My mama also taught me when I put my peeled/cut potatoes in water, add an apple slice to keep them from turning. You can prep your potatoes up to 24 hours with this method. Just like when u want to hasten the ripening of your bananas, put them in a brown paper bag with a whole apple. There are fruits/veggies that will affect the ripening of others when they’re stored together.

I've been making a skillet very much like yours for years and there's nothing better! I also do mine in cast iron. It's something I do while camping - I call it "wilderness meat & potstoes". I like bacon, hot link, and leftover hamburger and/or steak from the previous night's BBQ. It has always been a hit. And nothing like dunking the potatoes in the runny egg yolks 😋

I plan to do a version of this, but with many cheats. Spam instead of bacon (because my coworker has never had Spam) with frozen Obrien potatoes, fried or poached eggs topped with Hollandaise and green onion garnish. Will add Tony's seasoning, but may try yours out later. I just know how the potatoes will take up the Tony Chachere flavor.
The Hollandaise will just add that extra "fancy" touch plus mellow the flavor without removing it.

@@aiyanacruz3498 Well though bacon is better than Spam IMO. The breakfast skillet is great, but if trying to impress then adding an egg on top (especially if you also can add Hollandaise and/or green onion garnish) then it really "fancies it up" LOL! Nice thing about a skillet meal is adding leftovers seems on purpose. Caveats would be just make sure ingredients are harmonious with each other and presentation.

I’ve been doing similar for years now…except without bell peppers because of allergies.
I did one about 18-19 yrs ago on the spur of the moment in someone else’s kitchen, except the guy’s bought some Jimmy Dean sausage, frozen hash browns & eggs. Cooked up the sausage, almost done & I threw in the hash browns seasoned with salt, pepper, garlic & onion powder. I don’t think he had oil, so I probably added some butter to it so it wasn’t so dry, dished it out & fried eggs & just laid them on top. Those 3 guy’s still talked about that breakfast 3-5 yrs later!!
There is nothing like fried potatoes and onions , but this right here looks so good with those peppers. I keep my meat on the side, but this is worth a try. Thanks for sharing.
