't know why i thought it would be hot enough to resist)

      Its identical like chili flakes just without the seeds so this can be used also. Every oriental supermarket has this.
