These have the most addictive flavor I've ever tasted for a muffin! Maybe you could think about converting it for an air fryer version too. I know it's intended for fall but for those of us who want to also make it in the summer without heating up the kitchen too much on these hot days. Just a thought!

I've already made this recipe once and I'm making it again it is so delicious! The first time I use half Honey have maple syrup in this time I used on maple syrup. Last time I added just walnuts to the batter this time I added walnuts and pecans to the batter. Now I'm patiently waiting for baking
Hi there! The maple syrup not only sweetens the muffins (although they're not overly sweet) but it also provides important moisture, so I don't recommend omitting it. However, you could try another natural liquid sweetener, like date syrup. Applesauce *might* work, but I haven't tested it.
hello there, I gave it a try today and it turned out sort of like pudding texture inside, not really like a cake or muffin. is this the right texture? or maybe it is too moisture.
I havem't had a pumpkin pie you are talking about. perhaps it is the right texture. I was expecting it more like muffin cake texture, but it is somehow moisture and melting, like bread pudding.
I just made these and they are delicious...taste just like pumpkin pie. I did two minor variations, I sprinkled 1/4 teaspoon of Bob's Red Mill Sparkling Sugar on top (I don't do Paleo) of each muffin before going into the oven and did walnuts instead of pecans. I had raw pecans, but don't believe they would have tasted good since they were raw; wouldn't they have to be roasted? Does anybody know? I highly recommend this recipe. 😋

Hi Abigail! This recipe won't work as flatbreads or wraps, as the texture is too fluffy and tender. However, you could try baking the batter in a cake pan instead of muffin tins, if you prefer.
Hi there! While I haven't tested this recipe with baking soda (so can't make a guarantee), it should work as a swap. However, you will need to add some acid to the batter to activate the baking soda. Try adding 1-2 teaspoons of lemon juice to the wet ingredients. Keep me posted!!
Hi there! I suspect they will need more time in the oven. I would start checking around 30 minutes (a toothpick inserted in the center should come out clean). Also, you might have better luck with an 8x8 dish, as there’s quite a lot of batter. Keep me posted!
