Classic Tiramisu Recipe

  • Nothing goes better in a hot summer day than a chilled dessert. Classic Tiramisu is one of these irresistible desserts that is so easily to put together and requires no baking. It is rich and fluffy, literally melts in your mouth. No wonder why everybody loves this recipe that much.

    Ingredients
    Makes about 6 servings
    Mascarpone Cream
    3 eggs
    3+2 tbsp (45g+30g) sugar
    1 tsp (5g) vanilla extract
    9 oz (250g) mascarpone cheese
    pinch of salt
    For Dipping
    1 cup (240 ml) espresso coffee, at room temperature
    2 tbsp (30ml) amaretto liqueur
    20 Savoyardi ladyfingers (about 180g)
    Garnish
    Cocoa powder, for dusting
    1. Separate the egg yolks from the whites. Mix egg yolks with 3 tbsp of sugar over a pot with simmering water until thick, creamy and pale yellow colored. A thermometer should read 160F (70C). Add vanilla extract and transfer to another bowl to cool faster.
    2. Add mascarpone cheese and and blend well.
    3. Whip egg whites with the remaining 2 tbsp of sugar and salt, until foamy, and gently fold them to the mascarpone mixture.
    4. Combine the cooled espresso with liqueur and set aside.
    5. Dip quickly the ladyfingers in the coffee mixture and lay out in a single layer on the bottom of a 8 X 8 inch tray. Don't soak the ladyfingers too much, only the edges should be soaked, not entirely.
    6. Add half of the mascarpone mixture. Lay another layer of soaked ladyfingers and add the rest of the mascarpone mixture
    on top. Cover and refrigerate overnight or at least 4-6 hours before serving. Sprinkle cocoa powder on top and serve.

      Tiramisù is recognized by the italian Ministero delle Politiche Agricole e Alimentari (dept. For food and agricolture) as a typical dessert from Friuli Venezia Giulia.
      Altough its clear origin Tiramisù is well diffused all around Italy.
      The recipe in the videos has 3 big mistakes: no vanilla at all, no warming of the eggs (use only super fresh eggs!!!!!), no salt and sugar on then egg whites. Amaretto is ok but cognac is the original add-on.
      First attempts on this dessert were made for former italian royal family.

      I am so glad to hear that coming from an Italian :) I saw many recipes using cream and no eggs when making tiramisu.. but I really like this classic version of it.. it is the best

      This is the original recipe, always the best :D
      you can try using Pavesini (if you can find them) instead of ladyfinger biscuits, I prefer that way because they make tiramisu very creamy and sometimes ladyfinger become too dry if you have not enough cream :)

    I ate raw egg all through childhood in cookie dough batter and cake batter. I wouldn't worry about this. Looks delish.

    Made this yesterday and it was really delicious! Thank you for sharing this recipe. It was a tad too sweet for us, i would reduce the amount of sugar in the mascarpone cream as the biscuits are already sweet. I made the tiramisu 1 day before so that all of the flavours of the different ingredients can merge together. Stale tastes goood!

    Guys, don't be scared of raw eggs, just be sure that the eggs you use are fresh! Trust me, I'm Italian and I've done tiramisù (lift-me-up in Italian, in case you were wondering) a million times! I don't even cook the yellows, I just beat them.
    If you can't find mascarpone you can use whipped cream (but it's not the same, I'm sorry :( ).
    Instead of lady fingers I like using plain biscuits because they stay crunchy, while lady fingers absordb too much coffe for me and get too spongy.
    I never put the alcohol in it, so it's something you can easily skip! =)

    There's another version of Tiramisu which uses whipped cream instead of raw eggs. But this I think is the traditional way. Aah.. so in love with these videos ♡♡♡

    It's always so nice to see a tiramisu recipe without whole cream. Don't get why ruining it by making it heavier when it is definitely not needed.

    You did it, just like I did! this recipe is really awesome. I use milk cream with sugar powder instead of white egg :)) after your video, I will try once with egg white.. and I add some milk into coffee, to make it soft :) btw you may be the best youtuber on cooking

    I use the same recipe. But also add zest of 1 lemon into the egg yolk mixture and also 1 tbsp lemon juice when mixing in mascarpone. My version is non-alcoholic (hate to spoil it for the italians) so obviously omit the Amaretto.

    Thank you for the recipe. I have a few questions. hope you can help:
    - ladyfinger became soggy and fell apart, causing the coffee to leak out. Could this be due to the type of biscuit or coffee I used, even though I dipped the biscuits for only a few seconds and immediately took them out? Or because of less biscuits?
    - After mixing with egg whites, I feel like the cream is separating. Is there a way to make it smoother? Could I skip the eggs if I want it richer?

    what difference between mascaprone and cream cheese? can they subtitute?

      mascarpone is a naturally sweet cheese, it has a very subtle flavor and is not as sour or strong as cream cheese. you can substitute them but the flavor will not be the same. I think mascarpone is better personally

    Hey, just wanted to mention that only the type of ladyfingers should be Savoyardi. The clarification is necessary because in USA, for example, ladyfingers is not necessarily the same as Savoyardi ladyfingers. There are brands here that are completely different (more like biscuits with nuts) and won't work even though they are marketed as ladyfingers.

    At 0:30 , can someone explain this process?
    My eggs coagulate on the bowl sides while the rest never go above 50°c.
    What exactly is the purpose of this procedure? Can I skip the simmering pot and still have a thick texture?

      try to not overmix the Mascarpone.. and make sure it is at room temperature when you mix it
