    I love miso, and it was so cool to try it fresh in the factory. I never knew the difference between mugi-miso, mame-miso, awase-miso, and kome-miso, did you?

    I don't understand why this doesn't have more views, it's the most informative video on the commercial manufacture of the product on YT right now. Keep doing you Umami of Japan!

    I usually eat normal misos which is sold grocery store. Of course, they are delicious, but as I watch your video, I wanted to try various type of Miso!

    Hi Micaela, thank you for this superb video! I love miso and planning to visit Yanagawa next month and Tsurumiso factory is definitely on the itinerary. Thinking if they would do tour for a small group. I wrote to them and there's no respond. Any tip on how I could get in touch with them? Appreciate your input. Many thanks.

    huh, the saltiness "reduces in intensity the longer it sits". i wonder why/how. i know the enzymes work and break down the protein and starches. maybe those flavors take over and seem more obvious instead.
