I usually eat normal misos which is sold grocery store. Of course, they are delicious, but as I watch your video, I wanted to try various type of Miso!

huh, the saltiness "reduces in intensity the longer it sits". i wonder why/how. i know the enzymes work and break down the protein and starches. maybe those flavors take over and seem more obvious instead.
