How To Make Bacon & Cheese Polenta Gratin - Recipe

- A quick and easy mixture of polenta, cheese, bacon, and corn kernels.
INGREDIENTS
3 cups water
1 cup coarse-ground cornmeal (polenta)
1/2 tsp salt
1/2 tsp pepper
8 oz (230g) bacon or bacon block, cut into 1/4” (5mm) pieces
1 can corn, rinsed & drained
3 cloves garlic, thinly sliced
8 oz (230g) cheddar cheese, grated
1/2 cup Panko breadcrumbs
DIRECTIONS
1. Simmer the cornmeal in water, with salt and pepper, stirring occasionally, for 8-10 minutes.
2. Cook the bacon on medium heat, stirring occasionally, for 8-10 minutes.
3. Mix the bacon, corn, and garlic into the polenta.
4. Mix half of the cheddar into the polenta.
5. Spoon the polenta mixture into a buttered 9x9 baking pan and spread evenly.
6. Sprinkle Panko across the top and cover with remaining cheese.
7. Bake at 375°F (190°C) for 25-30 minutes.

Very nice, if you make it again try using some Stock/Broth instead of water to cook the polenta. since you were using bacon maybe some Pork broth would be nice.
I sometimes do. Other times milk/water. Bacon can also be replaced by bbq pork. So many options.
Great inspiration! We could see the steam rising when you took that spoonful of the gratin out of the pan.....you were smart to not pop it into your mouth.....Ouch! That would have left a scar! LOL!
I'm what we call "neko jita" in Japan. Means "cat tongue" and refers to someone who can't eat or drink very hot things.
@@KumasKitchen Kevin, I also have a "neko shita".... I can never eat at a fast in/out ramen shop....I would take too much time waiting for the soup to get down to a temperature that I could handle....and the owner of the shop would not be pleased! LOL!
I don't often use Polenta. This is a nice combination. I might add some chopped green chilies for a little color and heat. By the way, how is Mei-chan settling in? Thank you Kevin for this nice recipe.
Chilies or jalapeno peppers would be great. I'd have to put them in my half only. Mei-chan has settled right in. She's an energetic little girl. She's been earing well and putting on some size. She had been bullied by her siblings at her previous home and I don't think she got enough to eat. Making up for it now.
