  • My Paleo Lemon Cream Pie recipe has a truly amazing taste and texture and it's gluten-free, grain-free, egg-free and dairy-free. I'm gonna teach you everything you need to know to make this healthy lemon cream pie.
    Also learn how to make a flaky pie crust using almond flour and coconut oil as opposed to using the traditional all purpose flour and butter. This crust is versatile and you can make a ton of different pies with it (min 00:00:56).
    And learn how to make a dairy-free whipping cream that is a great substitute in any recipes that call for cream (min 00:03:56).

    I made this pie, yummy! The crust is very easy and delicious, instead of gelatin I used 1 Tablespoon agar-agar flakes to set the filling and it worked great!! Make sure you let the pie set overnight. This pie reminds me of the key lime pie I ate in the Florida Keys, I can't even tell there is no granulated sugar in this pie, the honey works so well. Thanks for the wonderful recipe!!!

      Hi - Olivepressdesign, I kept everything the same in the recipe, I did disolve the agar agar in a little warm water just like you would do for the gelatin.

      Thank you Kat! Stevia will work in the whipping cream and probably also in the lemon cream filling. In the crust I am not sure because the honey acts as a binder also. You may try using more coconut oil to help with the binding. Let me know how it goes.

    Hi, I really like your video and I want to make the pie, I just have a question. I was wondering if the last bit of gelatin really serves a purpose in the whipped topping? I thought gelatin needed to be heated to get it to "take"?

    • @Livinghealthywithchocolate
      @Livinghealthywithchocolate  6 років тому

      HI Katie, coconut whipped cream is not as stiff as heavy whipping cream so the gelatin helps with that, but if you prefer you don't have to add the gelatin.

    This looks so good! I wonder if it would be possible to mix in some sugar free chocolate chips into the filling. Maybe replace the honey with chocolate so its not too runny? Any advice?

    • @Livinghealthywithchocolate
      @Livinghealthywithchocolate  4 роки тому +1

      I think adding chocolate would taste great. I would melt the chocolate instead of adding the chips. But I also think the chocolate will take away the taste of the lemon. If you try it please let me know how it goes.

    In the crust, can i substitute the almond flour for cassava or coconut flour or tigernut flour? Also, instead of cashews, can I use tiger nuts?
    I ask because I am on the AIP (autoimmune paleo protocol) due to my hashimotos. I can't have any nuts/seeds/grains. Would these substitutes i mentioned work possibly?
    P.S. I love you recipe and can't wait to try it! Thank you!

    • @Livinghealthywithchocolate
      @Livinghealthywithchocolate  7 місяців тому +1

      Hi Angelica, in the crust coconut flour will not work but you can use cassava or tigernut flour. I think with tigernut you'd need to add more sweetener to give the crust a better taste. And with cassava flour, you may need to adjust the amount added so it doesn't come out crumbly.
      For the filling, I never tried blending tigernut into a paste so I'm not sure if it would work. If you try any of these please let me know how it goes.

    I found soy and coconut creamer in Treader Joe's. Can I use them to make the cream instead of the canned one? I am not a fan of canned food.

    • @Livinghealthywithchocolate
      @Livinghealthywithchocolate  7 років тому +1

      Hi AD, I've never tried or seen coconut creamer from Treader Joe's because they don't have that store here in Hawaii. As long as the cream is very thick it should work as well. If it's not as thick, you can add more gelatin to firm the mixture. Conserving coconut milk in can is not bad as long as it's done properly and there're many good brands available. As for soy, I don't bake or eat any soy, so I can't help you with it. Please let me know how it goes if you try it.

    Hi there, 3 questions:
    1. What's another replacement for coconut cream.
    2. Since I have a convection oven, do I reduce the temperature to 25 degrees and do I bake it in longer.
    And 3. How come you're no longer making videos?

    • @Livinghealthywithchocolate
      @Livinghealthywithchocolate  4 роки тому

      Hi! a good substitute for coconut cream is whipping cream.
      I honestly never used a convection oven so I can't answer this, but I would bake it at the same temperature and I would keep an eye on it. When you see the crust getting some color it's a sign it's done.
      I'm working on making new videos and will be back posting them soon :)

    • @Livinghealthywithchocolate
      @Livinghealthywithchocolate  6 років тому

      Hi Petty, the only other ingredient that I can think of for you to use in the filling in place of the cashews that would give you a similar texture is cream cheese. Not sure if you can have dairy...
      For the crust, you can substitute the almond flour with a seed flour like pumpkin or sunflower seed to keep the recipe grain-free. Oat flour may also work but it's drier so you'd need to add less.

    • @pettyolivia2165
      @pettyolivia2165 6 років тому

      Living Healthy With Chocolate unfortunately i can't have grains, nuts, seeds, dairy, and eggs. Making desserts becomes harder because of the ingredients. I can't even have cocoa :(

    • @Livinghealthywithchocolate
      @Livinghealthywithchocolate  6 років тому

      This may sound strange, but maybe using cauliflower and adding a little more sweetener in the filling would also work. I haven't tried this but it may turn out good. For the crust you can use cassava flour, adding maybe 1/3 cup less than the recipe calls for.

      Hi Emilie, raw honey has a thicker consistency and still contains all of the beneficial nutrients. Raw honey means the honey has not been heated or filtered during processing.

    is Gelatin vegan?

  • @Goolelala123
    @Goolelala123 3 роки тому

    The gelatin powder you are using is usually made of animal fat , those who are vegan and eat kosher what is the option for them or if you can tell which brand you are using so one can lookup the ingredients thanks

      Hi, you can see more information about this on my website including links to the brands I use in my recipes. As a vegan option you can use agar agar. Please see the recipe here: livinghealthywithchocolate.com/desserts/paleo-lemon-cream-pie-7667/

    What if you’re allergic to cashews?

    • @Livinghealthywithchocolate
      @Livinghealthywithchocolate  4 роки тому +1

      You could try using a different type of nut like macadamia. The taste and texture will be a little different but still tasty.

    Soaking cashews in hot water releases a lot of benefitial nutrients into the water and when you drain the cashews, the nutrients are. spilled into the sink.

    • @Livinghealthywithchocolate
      @Livinghealthywithchocolate  Рік тому +1

      That's not actually correct Julia. Soaking cashes sprouts the nut enriching it with more nutrients and making it easier to digest. The water should be discarded.

    Hi, Adriana,
    I aways strugle with conventional confectionary ingredients substitutes because instead of having lots of sugar and hidrogenated fats we usually use cashews or almonds as best choices, but this makes que recipe become highly caloric. I uderstand that for a healthy lifestile choice these iungredientes you use in yout recioe are amazing, but the amount of them in each serving might be way upon the daily value, you know. For instance, in each slice of this pie there is problable something arround 80g of cashews in juns one take, let alone the other fat sources like full fat coconut milk and coconut oil. Having said that, how does your body react to these intakes? Because despite these good ingredients, I don't think this alows to each more of a desert just because it is healthy. It'll be healthy up to some intake, not beyond.
    PS: I can not forget to tell you that I've already made this pie using exactly the ingredientes you prescribed except the honey which was replaced by maple syrup, and the result is just out of this world.

    In paleo diet you do not use egs? I hate coconut in any form of it. I just don't like it.

      There are numerous health benefits to gelatin. This recipe is not trying to be vegan but can be adapted if you like. Agar agar works as a substitute.
