  • The Olive Burger was made famous by Mr. Fables in Grand Rapids Michigan. Unfortunately, Mr. Fables closed their doors in 2000. I found this recipe a couple years ago online and the reviews say that is is spot on. So, Michigan I give you the first Mr. Fables Olive Burger Video on the web! Enjoy!

    Mr. Fables Double Olive Burger with cheese
    makes 2 burgers
    ---------------------------
    1 lb 81/19 ground chuck
    3 tbsp chopped green salad olives with pimento (about ten whole olives)
    2 tbsp Helman's Mayonnaise (Best Foods on the West Coast)
    2 tsp olive juice
    2 pieces iceberg lettuce (not the white part; must be green, and not the very-outer green part)
    2 slices of tomato, large enough for one to cover the bottom bun
    2 slices Kraft American cheese
    2 white buns
    Heat griddle or frying pan to 350 degrees. Mix the olive juice with the mayo. Split the chuck into 4-4oz VERY FLAT patties and cook them on a flattop or griddle. They were not charbroiled... Place a slice of cheese on two patties and top with the other patties, like you would two double cheeseburgers. Place buns in the microwave for ten seconds to warm (do not toast or grill the buns). Stack each bottom bun with one slice of the lettuce leaf, one tomato, a tbsp of the mayo, and a tbsp of the chopped olives. Place burgers on top of the condiments, top with the top bun, and enjoy!

    3 large yellow onions, peeled
    5 1/2 cups Drakes Crispy Frymix
    1/2 tbsp paprika
    1 qt water
    Deep fryer or pan with foodservice frying oil (can be found at any foodservice warehouse or provider)
    Heat deep fryer or pan with oil to 350 degrees. Slice onion into 1/4 to 1/2 inch rings, removing the centers. The rings should be at least 2 inches in diameter. Mix paprika into Drakes mix and add water. Mix well. Dip onion rings into batter and add to fryer one at a time, making sure that the rings are completely covered. The handle of a teaspoon works well for this purpose. Fry rings until golden brown.

    I used to practically live at Mr. Fables. I used to hang for hours drinking coffee and studying for college classes and I used to drive school bus and took my breaks between runs there. I remember that they had different levels of heat on their grill. They kept the burger meat in balls and when they got an order they would splat the burger ball on the lower heat grill and would start to flatten it out with a large spatula. Once they got it flattened(and it was flattened out so the burger would actually rim out from the bun all the way around), they would move it to the more hotter part of the grill with a flip. Then after a min. or so flip again to the hottest part of the grill and add the cheese if called for. I also remember that the mayo sauce was not runny. The used to prep an entire tray with lettuce leaves, the mayo sauce and the chopped olives. It seemed like they only used about a scant tablespoon of the sauce and maybe one and a half to two teaspoons of the chopped olives. Because they flattened out the burgers so much and basically cooked them fast, they were done all they way thru and the finished burger didn't sit so high and was easier to bite into. Sure was delicious...especially with their awesome Onion Rings. It was quite sad when they went out of business. One of the few places that even comes close to what it was is Mr. Burger. P.S. I actually live across the street from one the Mr. Fables former employees.

    Just saw the video! Fantastic! I worked at the Mr. Fables in Burton Heights on South Division right before Alger St. from 1984 to 1989 and had a great time there. By the way, you can still get the ingredients today! We ordered all of our food at Gordon Food Service...kid you not!! Don't know if it's still available but it was the hot spot and I'm more than certain if they wouldn't have changed the name to Fables Innkeepers and changed ownership, Mr. Fables would still be around today and have the best burgers around...hands down!! 🍔🍔🍔🍔

    Hey... that's my recipe! It's the same recipe that I came up with for the Filling Station restaurant in GR back in 2008 (when Randy Perrin, of Perrin Brewing fame, owned the place), and had used it at various restaurants that I had worked at prior, as a "special". Once I left the place, I shared it on Top Secret Recipes. I worked at three different Mr. Fables restaurants from 1986- 1991 (54th St, Standale, and Wyoming), and tried to approximate the "recipe" as best as I could over the years. One thing that I forgot to put in the recipe is how to prepare the patties. The grill cooks on the front line would place the balled-up meat on the grill, and push it down a bit. After a few seconds, they would flip the patty and smash it down flat on the grill, flipping it after a minute or so. The burgers cooked very quickly this way. We always placed the "card" (lettuce, tomato, mayo, and olives) on the heal of the bun, although some locations may have done it differently. We stored the buns, in the bags, in a heat drawer, and didn't grill them at all.

    Mr. Fables had the best grease in town. A Mr. Fables olive burger and an order of onion rings. Best meal hands down and again the best grease hands down.

    It was so sad when the one in Jenison/Grandville closed. That burger and those onion rings were the best. Place smelled like heaven.

