    Just finished baking them ( and devouring them 😬). Delicious ! I’m in Australia, and used whatever local brands I had, Almond flour from Costco, Pure Capilano honey, light olive oil, Kaara UHT coconut milk, frozen blueberries. Baked at 170 deg C for 20 mins and then 150 deg C for 10 mins. Came out great, not oily at all. Took your tip on not to overmix batter. Used a little extra almond flour , about 125g. Not too sweet and fantastic with a cup of tea. Thanks for a lovely recipe.

    I just got to know recently that I'm gluten intolerant, I used to itch like crazy every time I ate wheat.
    I've been craving cake and was on the look out for gluten free recipes... I tried corn bread and didn't like the texture. I tried your recipe today and all I can say is yummy 😋😋😋 this is definitely a keeper thanks for sharing. My family love it as well
    I used dairy heavy cream, 1 tsp vanilla and 3/4 table spoon coconut oil... it turned out superb.

    I tried the recipe last night with cashews that I blended. The muffins came out great. You are right, I did have to use much less almond milk (about 1/4 cup). I also only used 1 tablespoon of oil. And to be adventurous, I also added a teaspoon of chia, to thicken the batter. :)

    Perfect recipe. I was just frustrated of preparing a food for my baby take a egg challenge test, and it requires bake one egg with one cup of flour. I tried to bake a cake with just brown rice (my baby has gluten allergy) egg and water and end up a horrible taste cake. This recipe is just exactly what I need with the same amount of ingredients required. Thank you very much!

      I am back again! this time my baby need to take a milk challenge test. i searched so many receipts and found your coconut muffin receipt is the best fit. but i go one problem, my baby is still allergic to egg and gluten. so this time i have to avoid egg, but your recipe includes 3 eggs ,can I use 1 tbs chia seeds mix with water and increase the milk amount to 240ml to substitute it?

      I haven't made these substitutions in this recipe but they may work. For the almond milk, since it's much lower in fat I would add a little less. If you try it please let me know how it goes.

      Chickpea flour has different properties, so it may work to make this substitution but you may need to add more of the wet ingredients. Please let me know how it goes after you make it.

      Living Healthy With Chocolate they came out super moist and delicious!!! I put jelly on them and ate them that way. Definitely a recipe that I'll use over and over adding different things to, like chocolate chips, blueberries, maybe some other berries just for different flavors 😁

      For the coconut oil you could use butter or avocado oil and for the coconut milk, you can use heavy cream or a nut milk like cashew milk. If you use a nut milk instead, be sure to add a little less since its not as high in fat.

      Yes, oat flour should also work but it will give your muffins a different taste and texture.

      Flax eggs may work, but the texture will not be as light. You may also need to reduce the amount of coconut milk added so it's not so moist. Happy testing :)

    If someone wonders if they replace the egg with chia seeds , the taste is gooooood 😍😍 but the cup cake is breakable
    I have used baking cupcake sheets so i advice you to use them if you replace the egg

      Thank you so much for your feedback! How much chia did you add and didi you make a paste before mixing it in the batter? May be a good idea to let the chia expand with the coconut milk first.

      The best substitute is another liquid sweetener, but you can also try to make it with a lower carb sweetener like Swerve.

      Any milk that is high in fat will work. The best substitute would be whole milk or heavy cream. If you can't eat dairy try adding cashew or almond milk, but add less since they are not as high in fat.

      Yes, olive oil also works well but it does have a distinct taste that you may notice. Avocado oil is another option. Let me know how it goes if you make it.

      You can use any other brand, but be sure it is high in fat (minimum 18% total fat).

      You can try using aquafaba orflax mixed with water, or another egg replacer. The eggs do give the muffins a lighter fluffier texture, so please keep this in mind that your may turn out denser.

      Could be the ingredients you used Kelly. The almond flour and coconut milk specifically can make a big difference depending on the brand.

      Coconut flour is very dry and absorbent and needs eggs to give baked goods a good texture if no other flour is added.

    Sadly your measurements are off. I followed the grams in the video. My batter wasn't half as fluid as yours. I added extra coconut milk but that didn't help. :( Now they look all scraggly and they didn't at all bind. It's just a mushy paste of almond meal. Not recommendedable!

      David, I would never post a recipe that doesn't work. Something may have gone wrong when you made it. Are you sure you used finely ground blanched almond flour, or was it coconut flour?       Either way works well for baking these muffins and I like using my silicone pan sometimes.

      No honey is not low carb, however such a small amount is added to this recipe that each muffin is still pretty low in carbs. Alternatively, you can substitute the honey for a low carb sweetener of your choice.

    Paleolithic man was a hunter/gatherer, ie they ate what they hunted or found growing wild. Last time I checked Blueberry muffins don't grow on trees or vines or in the ground. Paleo muffins is an oxymoron.
