Great video. I put a cooling rack between the parchment paper and the pan to give more area for the chicken to dry. Also you could purchase (pre)ground chicken or even turkey for this flour.
Thank you, Mel, for taking the time to walk us through your process of making chicken flour. I've always enjoyed your recipes, and your creativity and ingenuity. (And your bubbly personality as well!) When you started using chicken flour in your recipes, I became nervous about the process. I was afraid I would do something wrong, and accidentally make my family sick. After watching this video, I feel confident that I can safely make your chicken flour. (Yay!) I do appreciate you slowing things down and showing us the entire process. God bless you guys! 😊
Hubby & I are trying to transition to carnivore and I'm doing my best to find replacements for the staples like bread, etc. Searching for videos on making good carnivore bread led me from yours to this great one about your carnivore flour. Trying to be carnivore really takes some work, doesn't it! 🥴But we need to persevere for the sake of our health, so I'll definitely be making some of this flour asap. I'm very glad I found your channel today, and I appreciate all the info & details you include in your videos! 🤩
Lovely to meet you! Oh yes you're right it's not the easiest diet but the benefits are amazing. I hope we can normalise Carnivore more this year. Thanks so much ❤️
The microwave method appears to make more flour because it starts with precooked chicken which has already lost a lot of water. In contrast, with the oven method you are using raw chicken which is very wet and so loses more weight. Using a rotisserie chicken would be convenient, but you will need to account for the added salt and seasonings.
Have you tried boiling the chicken strips till they're overcooked then into a food dehydrator and then grind it into flour My thinking is this would eliminate some of the salt and chicken flavor
The only downside is you'll probably lose more nutrients by boiling/overboiling. Mind you, it's still going to be far more healthy than any non-animal product people make into flour, and if one has/can get a dehumidifier it might be a less labour intensive method so... Great idea! 🤩
Yes true...it's so common to overcook chicken. Depending on how small the pieces are I might boil just until it turns white. It's an extra step for me so if I'm rushing I might go back to baking it uncooked.
@@CookwithMel1 I have not tried this yet, but please inform me if you do and how it worked out. some air fryers have a dehydrate mode if you don't own a dehydrator. over cooking the chicken will tighten the protein and expel more liquid and salt, I wouldn't worry about any nutrient loss as you could always save the liquid to use for chicken broth I would also think if you cut the cooked chicken into small pieces and freeze them uncovered on a baking sheet in the freezer then run through the food processor this will likely work better for oven for dehydration
@paulburkey2 one tip i can share that helps speed things up is to use raw ground chicken...then bake. I find the smaller the pieces, the quicker the process.
Oh Wow I just found your comment Chef, it was held for review ppffft lol. Oh man that Chef is just awesome! Thank you for all you do for the keto community.
Hi Mel how are you? I love this recipe ... I'm keto and have switched to carnivore. I made the flour but the finished product smells really chickeny ... Not neutral... Is there a problem with the breast I used or did I do something wrong
Hello! I'm good thanks and you? I found that when I bake it at high temperature it does smell more. I usually bake it 320f cos then it did smells less. Also it does smell while it's hot or warm. If you're worried everything's going to taste like chicken and you're ketovore...you could add a tablespoon of sweetener to dial down the taste. Please try smelling it again once it's been in the freezer...should be better. I also use it straight from the freezer. No resting or thawing. Any other questions please let me know ❤️

Has anyone tried the KitchenAid grain mill attachment to further pulverize the flour after using the food processor? I tried putting the flour through the sifter attachment but wasn’t working too well and took forever.

SO great to see Your face Beautiful Lady!! I just chop my raw breast pieces into 1-1.5" cubes, pop into dehydrator on 165°F until they are toast then grind. Fast & easy! Just perfect for me. 😍🎉🤩
@@umustbkrayze I'm sorry I forgot to add they are raw. That is part of what makes it so easy & the hands on time is much less. They stay in dehydrator for a day or so depending on size of chunks but they are DRY & fully cooked when they come out. I also make sure the pieces are fairly uniform in size. 😍
ua-cam.com/video/7c6O-ZwmlYE/v-deo.htmlsi=KzXVSHvMQmTtWkfF Hi Mel, do you think if this flatten and baking method can be used to make chicken flour ( of course without adding any seasoning to the chicken to make chicken flour ) . Would appreciate if you could give your opinion based on your experience. Cheers ❤
I just watched that and yes I have a few thoughts. If you buy ground chicken and just flatten it into a lined tray then bake...thatwould make it so much easier. When I make chicken flour in bulk I do it this way...then that creates baked sheets of baked chicken.

Hi Mel & Chris 106 degrees here today. Hot work outside 😅
Oh wow! I thought it would be cooling down now😮
Thanks a lot Mel for showing us how your process of making chicken flour works. I appreciate you taking the time to do that.

Yay Esther...you're welcome 😊😊😊
We can’t find chicken flour in Europe so going to try this. Thank you!!

Can you use canned chicken?
Grind then put in oven to finish
Yes it's actually a really good option. Just try to drain the liquid before baking 😊
@@CookwithMel1 i think I’ll try this tomorrow. Drain, food processor then dry in oven. Repeat food processor etc. thank you so much for your recipes
You're welcome....thanks so much 😊
do you store it like regular flour? And how long does it last?
I store mine in the freezer for up to 3 months
Does it tastes like meat whenever we bake cakes with it?
Not if you mask the taste with sweeteners and flavoring...but it can be tricky. It's so much better with savory things like tortillas and such
@@CookwithMel1 Thank you so much for your quick answer! 😊
@saramarques7986 you're welcome 😊
What do you do with chicken flour?
I mix it into a keto/carnivore friendly flour and have created bread, tortillas, naan and other recipes. They're all shared in my latest videos
Do I store it in the fridge
In the freezer... I use mine straight from the freezer and my baking turns out great.
Can you link your blender? It looks like when you turn the outside, the inside ingredients also are stirred.

I have a Kitchenaid mixer but not that attachment. My Ninja works well
how about just using a dehydrator?
Definitely! 😊😊😊
can you use a dehydrator or is it not safe for chicken?
You can...many do. I would follow the directions of your machine
