My personal tip is to mix the peanutbutter with coconut milk and / or curry paste. It makes the texture much better while also being creamier and spicier. It becomes like a thai burger sauce that way.

San Diego's Corvette Diner when it was in Hillcrest had the Rory burger -- the only thing on the massive menu that was guaranteed -- LTO, bacon, PB...my favorite!
For a double patty smashburger, IMO, I've found that 80-90g patties is the sweet spot (or approximately 3oz patties). You can get the edges with more lace during the smash which gives better mailliard texture from the sear. 8 oz. of burger is overkill. Your mileage may vary.
