- This week on Basics, we're taking a look at salad. Salad can be a robust, radiant, and reliable side dish or main course. I'll show you how to make caesar salad, panzanella, and a wedge salad.

Ingredients & Grocery List:
Panzanella:
Ciabatta, cut into bite sized pieces
Olive oil
Black pepper and kosher salt
1 cup cherry tomatoes, halved
1 medium cucumber, cut into bite sized pieces
Half red onion, cut into bite sized pieces
6 small balls mozzarella, halved (ciliengini)
Handful of fresh basil, julienned (plus additional for garnish)
White wine vinegar
Lemons, juiced
Dijon mustard
1 small shallot
1 clove garlic
Wedge Salad:
4 slices bacon, fried crisp
3-4 Tbsp buttermilk
1-2 Tbsp sour cream
1/4 cup full-fat mayo
2 tsp white wine vinegar
1-2 cloves grated garlic
Black pepper and kosher salt
High quality blue cheese, crumbled (to taste)
1 head iceberg lettuce
Chives, chopped
Cherry tomatoes, halved
Caesar Salad:
1 egg
1 bunch romaine lettuce, cut into bite sized pieces and washed
Ciabatta, cut into bite sized pieces
Olive oil
Black pepper and kosher salt
Garlic powder
1 clove garlic
1 ounce freshly grated parmesan cheese (plus more for garnish)
Half a lemon, juiced
2 Tbsp Worcestershire sauce
2 tsp dijon mustard
Special Equipment:
Salad tossers (optional)

Regarding the origins of Caesar Salad: It has been reinvented many times by many chefs, but they all follow the same basic formula because they have a common origin: "Caesar Salad" was originally an epithet for Roman soldiers' rations while on campaign. They got bread, oil, and hard cheese as their daily rations, and if they were still hungry they ate grass or wild vegetables like chard. Modern versions use lettuce.

Some say that it remains boiling to this very day... though the original water has long since evaporated and the egg itself has been boiled so long that the yolk has long ago petrified into an angry grey stone, the pot still boils with forgotten hatred.
Maybe he just pasteurized the eggs so he could have pasteurized egg yolk for the Caesar dressing

I clicked so fast... I love this channel just from watching Brad from its alive and somehow got me craving a Babish video
I love this.. salad can be so underrated! One of my favorite dinners my mom would make as a kid was a “salad” that was mostly just chopped up pizza bread she would just roll out and bake plain, mozzarella cheese, tomatoes, then a lighter amount of arugula and spring mix with a vinaigrette similar to that. Kinda like panzanella I guess but I called it pizza salad lol. And my mom would let the salad marinate for the perfect amount of time so that somehow everything had slightly absorbed the dressing without being soggy at all. So simple but the flavors and textures went together so perfectly.

My favourite salad growing up was a roasted eggplant salad with salted eggs, tomatoes, onions, cilantro and oil-preserved sardines. The dressing is just whatever vinegar you have in hand, fish sauce and sugar.

Hey babish thanks for helping inspire people to cook. I used to watch other cooking shows and think "wow that looks good I should try to cook something like that" but never took real initiative to try until I started watching your channel. After some practice I've made my first meal entirely from scratch, a chicken Alfredo with fresh baked French bread. Making the noodles sause and bread yourself really does show in the taste and quality of the food.
I love your work please take this as a constructive criticism. The basic aspect of BASICS WITH BABISH, I feel has been lost I guess after a few initial videos. You are just showing us a few standard no fail recipes. Where are the small points which one should keep in mind when approaching any salad? How to keep it crispy and fresh and still wash it properly? Pairing of different fruits and vegetables based on flavour profile? The types of sauces one can have? And all the type of lettuce which are available in the market? I mean these were all missed opportunities where the real basic stuff could have been talked about. In the previous episodes as well, we have witnessesed a how to approach rather than why to type videos in this series. I know and fully understand how difficult it is to churn out content when you have a schedule, I only hope that my observations help you in making even greater and enjoyable content as you have been for so long.
I don't know if this criticism is entirely fair; after all, the initial videos in the series taught all the basic skills one would need, and many, if not all, of the skills and techniques taught prior apply universally to the dishes being covered now. At this point, he shouldn't have to do a lot of hand holding to tell you what tastes good, because he taught you the skills to experiment and try stuff on your own - as Chef John would say, that's just you cooking.
@@TDanger1911 well but if you title somethings 'basics' you'd assume the pitfalls and how to avoid them would be discussed, for example how Thomas does it over at Kitchen Conundrums, but again you would say that's the main purpose there. May be what has me confused is that basics here implies the basic recipes and not to the techniques and how to knowledge to keep in mind.
@@VardhanShrivastava There's validity to that, I just think that most of the stuff he's doing at this stage of the series assumes you had been watching the episodes where he teaches those things, and would apply the knowledge here as well.

