    Bouillabaisse (Boo-ya-base or like James said) it’s a French strew. Usually a fish stew. Basically, lots of ingredients. Like all the little songs put together. 👌👌

    The Beastie Boys were so versatile, so far ahead of their time, that when they made Paul's Boutique, it set a precedent that's still unmatched to this day.

      A lot of credit must be given to the Dust Brothers, who produced the album and created most of the music. "Paul's Boutique" truly is the pinnacle of the art of sampling (though De La Soul's "3 Feet High and Rising" arguably comes close, at times). Both this and its predecessor would be virtually impossible to replicate, today. The royalty fees would be astronomical.

      One of my favorite songs of all time.
      I’ve skied some gnarly shit over 3 decades with this playing in my headphones/helmet.
      “I drop the L when I'm skiing
      I'm smoking and peaking
      I put the skis on the roof almost every single weekend
      Can't stop the mindfuck when it's rolling along
      Can't stop the smooth runnin's when the shit's running strong...”
      I still feel this as much today as I did in my ski bum days. It brings back so many memories of specific days and runs with incredibly talented friends that absolutely ripped! Hucking the Head Wall at Loveland as early in the season as possible, Little Italy on Mother’s Day on Pikes Peak, Gunsight at Alta, Tophers and the Cirque at Mary Jane, The East Wall, The Alleys and the Waterfall on Pali and the Beavers at A-Basin, Rasta Chutes at Snowbird, “hero snow” in Vail and Beaver Creek, all kinds of shit that was out of bounds in Breck that eventually became in-bounds 20 years (and a lot of felled trees) later. The list goes on and on...great, great memories all linked by this very song.

    Keep in mind that in 1989.. People were still really desperate to distance themselves from disco sounds, and the Beastie Boys were risking it all by bringing that sound all back, and on their SECOND album. This album was not a commercial success, but it cemented their legacy as being pioneers. This album, with all of its sampling (there are UA-cam videos dedicated to just breaking down all of the sample references on this album alone) could never be made again. I discovered this album AFTER I'd heard Ill Communication and Check Your Head. After I'd heard this album, everything changed. I was hooked for life.

      There are so many samples in Paul's Boutique, it's so musically dense and complex, that the first time Eric B heard it, he said he could make a thousand songs from it.

    The "It's a trip..." line was said by local NY weatherman (Ch. 9 WOR) at the time Lloyd Lindsey Young, who was known for his loud voice, eccentric personality and words he'd make up like "thunderbumpers" for a thunderstorm. He was a trip!

    Bouillabaisse (pronounced "bewl-LA-base-EE") is a kind of seafood stew... which kind of describes what this track is... a mix or a "stew" of different unfinished or "cutting room floor" stuff when they were producing Paul's Boutique. Love this record... its f***ing amazing.

    Paul's Boutique is a HIDDEN GEM...even then when it dropped it was a "deep cut". People still wanted that "Party Anthem" type music they did on "License to Ill". When they dropped this it was SOOOO WAY OUT and ahead of it's time, that the average listener slept on it. This thing is SONIC Masterpiece! This was also a time when DJ's mattered.

      First time I heard this was my a-hole loser older step brother cranking it in his bedroom. I was like,”OMG!!! This is new Beastie Boys and it’s like whoa! HOLY CRAP!” His younger bro and me we’re gonna steal it(guarantee his criminal, broke ass stole it) but he always took it with him.
      I immediately fell in love it. Immediately told all my buddys about it. Summer between 9th & 10th grade. Kinda forgot about it after a bit and then in ‘96 it went into my six disc changer and never came back out. Constant rotation for years until the CD player broke.
      I bought the remastered vinyl rerelease the second I heard it was out in the mid/late 2000’s and it still gets heavy rotation just like the cd.

    Yeah, I agree that Mike D and Ad Rock have similar voices, but the way I tell them apart is Ad Rock's voice is the higher, more "nasally" voice -- and he tend to "yell" his raps more.

    Paul's Boutique was a banger up to this point, but Bouillabaisse was such a perfect coda. I believe this track is what propelled the album to GOAT status.

