- These lemon blueberry muffins are bursting with fresh blueberry flavor. They have a soft and moist crumb and puff up perfectly. The lemon glaze makes them completely irresistible.

Ingredients for Blueberry Muffins:
►2 eggs (large), room temperature
►1 cup granulated sugar
►1 cup sour cream
►1/2 cup extra LIGHT olive oil (not extra virgin)
►1 tsp vanilla extract
►1/4 tsp sea salt
►2 cups all-purpose flour *measured correctly
►2 tsp baking powder
►2 tsp lemon zest (from 1 large lemon)
►2 Tbsp lemon juice (from 1 large lemon)
►1 1/2 cups (8 oz by weight) fresh blueberries, rinsed and dried
🍋 Ingredients for the Lemon Glaze:
►1 cup powdered sugar
►1 1/2 to 2 Tbsp fresh lemon juice
►1/2 tsp lemon zest

These are awesome!!!! Just made them and your right they are not overly sweet. I am not a dessert person and was making these for friends and family, I ended up eater 4 within an hour. Moist!!!! I love these muffins! Made them at least 3 times. I’ve made with with all strawberries and a mix of blueberries and strawberries and all the combos are fantastic. I didn’t have sour cream so I used sweetened Greek yogurt instead and it worked great!

Which oil did you use?? I'm scared of olive oil in muffins

5/2/24: Hi Natasha. I made these this morning, having split the recipe in half for me and my roommate, and OMG, they came out so wonderfully moist, fluffy and tasteful I can't stand it...LOL! Instead of using 1/2 cup of white sugar only, I used 1/4 cup of brown & 1/4 cup of white sugars and 1 full tsp of vanilla. (I don't skimp when using my vanilla extract since I make my own and it's good!) Nevertheless, I am never disappointed with what you share, so thanks once again for another fabulous recipe. This was yummy and my roommate loved it too! 😋
