Wanted to make this last month, store didn’t have chimichurri or the monchego cheese. So I used some Mexican spicy basting sauce and chipotle smoked Gouda. Outside of the hodads bacon it was nothing like yours. But, it was delicious, thank you Greg for inspiring me to grind up some good meat and make a huge, juicy burger. For anyone, Boars Head Chipotle smoked Gouda is faaaaaantastic.
What I really liked was right after you put it together and you said, "I wish you could smell it," you had that Pavlov's Dog salivation pause. A must do recipe. Cheers mate.

A burger with grilled Manchego cheese, grilled sweet onion, red chimichurri, and that boiled then grilled bacon makes something better than just a basic burger. Going back to the basics with ground chuck makes this a no frills burger with no extra condiments like ketchup, mustard, or mayo being necessary. I would call it the Keep It Simple burger. As argentinian i would improve it as for the argrntinian touch. That sauce looks tasty but chimichurri is simole to make (onion, garlic, red pepper and maybe carrot, all cut in brunoise, then put into a jar with the oil u use) Couple of hours in the fridge and ready to use. It can be used right away but it gets better in time. Chimichurri, used with chorizos and asado and why not burguers.
