So the reason for the song’s name: Bouillabaisse is a type of seafood stew where you throw in a little bit of everything (lobster, shrimp, fish…etc.) just like all the samples they’re throwing in.
“I shot a man in Reno just to watch him die” is a classic line in a famous Johnny Cash song so MCA was just creatively using that line replacing Reno with Brooklyn since that’s where he’s from and then they used the sample of Johnny Cash to finish the rhyme. They weren’t trying to pretend to rap about shooting people. It was just a nod to Johnny Cash.
They sometimes wanted the vocals to clash with the samples. Their vocals aren’t always the primary focus they want. The Beastie Boys sometimes color outside of the lines. It is expected that the lyrics are the most important aspect of a rap song. The Beastie Boys would frequently go against that assertion, and demonstrate other areas of genius by going against convention, intentionally.
That’s intentional. On a lot of their songs, they diminish or distort the vocals, to take a back seat to the production or the beat. The vocals are not always their primary point. The one you can't understand he bought an air force helmet and rigged a mic in it took some LSD and bugged out and recorded that at home one night. In context: Since this was the LAST SONG on the album it was a REALLY fun way to end the album. In context of the "full album experience" this mix-up segmented song was perfectly placed and composed. You’re not supposed to hear him clearly on A Year and a Day. It’s supposed to blend together. Beasties had a thing for trying out crazy mics... cheap ones, expensive ones, an old Vietnam war helicopter pilot helmet with a mic and connecting it to the mix, karaoke mics from radio shack, etc. ...I think if you listen to this album top to bottom a couple times, you’ll get it. That clashing you’re hearing and not understanding MCA, needs to be remixed... you’re way off. No offense but that’s the artistic side of the Beasties and Adam Yauch. Agreed. The art IS the clash. The way the music towers over the lyrics and drives the song into “fell” mode instead of “listen” mode. The Beastie Boys did this a LOT and it worked really well. If you listen to today’s rap, the lyrics are paramount, as evidenced by the mundane background. The Beastie Boys songs constantly musically progressed as the song played. The lyrics were just one strong aspect of their songs, but not the end-all be-all. The Beasatie Boys were correct in their approach.

Bouillabaise is pronounced "Boo-YAH- BASE", its a french dish where you throw everything in to the pot. 9 songs, in 12 minutes, all the leftover ideas they had for songs....
I think they were shouting out the bands they were playing with and/or the people who were at the event where the song was recorded (with respect to the question you asked at the end). I interpret this track as a bonus track comprised of demo and live material that they decided to throw in for those of us who can enjoy the unpolished stuff. To me any number of those tracks could have been produced more and been the basis for another standalone track.
FUN FACT: MCA, was worried that the lyrics to that song in the middle was to "woke". Didn't match the tenor of the band. So he buried the vocals in the mix.
I may be way off the mark here but I think that the bar "I stay at home like a hermit" is a dis on MCs that don't get shows to get out and rap, they like to talk shit on this as we know. While they are usually very direct with dissing most of the time they can also be very coy with their lyrics. The thing about genius lyrics is they can be interpreted in so many ways even if they weren't intended to be, that's what makes them genius. the next line is "I got the jammy but I don't got the permit" is saying there are a lot of rappers that got raps and think they got bars but don't have the outlet of shows and popularity to pull off the real deal like they are doing. Just my late nite take, who knows. There is always an element of sarcastic shit talking in this album in particular. They did get more spiritual and artistically/musically sincere on Check Your Head and all the albums after this, but this to me was the album where they truly found "their" hip hop voice that set them apart and set the bar for eternity, and no one will ever match it. Bouillabaisse, you have it right but it just ends like the word base, or bass (guitar) the E at the end is silent. It is like a French brothy soup with a mix of ingredients. These little song clippets together are like a soup blended for you.

Agreed. The art IS the clash. The way the music towers over the lyrics and drives the song into “fell” mode instead of “listen” mode. The Beastie Boys did this a LOT and it worked really well. If you listen to today’s rap, the lyrics are paramount, as evidenced by the mundane background. The Beastie Boys songs constantly musically progressed as the song played. The lyrics were just one strong aspect of their songs, but not the end-all be-all. The Beasatie Boys were correct in their approach.

I think they were shouting out the bands they were playing with and/or the people who were at the event where the song was recorded (with respect to the question you asked at the end). I interpret this track as a bonus track comprised of demo and live material that they decided to throw in for those of us who can enjoy the unpolished stuff. To me any number of those tracks could have been produced more and been the basis for another standalone track.
FUN FACT: MCA, was worried that the lyrics to that song in the middle was to "woke". Didn't match the tenor of the band. So he buried the vocals in the mix.
I may be way off the mark here but I think that the bar "I stay at home like a hermit" is a dis on MCs that don't get shows to get out and rap, they like to talk shit on this as we know. While they are usually very direct with dissing most of the time they can also be very coy with their lyrics. The thing about genius lyrics is they can be interpreted in so many ways even if they weren't intended to be, that's what makes them genius. the next line is "I got the jammy but I don't got the permit" is saying there are a lot of rappers that got raps and think they got bars but don't have the outlet of shows and popularity to pull off the real deal like they are doing. Just my late nite take, who knows. There is always an element of sarcastic shit talking in this album in particular. They did get more spiritual and artistically/musically sincere on Check Your Head and all the albums after this, but this to me was the album where they truly found "their" hip hop voice that set them apart and set the bar for eternity, and no one will ever match it. Rick Rubin was a colossal part of this production artistically. Thanks for the reactions man you do a lot of great hard work and I apologize if I was harsh in the past. Bouillabaisse, you have it right but it just ends like the word base, or bass (guitar) the E at the end is silent. It is like a French brothy soup with a mix of ingredients. These little song clippets together are like a soup blended for you.
You hear that word a lot around New Orleans and Baton Rouge areas, plus upper NY state and Quebec areas.
Bouillabaise here means they had all these little songs and bits and just put them all together. It is a collection of songs, not just one.
