Chicken Tortilla Soup/Sup Ga XaXiu (Vietnamese)

I am in the mood for some chicken soup. Here is a version of the chicken tortilla soup with me adding in the Vietnamese Char Siu chicken. The rest is very similar to the Mexican tortilla soup in using cilantro, poblano pepper, tomato, tortilla, avocado, etc. I think you'll enjoy this recipe. :) Check it out now!
Ingredients:
3 cups of roasted red chicken, cut into 1-inch cubes/pieces
1 box of 48 oz chicken stock
1 large can of diced tomatoes
1 bunch of cilantro, chopped
1/2 white onion, diced
2-3 limes, juiced
1 cup of Mexican crumbled cheese
1 large poblano pepper
2 large avocado, cut into large cubes
5-6 toasted tortillas/tostadas, break into 2-inch pieces
2-3 tbs of sour cream
2-3 jalepano, diced
2 tsp of cumin powder