    My husband was a manager at one of the Mr Fables stores early 70's. There was no olive sauce. Chopped olives were piled on top of the mayo. The burger got plopped on top of that. Olive juice and burger juices seeped down into the mayo giving you the taste of what many people think was a sauce. But there was no secret recipe as there was no sauce. My husband did say that Mr Faber (one the owners) was very particular about how it quantities and quality of toppings. So that also contributed to overall taste.

      Great info. GR native here and ate there a lot. Onion rings were unbeatable. As I recall the meat was in round balls dropped and smashed down. (Actually got hit by a bit of flying meat while ordering). 80/20 meat perhaps? No better burger on the planet.

    Sir. Thank you for this nod to Fables. I worked there as a burger flipper throughout high school at the 54th street location under the name “Otis.”
    What you are making is a Mr. Fabulous or Mr. Fab.
    Couple things...
    There was no olive juice. We had trays of these prepped. It was a leaf of lettuce and a slice of tomato with one spoon of Helman’s and a spoon of chopped olives. The burger meat was balled into trays with an ice cream scoop and promptly smashed on the grill. Culver’s patties are exactly like the ones we had at Fables. Good on the steamed bun, that is spot on as the drawers did that in their bags. The last thing is cheese. There was a slice on each patty. I would cook the burger and toss it on a bun. If busy, we handed it off to the lineman who lovingly placed a lettuce setup on top. It was wrapped in the silver foil paper with blue lettering, then stuck with a frilly toothpick. We we liked you, we accidentally wrapped it in the red or yellow lettered wrapper and forgot the toothpick. This accidentally gave you a nice discount.

      Thanks for the info and reminding me what it was like when we ate there in the 80's. Sounds like different Mr. Fables restaurants used different brands of mayo. Barry who commented above said they used Kraft mayo at the one in Big Rapids.

    Mr. Fabulous (Mr. Fab). The olive burger was single patty, no cheese. I worked at Mr. Fable's for 5 years (high school and college). Never got sick of the food. They had the best onion rings ever.

    Well hello there from GRAND RAPIDS. "The Filling Station" located in GR makes the "Fab" burger still. Your burger build is spot on! We love olives on our burgers here! And believe it or not, there's many ways to build an olive burger. Keep up the good work! Love your burger builds. I really liked the peanut brittle burger with the gastric sauce! Outstanding!!!

I probably would have never tried an olive burger if it wasn't for the request I got. It proves the words I always tell my picky son to be true.     Nice job!
    I’ve been a picky Mr Fables fan ever since I was a kid and even got my first real job there. I worked at the Northland Drive location and have a couple things to make it right.
    1) the meat starts in a ball and we chuck it at the brittle hard then smack it with a heavy spatula before flipping it. The cheese bonds the meat together since it’s falling apart after that.
    2) we put the buns on the grille often to toast it with the grease.
    3) from bottom to top: bun, burger, cheese, iceberg as heat shield, tomato, mayo mix, olives, top bun. That kept the mayo cool and olives away from the hot meat.
    For when you try it again!

      So cool. Thanks. My family went every Wednesday night to the Michigan St. location when I was growing up for their fish fry, onion rings, and Mr. Fab’s. My dad was friends with John Boyles, the “bles” part of Mr. Fables. It was Faber and Boyles, two last names put together.

    I worked at Mr. Fables in Big Rapids from high school through college, back in 19 (mumble, mumble). I can't figure out where people got the "special sauce" idea, as we used Kraft mayo straight out of gallon jars, chopped olives, also from gallon jars (we went through a lot of both!), fresh lettuce, and fresh tomato for the single patty Deluxe, and the double patty Mr. Fabulous (The Fab!). Cards (trays of 12 bottom buns with lettuce and tomato) were prepped ahead of time, and the top buns were kept in bun warmer drawers. The beef was formed into balls with an ice cream scoop, and kept in pans. We had one pan next to the flat top grill. Customers could tell us how they wanted the meat cooked, no spices were added unless a customer requested it, and that's when we added the mayo and olives to the prepped bottom bun. As for the onion rings, I think you can still get Drake's Mix in stores. We got it in 50 pound bags. Went through a lot of that stuff too! Mr. Faber's and Mr. Boyle's legacy.

      Barry, I don’t suppose you worked at the Standale location? I worked at Great Day Foods circa 19 (mumble, mumble), right down Lake Michigan Dr. After the store closed on the weekends the crew would all head over to Mr. Fables for burgs and milkshakes. They’d put us far in the back, away from the regular patrons cause we were loud! I’ve been on the west coast for many years now, but I always get nostalgic thinking back on Fables, Yesterdog, North Kent Mall, roller skating at Terry Hall, Media Play, Believe In Music, Studio 28, and hanging out with musicians at Kick N Ass. Music. … [sigh] Fun Times.

