    My Lovely Fan- I made these and they were the best Keto muffins I have made in 6 years of Keto life❤️
    I used 100 grams of almond flour combined with 30 grams of coconut flour, & they were still fantastic!
    I sprinkled pecans on top and made my own parchment tulip cups, trying to emulate your beautiful presentation🥰

      Hi! Did you use electric oven? If is a yes, did u use heat on botton AND on top? Or just one of those?

      I have an electric convection oven, so the heat coming from both top and bottom, is evenly distributed by the fan.
      ( the Heavenly Fan 😉)

    I have a strawberry version of these in the oven at this minute. I am lucky enough to live where various nuts are super abundant and cheap. My flour was a mixture of almond, hazelnut, walnut and pumpkin seeds (with hull), ground together.

    I just made these. I have to say I was very skeptical that these would bake well, let alone taste good, but I was totally wrong and surprised at just how good they were! I will definitely be making these again

    I can't believe I had all the ingredients on hand. I made these muffins this morning~delicious! The nuts and berries on top take these sweet things to a purely divine level; I'm in heaven. Canadian girl's idea of a pecan crumble is worth trying too.
    I like to go authentic at first then dabble in surprises later. In the meantime, I will be enjoying these beauties throughout the day. Thank you for sharing this recipe with us.

    You always have such beautiful recipes! Its a pleasure to follow you making heavenly creations! I made these muffins and they were like little cakes! Made them with coconut flour and ground golden flax seeds. I added a bit of cinnamon. For the oil, I used only 25 mil of coconut oil, 25 grams of vegan butter, 15 grams of almond butter and 25 grams of apple puree. Came out beautifully! Thank you!

    I made these but used keto maple syrup as the sweetener because the sweetener I have is pure monk fruit (no erythritol ) and when I used it in another recipe using the amounts they asked for it was inedible, just bitter. The keto syrup worked well. I also added cinnamon and nutmeg. It was delicious. I must have small muffin tins because this recipe yielded 8 for me.

    I felt like 100g of coconut oil might be too much, but i added it anyway. Turns out i was right. Next time i'll try it with 60grams of butter.

    I just made these but pretty hard without a food scale and converting what I searched. I put them in regular liners. They did rise in the oven and then fell, so now i have a hollowed out center.
    Overall the taste is good. I was just hoping they came out like yours.

    OMG! I just ate one and it is amazing. I hate I halved it, I was afraid I wouldn't like it and waste ingredients. I couldn't find the Brazilian nuts at my grocery store this morning, but I loved how the chia seeds gave it a little crunch. But, I will certainly add Brazilian nuts the next time. Thank you.

    I've made these a few times, each time following the recipe, but they seem to be very oily. I will try again using less oil. Otherwise I like them. It's so nice to have a little bit of fruit while on keto.

    Is it ground almonds like the fine flour or almond meal (cant have because of skins) or I grind my own or do they have on Amazon....I do have coconut flour
    I just LOVE your channel I have made so many things ...One question though..I tried to double the recipe for your flat naan type bread and it was so oily and weird I think I should have not doubled it also was that recipe with fine almond flour or ground almonds and do you have one with coconut flour ....Thank you such great recipes..Julianna NC USA

    Please also translate the grams into cups and tbsp. and tsp. in your video! I loved the ingredients and wanted to make this and converting it is a real inconvenience. Thank you.

      Gràms is more accurate for baking to get texture correct. Use google.to find a converter tool from grams to cups,tsp etc. Use cups for US or UK depending on which you have and the sizes vary. Happy baking.

    Hey there, Fan! I adore your channel and you, thanks for all the wonderful recipes and dedication. I was wondering what an appropriate serving size of these muffins would be and if it’s okay to eat them everyday? Like is this much fiber okay for digestion I suppose. I’ve been eating one muffin a day and they’re scrumptious, I even added some pumpkin purée and spices to a batch. To another, I added banana extract and pecans on top!! 🧸💛

      Hi Jennifer, everybody has a different level of tolerance to fibre. It depends on what your regular intake is like. If you've been eating the muffins everyday and have had no problems so far then it's the appropriate amount for you. Listen to your body, it tells you most things you need to know. x

    Thank you for your recipe! Not sure if this is keto, but I highly recommend adding 1 egg for texture and using part oat flower in addition to almond flour for natural sweetness.

      Oat flour isn’t really keto. And the egg makes it no longer vegan.

      It should still work as I have another recipe that used whole chia seeds (Keto scones: ua-cam.com/video/RPJyQzlMjaY/v-deo.html). The texture of your muffins might come out a bit firmer but should be fine. Let me know how it goes x

    Hi Fan, I have a question. Can these be frozen and eaten later? Do they freeze well? I find it easier to eat one, then save the others for another time. Otherwise, I might eat them all in one day. :D

    I must’ve been the only one to get this wrong 😩 I used coconut flour and doubled the recipe because I wanted to meal prep. No matter how much liquid I added, up to 300 ml, it remained crumbly. I finally patted it all into a long loaf pan and now have it in the oven. I know this is going to mean a WAY longer bake time (I’m guessing 1h 35min) but once i get to an hour, I’m going to tent it with some foil and hope for the best. 🙏🏾
    Update: made it, it was freakin fantastic!! I had it for breakfast, but tapping it into Carbmanager, I was a bit shocked. What should the carb count be for the coconut version?

    Hello! So I just made this with 60gr coconut flour as written in the recipe. I think I fail this as the dough is crumbly and now I'm baking it but the sides turned black brown while the middle is pale grey. I only baked half of the muffin dough and left half of it now, so what can I do with half of the dough and how to fix it? I find that coconut flour flour is so hard to work on! The dough is wet and crumbly, there's no firm of it. Help!

    Hello! I love ur channel! Im keto and my sister is vegan so I always try to do something that we both could eat :) how ever this recipe I've done it twice and both times the dough doesn't rise, it's hard from outside top and very oily inside. Is this normal? O maybe should I use my electric oven with heat just from top for longer time? Any recommendations?? Thank u for all !!

      I just made them and had the same problem. The top kind of caved in and the center is quite moist. I baked for 35 min but I think I try baking longer. The taste is GREAT though...just wondering what I could have done wrong!

    I made it twice. Both times almond tasted bitter. First time with steviol (liquid), second time with erythritol`monk fruit + also bitter. same temperature. Why is that? I am struggling!