Technically there was anchovies in the original Caesar salad dressing. Worcestershire sauce is one of the main ingredients and that is made from fermented anchovies.

Been pushing my salad limits as long as I've been cooking for myself, but these are really inspiring me! If nothing else I commend you for making dressings with lemon, which is something I've found to be essential for anything from a vinaigrette to standard flat oil and vinegar, just so long as we aren't buying shitty bottled dressings.
Panzanella is my favorite salad too!!!
Also the original Caesar salad is not shopped. They served the whole leaves of Roman lettuce 🥬 in Tijuana :) and we do put anchovy filet. If you go to the restaurant/ hotel where it was invented, they prepare it on your table. It’s delicious!! Caesar’s ( the restaurant) also has pretty bomb bone marrow!
I love this channel; it actually improves my quality of life week by week as apposed to virtually everything else I watch on UA-cam. If there were a part two about salads I would love to learn the principles of putting together a good salad, like how to choose seasonal ingredients, pairing dressings and adding texture (nuts, dried fruit, roasted corn, seeds, etc). And since I'm getting into meal prepping, maybe a raw salad or pasta salad? Keep up the phenomenal work!

Hi! For the Panzanella you need to try the old real tuscanian recipe! Where you use stale (it's a "poor" dish) bread soaked in water.
We use it as appetizer or even main dish here in tuscany and the bread is mushy, not toasted!

As someone who grew up with an italian chef as a father, I've always found it odd when people only use bottled salad dressings (if any at all)
I mean... Most are really easy yo make.

Watching the making of the breadcrumbs all I could think about was what a pain in the ass burnt oil is to clean off baking sheets or pans. I only recently discovered those brillo pads with the blue detergent baked in, those things are incredible, no more scorched oil on any pans.
Add a little balsamic dressing over the iceberg wedge - extra dressing and the acid makes the salad awesome.

The wedge salad is actually amazing if you Chargrill the witches of lettuce. It may sound weird but it works. And for all those bacon lovers you can use the bacon fat you cook the bacon in to coat the grill that you were going to cook… Very lightly… The lettuce on. I would add a pinch of fresh thyme or other fresh French herbs to the bacon in cooking.

The anchovies are in the Worcestershire sauce! Recipes with additional anchovies are just adjusting ingredient amounts in a way.
FYI for anyone curious who doesn't know: there are anchovies in worcestershire sauce, that's why people think it's supposed to have anchovies in it. Just use the worcestershire sauce instead, it's better.

Yes, the original Caesar Salad recipe did not include anchovies, BUT for the last 60 years the restaurant where the salad was born does include it, so it's now a mainstay. You should go down to Tijuana and try it, you will not regret it.

They were tempered then added to the dressing. They weren’t hard boiled.
My foolproof simple salad recipe:
Choose a lettuce
Choose a seed/nut
Choose a fruit
Choose a cheese
Top it w/ Brianna’s Creamy Balsamic
My fav right now is Arugula/Spinach, Goat Cheese, Blueberries, Pine Nuts, and the dressing.
A pretty easy afgahn salad is choped up tomatoes cilantro and red onion with a oinch of lime juice and salt.