    The Beastie Boys' rhymes, combined with their delivery - finishing each other's bars, the handoffs, the backups - and the production, particularly what the Dust Brothers did on Paul's Boutique specifically, but also on every album, whoever was producing...the Beastie Boys were a perfect group.

    This album revolutionized sampling (and copyright laws). They paid something like $250K for the rights to the samples they used. Actual value was somewhere closer to $25M! Incredible album. In the early '90s, used to blaze and listen to Paul's Boutique, Check Your Head or Ill Communication on the regular. Great vibe albums.

    I saw an interview with them, they said they started the band as a sort of parody, they said they thought for sure that they would be laughed out of the hip-hop community. They said they were really surprised that people liked their music

    Most people looked at them as a gimmick back then. Of course the industry wanted them to come out with License to Ill 2, but they came out with this. This album flopped at the time, and I'm glad overtime people are actually seeing how brilliant it was/is.

      100%. Such a great album. Do a little searching about their old manager, Andy Slater. He wa a big part of this record being released agains the will of the label. Andy ended up being the CEO of Capitol. There was a lot of red tape around this album and Slater believed in it and took some heat. Good on him and the B Boys!!!

    MCA was the one first time led me to bond with BBoys. Not just voice but his lyrics were more distinct

    I remember buying the Paul's Boutique album somewhere around 2002 not knowing anything about it. At that time I was going through a phase of buying all Beastie Boys albums to discover their stuff I hadn't heard before.
    I must admit it took quite afew listens to appreciate and enjoy it as a whole but the more I listened the more I found something I hadn't heard on previous listens.
    It became more and more compelling the more I played it.
    To this day it easily remains my favourite Beastie Boys album.

      The difference between this reaction and everybody else’s is that everybody else will stop the song every 10-15 seconds and throw some bullshit in there to extend the video and cram as many ads as they can.
      This dude only stopped it once…..which in my opinion is a true reaction. For that alone, this dude is getting a subscription from me! Props!

    BouillaBaisse is a cajun seafood stew. pronounced "Bool ya base". Got a bunch of stuff in it. fish, gator, shrimp. This song is like that with a lot of different stuff in it.

    At 4:12: "Caught a bullet in the lung from Bernie (Bern-hard) Goetz"
    I'm a New Yorker (Flatbush, Brooklyn, RIP MCA). When Goetz shot those guys on the subway in the 80's the news reported his name alternately as "Bernie" or "Bernhard".
    Layers upon layers. Man, you can geek out SO HARD on this album.

    You nailed it. On another album, the bar comes out, "...a good mix tape cam put you in the right mood". I believe this album broke the record for most samples, hence the lawsuit. I believe the pronunciation of bouillabaisse is "boo-ya-baze". Great reaction, as usual. I miss these guys terribly. They were different.

    When the B-Boys made Paul's Boutique they were 3 white New York boys who got rich as FUCK, and moved to LA, and immediately regretted it. 75% of the PB album is them writing odes to NYC.

      They had to leave NYC, after they bailed on Def Jam, Russel Simmons wasn't pleased and put word out in NY that noone was to work with them. Russel had that kind of clout back then, Def Jam was THE label, and there weren't the littany of hip hop labels like there are today to run to. And remember, he basically gave the Beastie Boys their credibility in the hip hop community in the beginning, so he saw it like a backstab. They eventually linked with the Dust Brothers and it all worked out for them obviously...

    On the cd and tape on the title list it is just one song but if you go look now for cd or mp3 they split it up for all the mini-songs.

    Ad Rock = Hi Pitched voice
    Mike D = Slightly less hi pitched than Ad Rock

      Yes, all that and also more very distinctive details to help identify their voices:
      Ad Rock = high pitched more "aggressive sounding" and VERY nasal voice. And actually quite husky and warm when not shouting ("And me", "instant Death" and "Live at P.J.'s", for example)
      Mike D = high pitched, and more child-like voice, that tends to crack a bit, and the least "aggressive sounding" of the three.
      MCA = raspy and deeper voice.

    Capitol records paid about 225 thousand dollars to get the samples cleared for pauls boutique I'm 1989. adjusted for today it would probably be about 10-15 million.....there could never be another album made like pauls boutique it occupies a unique place in musical history and its easily one the greatest hip-hop albums of all time