    YUM! Thank you for highlighting a Michigan tradition. Halo Burger in the Flint region has been making olive burgers since they were originally known as Kewpee. You rocked this! I prefer olives over pickles on a hamburger any day.

    I'm from Michigan and this is pretty faithful to the iconic Michigan olive burger. I would have also added a bit of ketchup on the upper bun and a few dill pickles. Bravo! Thanks for sharing!

      Just came across this video! And I’ve been a subscriber to Ballistic BBQ for a few months now. I guess I didn’t look back far enough to see this video 😂. I am also a GR native transplanted to the south (Tennessee) and although I never got the Olive Burger at Fables, I was a big fan of their regular burgers and fries. It was a very sad day to see them close when they did.
      The Choo-Choo Grill is still around though! That was and will always be my favorite burger in GR and anyplace else.
      Very cool to see a west coast Burger fiend tackle a Mr. Fables classic! Thanks man!

    Looks good to me! Seeing those chopped olives reminds me of a Dayton, OH based small pizza chain called Marions. It's a very unique thin crispy crust type pizza and all the vegetable toppings on top are also chopped. They have a very good fine ground/chopped sausage too and the pizza is cut into small squares. I've never been able to find a copycat recipe of it but it is really good. That can be a challenge for you, research that and try to recreate it!

    I always watch your videos .. those burgers look so delicious. Back in the days I used to make the patties with eggs, tomatoes, onions .. but last time I decided to go a head and do it your way, 20-80 good meat, and just salt and papers for seasoning, and it turned out amazing .. everybody was in doubt of this way of making a patty, but I just didn't care, cuz I took the way from a BBQ Master :D

    Love the sound of the addition of the olives. The saltiness and texture should go really nice with the beef. Not tired the lightly steamed buns, but might give that a go too. A nice easy recipe for a different burger

    Being from the west coast I’ve never heard of Mr Fables. So when I first saw the title I groaned “Not another meatless burger”. I was pleasantly surprised to see the burger. It looks very interesting and I’ll give it a try. You’re really rocking that shirt.

    Close but they started with Hellmans heavy mayo so theirs was a little thicker. But the heavy mayo is only available in the 1 gallon size.

    You need the Fables Onion Rings to go along with it. They used Drake's Crispy Fry, still available through Amazon. Create a semi-thick batter and dip and fry.

    Mr. Fables used to smash the beef paddy(a ball of ground beef) on the griddle. A Smash burger. Besides that looks spot on.

    Looks pretty good but been awhile... Miss from my youth Cupie's Drive-In the original Fables... Red Lion and original A&W too Dog & Suds... carhops on roller skates, window trays and B&W TV... Roll-up windows would be nice... with a chocolate malt. Happy Days:

    Love your videos Greg. I always get hungry watching them. That burger you made with Harry was nuts! Pitmaster Burger lol. But I'm a HUGE burger fan. I ate a Whataburger mushroom swiss burger with au jus sauce and grilled jalapenos about 30 minutes ago. Have you done a Whataburger copycat? That would be awesome. The sweet and spicy bacon double cheeseburger is killer. Nice job on the video graphics. 👍

    Interesting combination, olives on a burger 👍
    You need to do an Australian style works burger, with either rib fillet steak or burger patty, bacon, grilled onion, BBQ sauce, egg, grilled pineapple , cheddar cheese, tomato, pickled beetroot, lettuce.

      The Australian Style Burger (with the works) is the ultimate definition of "interesting combination!" It is on my list and I WILL be doing an Aussie Burger!

    If you also put a nice thick slice of onion on there you won't be sorry. Mmmmmm that sure looks good. Russ' in Grand Rapids area also makes a good olive burger.

    My father would probably like this one; he's an olive fan. For those wanting an easy way to warm/steam a bun - simply seal it in a Ziploc bag and put it in the microwave for about 8-15 seconds. It works well as long as the bun is at least semi-soft. A quasi-crouton will not be restored.

    I was a major Fables fan growing up. You missed one KEY thing that made Fables burgers unique. As soon as they hit the griddle, the cook would smash them down with a wide spatula so the burgers got thin and wide. They cooked fast on a very hot griddle. The burgers always overextended the edges of the bun!!

      Thank you. This was a tough one for me when it came to the research. I couldn't find any videos, only articles and nothing really mentioned technique or anything. Did my best with what I had to work with.

    Mr. Fables did help it become popular. But Kewpee Hamburger is what started it. West side was Mr. Fables and East side still is Halo Burger. Yours is one of the best non Michigan olive burgers I’ve seen. I make them all the time and love them.

    Regular burger (never frozen), not lean, balled up using a ice cream scooper, smashed flat. Regular american cheese. No salt/pepper added. The kit goes on top (lettuce, tomato, mayo and olives). Very basic white bun, in a heated drawer.
