How To Make Tex-Mex Rice with Cheddar Cheese - Recipe

- A hearty one-pot meal with a satisfying mixture of chili and cheese.
INGREDIENTS
2 tbsp olive oil
1 onion, chopped
1 lb (450g) ground meat
2 tbsp chili powder
1 tbsp paprika
1/2 tsp salt
1 cup uncooked rice
2 cups chicken stock
1 can black beans, rinsed & drained
1 can corn kernels, rinsed & drained
1 can crushed tomatoes
5 oz (140g) cheddar cheese, grated
DIRECTIONS
1. In a large pot, heat oil over medium heat. Add onion and cook, stirring occasionally, for 5-6 minutes.
2. Add ground meat, chili powder, paprika, and salt. Cook on medium, stirring occasionally, for 8-10 minutes.
3. Add rice and cook, stirring frequently, for 2-3 minutes.
4. Add chicken stock and deglaze pot. Add beans, corn, and tomatoes. Simmer, covered, stirring occasionally, for 20 minutes.
5. Remove lid and cook, stirring frequently, for another 2-3 minutes, until slightly thickened.
6. Remove from heat. Spread cheese across top, cover, and let melt.

As a navy brat, I've always heard that the Taco-Rice and Chili-Rice had sprung up around the US bases in Japan as bar food for their American customers. Many claim to be the first, but I've been told Okinawa might be the title holder. Japanese versions use WAY more rice around Yokosuka where I grew up. This looks great.

Kevin, yep.....this will work! BTW, I may have said before but I found Kirkland brand Sharp Cheddar cheese in nice full sized blocks on Amazon... Much better than anyting I have found domestically, and more cheese for the Yen.
I still haven't checked out Kirkland cheese.

if the wife is allergic to Cumin why the chili powder which contains cumin? do you think this would be similar to Japanese taco rice?
