I lived in LA in the early 80's and I used to go to the 'original' Tommy's and get a double chili cheese burger, plus a handful of pickled serrano peppers and a soda for breakfast 5/6 days a week - it was really cheap but oh so good - I've had withdrawal symptoms ever since I moved back to OZ and I've never managed to successfully recreate the 'Double Chili Cheese Burger', tomorrow I'm having a crack at copying this recipe. Hand on heart, the double chili cheese burger is the best burger that I've ever tasted, thanks so much for bringing back so many good memories.

You'll get better flavor with the chili if you add the dry spices to the meat when it's cooked. Adding spices/salt to chili after the liquid is added requires a lot more to get the flavor right, especially salt. You'll never get caught up. JMO. I use cumin/chili power, GP and OP too. Using serranos or jalapeños to the meat mix is nice too.
Thank you James. I just made in prep for 4th of July and I couldn't just spices right, over seasoned! Also, my masa and flower did not turn brown. All and all it was a great video but I'll try it again using your tips
Totally agree. Whenever I make chili, I always spice the meat while it’s cooking. If using onions an fresh peppers, I normally caramelize them slightly before throwing the meat into the pan. It gets the right flavors blended just the way you want them.
I went to the original across the street from the CBS studios. A neighbor used to get a regular steady supply of free tickets to the Carol Burnett show tapings. We'd hit the Tommy's where I learned that you HAD to dedicate a hand to holding the burger until it was eaten. Arizona doesn't have this chain yet but maybe someday. But I can see several uses of this chili - It would be fantastic on pasta. Thank you, Greg, for your perseverance to creating the knock-off. Now, if you want a real good challenge... Red Cabbage Salad from North Woods Inn, another iconic SoCal restaurant. All the knock-offs are no where close to nailing it. Have fun!
That burger was off the charts Greg. Very interesting call with the masa roux for the chili, I think you are right with the 50/50 masa to flour. I'm going to have to give that a try.
I live in Los Angeles and had the original Tommy's from the rampart location, with that being said we here are lucky that they sell the chili in separate size containers.

My wife and I made this. We followed this recipe as best as we could, given the availability of ingredients. Our ground beef did not have that much fat. We had to add more butter. This is the perfect hot dog chili. We can not wait to try it on burgers. We can't stop eating it. Thanks, it's close I'll give you that.

Just subbed you and all new content:) Looking forward to trying your CC recipe for Tommy Burgers. A bit of background. My husband grew up in Socal and introduced me to this culinary crack!! LOL!! Tbh..at first I wasn't sure as I was never a fan of chili burgers. And this chili was definitely something new to my palate. But it sure didn't take long for this to grow on me and now I can't get enough of the stuff! FF a few years and we now live in Southern Utah. But that puts us close to Las Vegas. And we recently were thrilled to learn that Northern Vegas has a Tommy Burger!! We just tried it two days ago and it was clean, well run and the food was just as good if not better than the one we frequented in Socal. We even stopped at Walmart and bought a small cooler so we could order a couple of their breakfast burritos to go home with us and put in the fridge for breakfast the next day. OMG!! I've yet to find a better tasting BB!! yum!! Will update as soon as we give your CC recipe a go! 😜

I looked all over the web and found the same recipes for Tommy's chili as well. I'm very excited about giving this a try. FYI, a wire potato masher is the best tool I've used for breaking up the ground beef to get those small chunks you're looking for.

Moved 750 miles away from LA but go back once or twice a year and I hit 3 different Tommys. The one on Pico, the one on Roscoe in the valley and the one on the way to Vegas, possibly near Barstow truck stop.
Driving all day (12 hours or so) from Grand Junction, Co to Barstow, Ca, Tommy's was ALWAYS our "what's for dinner" stop when the 12-12 tours brought us to SoCal... And I miss it. Now, ya have me thinking of trying to find a way to convince Mercy that we need to return (12-12-5 is scheduled to be a Colorado only trip this summer). Hope I can convince her! GREAT video, Greg.
For me it was the only positive reason to go to Vegas. Get Tommy's twice in a week. Their burgers are okay but I usually got the chili cheese fries. Love it when I would put it in the fridge and eat it the next day, microwave it and it tastes even better

