      Same here but put it in your stews, roasts, curry, etc. Its phenomenal! Other yeast extracts are also good too in a stew like marmite/vegemite. But not as good to me.

      Koji is a type of bacterium called Aspergillus oryzae ('kin' in Japanese means bacteria, so koji kin = koji bacteria). It grows on rice and is used in many cultured food products, like miso and sake, Japanese alcohol.

      The other misso production I saw needed to stir the misso each day, during fermentation. The one in your video fement in sealed pack.