Awesome! The masa was a great thought. I even mentioned to people that there was something about Tommy's chili that reminded me a bit of tamales, but never thought about using masa... Will have to try your version. I think the only think I miss about Los Angeles is Tommy's.. ;-) Well, maybe Philippe's french dip too, but its been so long, not sure I remember what that actually tastes like. Just that I loved it..
Masa flour is awesome but it is pretty strong...I use about 2 tbs in my chili pre-mixed with beer or water . Good looking burger dawg. I enjoy your channel.
Primanti Brothers "Pittsburger" sandwich. bias cut Italian bread, tomatoes, provolone cheese, fresh cut fries, coleslaw. all on sandwich and mash it flat enough to get in mouth. I used to work there. the hard part is matching the coleslaw because its good coleslaw. they kept that secret. the burger made 2nd place on Big Eats one year. it can be made with two eggs optional.

Since moving across the country from SoCal, I use a can of Wolf Chili w/ No Beans or Wolf Hot Dog Sauce for chili cheese burgers, chili cheese fries, and chili cheese dogs. Works for me... It thickens up nicely...
Just tried it for breakfast using Wolf Brand "Hotdog Sauce." The general flavor, color, and texture are there with the chili (dark, thick, and sticky), but it's definitely more smokey and spicy than Tommy's chili. Between mustard/pickle juice on topside bun and bottom side bun and diced yellow onion, I broke a sweat wolfing it down.. I made a 1/3lb single. It was a great flavor-bomb, though!
Very good chili. Tommy's chili is like no other. Sort of like a thick old fashion southern hamburger gravy but made with chili spices. I think you got it right.
Great tip about the mustard. I made a copycat yesterday. They had a special on the chili--normally 16 bucks on a quart but 4 bucks for Labor Day. Got two quarts...but may have to freeze...because waist line!
Greg, Been a subscriber for about a year and a half. Love your videos, keep it up. Here in Atlanta, we have a place called Holeman and finch and they have the best burger I've ever had. You should try to copy that recipe!!

It amazes me how Tommy's tastes the same today as it did 30-40 years ago. Tommy's also has a few locations in Las Vegas.

I love Tommy's they have Willie's in downtown Sacramento which is the same. My God I miss their chili cheese fries! Perfect hangover cure!

bias cut Italian bread, tomatoes, provolone cheese, fresh cut fries, coleslaw. all on sandwich and mash it flat enough to get in mouth. I used to work there.
the hard part is matching the coleslaw because its good coleslaw. they kept that secret.
the burger made 2nd place on Big Eats one year.
it can be made with two eggs optional.

Looks bomb! i tried your Bob's Big Boy copycat and it was spot on! I will definitely try the Tommy's chili burger next time for sure I I grew up in So Cal and sure do miss those places.

Since moving across the country from SoCal, I use a can of Wolf Chili w/ No Beans or Wolf Hot Dog Sauce for chili cheese burgers, chili cheese fries, and chili cheese dogs. Works for me... It thickens up nicely...
Just tried it for breakfast using Wolf Brand "Hotdog Sauce." The general flavor, color, and texture are there with the chili (dark, thick, and sticky), but it's definitely more smokey and spicy than Tommy's chili. Between mustard/pickle juice on topside bun and bottom side bun and diced yellow onion, I broke a sweat wolfing it down.. I made a 1/3lb single. It was a great flavor-bomb, though!

Very good chili. Tommy's chili is like no other. Sort of like a thick old fashion southern hamburger gravy but made with chili spices. I think you got it right.

Great tip about the mustard. I made a copycat yesterday. They had a special on the chili--normally 16 bucks on a quart but 4 bucks for Labor Day. Got two quarts...but may have to freeze...because waist line!

Been a subscriber for about a year and a half. Love your videos, keep it up. Here in Atlanta, we have a place called Holeman and finch and they have the best burger I've ever had. You should try to copy that recipe!!
